Turkey or Beyond Beef Meatloaf Ingredients: Glaze: 1/3 cup ketchup Directions: Preheat 350 degrees. Mix together (everything but glaze) ingredients, put in a loaf pan, bake 30 minutes. Mix glaze, remove loaf from oven and pierce the top with a fork, pour glaze on top, bake another 30 minutes. Cider Roasted Veggies Carrots, parsnips, onion, cauliflower, bunch garlic Directions: Preheat 375 degrees. Place veggies in roasting dish, whisk together other ingredients, pour over, stir. Roast veggies about 35 minutes until tender. Or Dill Smashed Potatoes 1 lb Yukon gold potatoes Directions: Boil potatoes in salted water until fork tender. Smash, add other ingredients. Mix gently, so they don’t get gluey.

No Knead Rosemary Bread 21/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup butter, softened 11/2 cups granulated sugar 2 large eggs 2 tablespoons lemon juice 2 teaspoons grated lemon zest 1 teaspoon vanilla extract Powdered sugar, for dusting Instructions: Preheat oven to 375 degrees F. Line baking sheets with parchment paper and set aside. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside. In a large bowl, beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, and beat until combined. Add the lemon juice, lemon zest and vanilla extract, and beat until combined. Gradually add the dry ingredients to the wet ingredients, and beat until combined. Drop by tablespoonfuls onto the prepared baking sheets. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar before serving. | |||

Honey Lemon Yogurt Cake 3 eggs Directions: Pre-heat oven to 350. Grease a loaf pan. In a large bowl whisk eggs lightly. Add yogurt, olive oil, honey, vanilla, lemon zest and juice, whisking till combined. Add remaining ingredients and whisk till just smooth and no lumps remain – do not over whisk. Instructions: Meanwhile, in a Dutch oven or a large, deep skillet, heat 2 tablespoons of the oil over medium. Add chickpeas, season with salt and pepper and cook, stirring occasionally, until deep golden and well toasted, about 5 minutes. Transfer the chickpeas to a paper towel-lined plate. Add the butter, garlic and 2 tablespoons of the oil to the Dutch oven and cook, stirring, until fragrant, about 1 minute. Add brussels sprouts, season with salt and pepper, and cook, stirring occasionally, until tender and lightly caramelized, about 10 minutes. Meanwhile, cook pasta according to package directions in the boiling water until al dente. Drain, reserving 2 cups of the pasta water. Add the pasta, 1 cup reserved pasta water, about ¾ of the toasted chickpeas and the remaining 2 tablespoons oil to the Dutch oven. Stir in the Parmesan, capers, lemon juice, red-pepper flakes and half the chives until well incorporated and saucy, 1 to 2 minutes. Season with salt and pepper. Microphone by Coconut Records Spinach scramble w/ toast Ingredients: Eggs Berry Lemon Ricotta Cake ½ cup extra-virgin olive oil, plus more for pan 1⅓ cups blackberries, raspberries, blueberries, or halved or quartered hulled strawberries (about 8 oz.) Directions: Preheat oven to 350°. Brush a 9"-diameter cake pan with extra-virgin olive oil. Line bottom with a parchment paper round. Combine 1⅓ cups blackberries, raspberries, blueberries, or halved or quartered hulled strawberries and 2 Tbsp sugar in a medium bowl. Using a fork, mash together until sugar is hydrated and no dry spots remain. There will be some totally smashed berries, but some should still be intact. Set berry mixture aside. Whisk 1½ cups all-purpose flour, 1½ tsp. baking powder, 1 tsp salt, ½ tsp. baking soda in a medium bowl to combine. Set aside. Place 1 Tbsp finely grated lemon zest and remaining 1 cup sugar in a large bowl. Using your fingers, work lemon zest into sugar until sugar starts to clump and mixture is very fragrant. Add 3 large eggs, 2 tsp vanilla extract, and remaining ½ cup extra-virgin olive oil and whisk vigorously until mixture is pale and smooth. Add juice of 1 large lemon and 8 oz. whole-milk fresh ricotta and mix just until combined. Add reserved dry ingredients and mix with a rubber spatula until incorporated and batter is mostly smooth. Scrape batter into prepared pan and spoon reserved (now syrupy) berries on top. Bake cake until golden brown on top and a tester inserted into the center comes out clean, 45–50 minutes. Transfer to a wire rack; let cool in pan. Invert cake onto a large plate; peel away parchment and discard. Asparagus Risotto 8 cups vegetable broth Instructions: Bring broth to simmer. Cut asparagus into one inch pieces, add to broth for three minutes, remove from broth, place in bowl. Add olive oil to a Dutch oven, Sauté garlic and mushrooms for a few minutes, then add to asparagus, set aside. Add a little more olive oil to Dutch oven, odd 2 cups of rice and 1/2 cup broth, stir until absorbed. Continue adding 1 cup or broth at a time, stir until all the broth is absorbed. You want the rice to become creamy, but not mushy. Slow and steady wins the race! When the rice reaches the desired consistency, add the vegetables back into the pot. Top with chopped prosciutto, Parmesan, and lemon juice and zest. Mix thoroughly. Enjoy! Peach Crumble 2-3 lbs peaches Crumble topping: 1 cup all purpose flour Instructions: preheat oven to 375 degrees. Slice peaches, add to big bowl. Sprinkle with flour and granulated sugar, add the juice of one lemon. Mix until all the fruit is coated. In a separate bowl, melt the butter, add brown sugar, flour baking powder, salt, and cinnamon. Mix with a fork until combined. Add peaches to a greased baking dish, top with crumble mixture. Bake for 35-45 minutes until fruit is soft and crumble is golden brown. | |||

Coat pan in a tablespoon or two of olive oil, add the onions and sauté for 5 minutes, or until starting to soften. Add garlic, sauté another minute. Add mushrooms, sauté until lightly browned. Add “meat”, Worcestershire sauce and soy sauce, sauté until browned through. Mash or blend potatoes, add butter, milk, and salt and pepper to taste. Using a medium cookie scoop or spoon, scoop the yogurt mixture onto the prepared surface Place the bites in the freezer for 10-20 minutes or until they are solid to the touch. While the bites are freezing, melt chocolate chips with a bit of coconut oil. Use a microwave or a double boiler to melt them, stirring regularly, until you have a smooth, liquid chocolate mixture. Boil water and cook pasta until al dente, drain pasta, set aside. Line cookie sheet with parchment paper. Thinly slice Brussels sprouts, drizzle with olive oil, season with salt and pepper, spread onto cookie sheet. If precooked meatballs are frozen, add them to the cookie sheet and cook with the sprouts. If meatballs are not frozen, simply heat through. In pasta pot, sauté garlic and sun dried tomatoes in oil, add cooked pasta to the oil mixture, coat thoroughly.
