Dr. Chen is a UK trained medical doctor with 15 years of clinical experience. She is board certified in the UK in both internal medicine and family practice.

Her world turned upside down when her daughter was hospitalized soon after being born with symptoms no doctor could figure out. Through doing her own research, she was able to help her daughter recover. She also realized that the many years of chronic fatigue, acne and brain fog she had was due to environmental toxicity. This opened the world of root causes she had never considered before as a conventional medical doctor. 

When she moved to San Francisco she decided not to get relicensed as an MD in the US, but instead to coach clients back to health by identifying root causes and implementing lifestyle solutions. She is also on a mission to help people reduce their toxin load because she believes environmental toxins to be one important root cause of many chronic health conditions.

Chuck Carroll is truly “The Weight Loss Champion.”

At his heaviest, he weighed 420 pounds and had amassed a 66-inch waist while requiring a size 6xl shirt. At just 5-foot-6, his tiny frame struggled to support his enormous figure. 

A severe food addiction continued to fuel an unhealthy lifestyle as his waist expanded at such a pace that soon it would outgrow even the big and tall catalog. Yet, he convinced himself that he needed to continue down that path in order to remain a personality on radio station BIG 100.3 (WBIG-FM) in Washington, DC.

Still, there were times when, like millions of others battling the bulge, he tried and failed to lose weight. He was even once paid to endorse a program called The Cookie Diet. But like every other attempt, the success he achieved was short-lived as the weight came pouring back on and then some. The money he was paid for schilling the cookies quickly evaporated at the nearest drive-thru.

Fearing that his life was spiraling out of control and nearing an end, he opted to undergo weight loss surgery. Prior to the procedure he was convinced that the drastic measure would become like all the other failed attempts to lose weight.  At least, he thought, he could go to his grave confident that he tried everything.

Chuck was just 27 years old at the time and didn’t think he would live to see 30.

But then the unexpected happened. He woke up from the surgery and never looked back.

Although a critical component, the surgery proved only to be the first step in his journey. In fact, he only attributes 10 percent of his weight loss success to the procedure.

In just over a year, Chuck shed 265 pounds by conquering food addiction and devoting himself to a healthier lifestyle. He’s now maintaining the weight loss by eating a plant-based diet. Going vegan once seemed unthinkable to Chuck, but now it’s going back to eating processed meat and dairy that would be inconceivable.

The confidence he gained from the weight loss enabled him to pursue his dream of becoming a sports reporter. He has hosted a number of radio shows with NFL players. One of the players gave him the nickname of “The Weight Loss Champion” after news of his transformation spread through the locker room. 

Shortly thereafter, Chuck’s career took a twist when he became a reporter for the all-news CBS station in Washington. From there, he went on to anchor national newscasts at NBC News Radio. Yet, he felt something was still missing in his professional life. He wanted to give back and inspire others to follow in his footsteps whether they had already lost weight or were just beginning their weight loss journey.  

His journey took another twist in 2017 when he adopted a plant-based diet at the urging of WWE Superstar Austin Aries which kicked his health into overdrive! The following year, he teamed up with PCRM to launch The Exam Room™ podcast where he has interviewed the biggest names in the plant-based community, including Dr. Neal Barnard, Dr. T. Colin Campbell, and Dr. Michael Greger. The show has grown to become one of the most downloaded nutrition podcasts in the world. 

To date he has lost an astonishing 280 pounds.

Ashley Kitchens grew up on an Angus cattle farm in small-town Indiana. As you might guess, meat and dairy were a big part of daily life. Unfortunately, so were GI issues like chronic constipation. For years, she was told to manage my issues with medication instead of considering the food she was was putting into her body.

Ashley earned my Masters of Public Health and Nutrition from the University of North Carolina at Chapel Hill and became a registered dietitian in 2012. But, even after all that, her issues didn’t completely go away.

It wasn’t until she did personalized research to dive deep into my own life and my own eating habits that she noticed a significant change. For her, this meant transitioning to a plant-based lifestyle.

Meet Genny Mack. Genny was born in El Paso, Texas, grew up in Philly, and now lives in Bronx, New York. She enjoys traveling with her husband Miguel, has experienced 26 countries, and lived in London, UK, and Bengaluru, India. Genny is a woman of many talents and dedicates her life to helping people heal through plant-based eating, movement, and mindfulness. 

After leaving her full-time corporate career as a CPA for over 12 years, Genny decided to pursue her passion for wellness and founded theEATschool in 2021 as a plant-based philosophy. Genny was diagnosed with Lupus, a chronic disease that predominantly affects women of color, in 2017 and has suffered many near-death experiences in 2018, such as being hospitalized with Stage IV Kidney Nephritis, Pneumonia, and Pleurisy (inflammation of the lungs). Genny has not let Lupus get in the way of transforming her life to feel good every day. Genny decided to take control of her life and understand how to heal her body from trauma.

Genny transformed her overall well-being by transitioning to a whole-food, plant-based lifestyle and now has more mental clarity and energy than ever before. This led her to become a Certified Holistic Nutritionist and Fitness Coach and has changed over 100+ women's lives through clean eating, movement and mindfulness.

Genny is inspired to uplift the community by the amazing works of nutritionist Tracye McQuirter and influencer Tabitha Brown, for example. Genny’s inspiration is to impact the lives of 10K+ women to adopt a plant-based lifestyle, feel better and heal our communities.

Glen Merzer is a playwright, screenwriter, and author. He has authored or co-authored eleven books with a vegan message. His latest book, Food Is Climate: A Response to Al Gore, Bill Gates, Paul Hawken, & The Conventional Narrative on Climate Change, argues that the only way to reverse climate change is to put an end to animal agriculture.

Glen is also the author of Own Your Health (The Book Publishing Company, 2021), an examination of role of nutrition in health, told with humor and with personal anecdotes. 

Glen began his career in book-writing as co-author, with Howard Lyman, of Mad Cowboy (Simon & Schuster, 1998).  Glen is also co-author of The Secrets to Ultimate Weight Loss (2018) and Unprocessed (2011) by Chef AJ, as well as other books advocating plant-based eating.  The Tenth Anniversary New Edition of Unprocessed has just been released.  

Glen’s one novel is Off the Reservation, a political satire about a vegan congressman from the Midwest who runs for president.

Anne-Marie has always been passionate about health and nutrition. Her interest in food began when she started experiencing digestive issues as a teenager. After being diagnosed with IBS and told there wasn't much she could do about it, Anne-Marie began a long journey looking for answers and trying out different diets including a flexitarian diet and vegetarian diet. In summer 2020, she found her answers in Dr. Will Bulciewicz's book Fiber Fueled, which was all about the importance of eating a diversity of plants. She signed up for his course, "The Plant-Fed Gut" which gave her the confidence she needed to fully commit to a plant-based diet. Anne-Marie has continued learning about this way of living and has a certificate from Rouxbe's Professional Plant-Based Cooking Program and Essential Desserts Course, as well as a certificate in Plant-Based Nutrition from the T. Colins Campbell Centre for Nutrition Studies through eCornell. To her surprise, she was able to influence her children and husband to follow along... probably because she was talking about the benefits of plants so much and her cooking got better!

Anne-Marie holds a Master in Health Administration. Her ultimate goal is to make the health care system more sustainable by supporting lifestyle changes, but for now, she is finding joy and meaning in helping families adopt more plant-based and plant-forward diets.

Dr. Chen is a UK trained medical doctor with 15 years of clinical experience. She is board certified in the UK in both internal medicine and family practice.

Her world turned upside down when her daughter was hospitalized soon after being born with symptoms no doctor could figure out. Through doing her own research, she was able to help her daughter recover. She also realized that the many years of chronic fatigue, acne and brain fog she had was due to environmental toxicity. This opened the world of root causes she had never considered before as a conventional medical doctor. 

When she moved to San Francisco she decided not to get relicensed as an MD in the US, but instead to coach clients back to health by identifying root causes and implementing lifestyle solutions. She is also on a mission to help people reduce their toxin load because she believes environmental toxins to be one important root cause of many chronic health conditions.

Hanna is a Registered Holistic Nutritionist and Certified Holistic Cancer Practitioner. She currently maintains her private consulting practice in Vancouver, BC. 

After overcoming cancer as a young woman and realizing the impact of nutrition on healing and recovery, Hanna became interested in the field of nutrition. She now specializes in working with individuals during and after cancer treatment to help them optimize treatment outcomes, mitigate treatment side effects, support recovery, and reduce the risk of recurrence through nutritional therapy and complementary/holistic healing modalities. In the past, Hanna has held various roles, including Nutrition Operations Manager for Choices Markets and nutritioist at various medical clinics such as CHANGEpain and Care Medical Group. Hanna has developed educational seminars and programs for individuals with chronic pain, cancer, and cardiovascular disease. Angela Fischetti is a physical fitness, yoga instructor and massage therapist specializing in wellness for older adults. She began teaching seniors in her 30s at a time when she embarked on her own tough healing journey. Three decades later, a senior herself, Ms. Fischetti combines years of experience and research with a unique combination of empathy and encouragement for older adults seeking a healthier lifestyle. Ms. Fischetti also researches latest finds in senior fitness and consults with each client’s medical practitioners for tailored workouts. As a massage therapist, Ms. Fischetti also works with geriatric patients with memory and other delicate disorders who benefit from gentle touch and movement in palliative care. Clients enjoy working with Ms. Fischetti for many reasons, including her attention to detail, but also, her sense of humor. Based in Miami Beach, Ms. Fischetti has served South Florida clients for over 21 years. Brooklyn-born with a background in Shakespearean theater and a life-long passion for song, Ms. Fischetti is also a devoted companion to felines.


 Angela is available for virtual sessions in Senior Fitness as a personal fitness trainer, Hatha Yoga instructor, chair exercise and chair yoga instructor. On the opposite end of the spectrum Angela is also available as a virtual prenatal yoga instructor. As a licensed massage therapist, Angela works on-site in Miami Beach. Her specialty is Geriatric Massage including Palliative Care Massage. She also offers Swedish Massage and deep tissue.
