We've always struggled with a particular dilemma: we love the clarity and flavor we can achieve by brewing pour overs, but doing so behind a busy coffee bar is wildly inefficient and inconsistent. We've tried to conquer this by using automated pour over machines, such as the Tone Touch 03 and the Curtis Seraphim, but those have proven finicky and again resulted in inconsistencies from cup to cup. So we were stoked to revisit our old friend, the Coffee Shot, but now with the addition of a paper filter inside the portafilter that has really changed this brew into something special that we are incorporating IMMEDIATELY at our cafes. So long pour overs (...for now).
