About Emily: Emily Michael is a fourth year veterinary student at the University of Illinois College of Veterinary Medicine, class of 2022. Upon graduation she will be working as a small animal general practitioner, hopefully in Seattle, Washington. Aside from a general love of animals, she has a passion for veterinary dentistry and soft tissue surgery. Emily has two gremlins (cats) that keep her busy and help her to review feline anatomy. When she isn’t at school or work, Emily enjoys reading, hiking, bouldering, and playing the ukulele.

Jamie is a Registered Dietitian Nutritionist who specializes in weight loss surgery and bariatric coaching. Jamie isn't just a bariatric dietitian, but a weight loss surgery patient herself! In 2017, after years of struggling with her weight, she finally decided to have the vertical sleeve gastrectomy. Since then, she has lost and maintained over 100 lbs. There are so many myths and misconceptions about weight loss surgery, with many assuming it is somehow the "easy way out" or it's "cheating." However, nothing could be further from the truth. In order to be successful after weight loss surgery so many habits and lifestyle changes need to be mad! Jamie helps women navigate post op life so that they can truly change their habits for the long haul and live their healthiest and happiest lives.

You’ve probably seen a variety of advice on the internet with weight loss: go keto, cut all carbs, cut out all fruit, stop eating sugar, intermittent fast for 16 hours, etc, etc. All of which are restrictive, promote fear mongering of foods, and have an incredibly low success rate for weight management. The girls wanted to provide you with both realistic and maintainable advice that you can easily implement into your life. Although the girls advocate for body neutrality and weight loss does not equate to a “healthier” lifestyle, they still wanted to provide you with scientific-based advice. Enjoy!

In this episode of The Up-Beet Dietitians podcast, Emily and Hannah are joined by Amanda Wagner, aka Fueling Veggie Athletes. Amanda breaks down what Avoidant/Restrictive Food Intake Disorder (ARFID) is, debunks common misconceptions like it’s just “picky eating” and only kids have it, and shares resources for those who may be affected or someone with ARFID. As someone with personal experience with ARFID, we were very excited to chat with Amanda about ARFID advocacy and its impact on everyday life.


Amanda is passionate about evidence-based nutrition and fitness. She is a former high school science teacher with a M.Ed in science education who changed careers to become a Registered Dietitian Nutritionist (RDN) in December 2022. Amanda is also an avid runner and former division 1 cross country/ track athlete, who is enthusiastic about and fueled by a vegan diet. Amanda became a UESCA Certified Running Coach in December 2023. She is on a mission to show others that you can be successful in athletics and life fueled by plants. As a RDN & certified running coach, Amanda finds it rewarding to share her love of nutrition, fitness, and plant-based eating with others and help them reach their own wellness goals. She also likes to work with those who have diagnosed or suspected ARFID (Avoidant Restrictive Food Intake Disorder) due to her own lived experience and because there are not many dietitians out there that work with ARFID. She draws on both her lived experience and professional expertise as a dietitian when helping those with ARFID.

She loves her peanut butter and red wine (not together of course) and in her free time you can find her walking her dog Lucy, spending time in the sunshine, and baking usually banana bread.

Fast forward to now, Chelsea is a proud Registered Dietitian and unbelievably grateful for the opportunities she has to help people live healthier, happier lives and accept their bodies. 


Currently, Chelsea works as a registered dietitian at Happy Strong Healthy and is teaching yoga at a local studio in Atlantic Beach, Florida.

Elias graduated from Purdue University with a B.S. of Health & Kinesiology and was the Lead Personal Trainer overseeing over 50 trainers at the university's recreation center. He now is able to dedicate more time to his online coaching clients and is getting his M.S. of Exercise Science with a concentration in Strength & Conditioning at the University of South Florida. Elias aims to open his own warehouse gym and continue to develop his brand training more athletes and providing evidence based/scientifically supported training methods. Aside from fitness, Elias loves going to music festivals and cooking/going out for wild cuisine and cocktails.

In this episode of The Up-Beet Dietitians, Emily and Hannah are joined by an anti-diet registered dietitian Kayla Bechman, who is all about intuitive eating and taking down diet culture. Kayla provides great perspective along with statistics about what is so bad about dieting and how to break free from the diet cycle.

Kayla is a Registered Dietitian and graduate of Purdue University. She works as a dietitian in a nursing and rehabilitation facility where she helps her residents manage their nutrition for a wide variety of life stages, goals, and diagnoses. She lives off coffee, Coke Zero, and chocolate… and also tacos and margaritas!! In her spare time you can find her fighting nutrition misinformation and diet culture, as well as baking and decorating cakes, hiking, watching football, hanging with her dog Bentley Boo, having fun with her nephews and nieces, and cage-diving with sharks!

If you haven’t heard of Enneagrams, they are different categories of a “model of human psychology and personality theory, that is based on the idea that each person has a unique and innate personal structure, or ‘essence,’ that shapes the way they see the world and themselves.” The girls completed the personality test and dive into how this personality essence affects their day-to-day life.
