Have you ever gone to the doctor and been given this ambiguous prescription for “diet and exercise?” The exercise part seems straight forward, but for many doctors food remains a medical mystery.

 

That’s a major problem given the fact that poor diet quality has surpassed smoking to become the leading cause of death and disability in the U.S. In fact, 70 percent of all chronic diseases are believed to be linked to diet and lifestyle.

 

On this episode of The Exam Room Podcast™, Dr. Neal Barnard joins “The Weight Loss Champion” Chuck Carroll to explore why doctors don’t know much about diets. As you’ll learn, the problem begins long before they ever enter practice, it begins in medical school. The lack of nutrition education in the curriculum is jaw-dropping despite an increasing amount of research showing that many chronic disease-related deaths could have been prevented by dietary changes.

 

Dr. Barnard also shares how YOU can help fix the problem by speaking with your own doctors and help them understand that vitamin C comes from more than just a pill or glass of orange juice. Your conversations with them about nutrition and the benefits of a plant-based diet can literally help to save a life.

 

And if you think your doctor won’t listen? Think again. A survey among physicians published in the Journal of the American College of Nutrition finds that 94 percent of them feel nutrition counseling should be part of primary care visits. However, only 14 percent feel like they are able to adequately talk about it, but your conversation can help change that.

 

You’ll also get tips on how to begin those conversations and how to have them with friends and family who may be skeptical of a vegan diet.

07 Jan 2025Pizza Addict Loses Over 70 Pounds By Going Vegan | Michelle Oberg00:55:24

A serious addiction was sending Michelle Oberg to an early grave. But it wasn’t an addiction to drugs or alcohol. Even though she was substantially overweight, Michelle just could not stop eating pizza.

 

It may seem puzzling to mention pizza in the same breath as cocaine or whiskey, but for Michelle Oberg the addiction had it hooks in as deep as any that would traditionally send a person to rehab.

 

The result of her out of control eating was a heinously inflamed body that was struggling to function. Her triglycerides and c-peptide levels were incomprehensibly high. Meanwhile, migraine headaches had become all too common along with painful gout flareups. At the same time her weight was spiraling out of control.

 

Despite growing sicker and heavier every day she still couldn’t say no to pizza.

Then she finally hit rock bottom and began to climb out of a dark hole and began breaking the chains of addiction and shedding the pounds that had been holding her back.

 

In an extraordinary story of what is possible, Michelle shares her journey of resilience with fellow food addict Chuck Carroll on The Exam Room Podcast. She found strength and success after she began to eat a plant-based diet. And today she is thriving. Her goal is to inspire others struggling with demons to dig deep and make the change as well.

Is the paleo diet healthy? Supporters claim that by eating the way our ancestors did more than 10,000 years ago you will lose weight and get healthy. It’s a diet free of most grains, beans, legumes and potatoes since those foods weren’t available during the paleolithic era. However, there is evidence to suggest certain grains and tubers were in fact part of the Neanderthal diet.

 

Without those starches, a typical paleo menu relies heavily on grass-fed lean meat, fish, eggs, and oil. Nuts, fruit and vegetables are also permitted.

Dr. Neal Barnard joins Chuck Carroll on The Exam Room Live to discuss the dietary factors that may influence your cancer risk.

 

In this interview:

 

Dairy Consumption: Studies from Harvard indicate that men who consume milk have a higher risk of developing prostate cancer, regardless of whether it's low-fat or whole milk. The insulin-like growth factor (IGF-1) in milk is a potential contributor to this increased risk.

 

Meat Consumption: A diet high in red meat, such as hamburgers and fries, is also linked to a higher risk of prostate cancer.

 

Protective Foods: Foods rich in lycopene, particularly tomato products, and soy products are associated with a lower risk of prostate cancer. Soy does not cause breast cancer in men and may actually reduce the risk of prostate cancer.

 

Impact of Lifestyle Changes: Making dietary changes after a prostate cancer diagnosis can be beneficial in preventing recurrence. Dr. Barnard references Dean Ornish's studies that suggest dietary modifications can positively impact men with prostate cancer.

 

Green Tea: Dr. Barnard notes that while green tea may have some protective effects, it is not a substitute for other dietary changes.

 

Sugar: Sugar, particularly from dairy products, is discussed as a potential risk factor for prostate cancer.

 

Overall Health: Dr. Barnard emphasizes that many men with prostate cancer do not die from it but rather from other health issues, such as heart disease, often linked to poor dietary choices.

A doctor has changed her life by adopting a plant-based diet and is now using her experience to transform the lives of her patients.

Dr. Vanita Rahman joins “The Weight Loss Champion” Chuck Carroll to talk about how she overcame her own battle with obesity and why she’s sharing that experience and what she’s learned.

Her journey to health began years earlier when her family immigrated to the United States from India. It wasn’t long before she began gaining weight on the standard American diet.  As Chuck and Dr. Rahman discuss, weight gain is difficult for any teenager let alone one who is trying to make friends in a new country.

It wasn’t until years later when her own health began to deteriorate that she turned to a vegan diet for help and it wasn’t long before she began to see results and started feeling better. She became so inspired by her transformation that she’s paying it forward with a new weight loss program at The Barnard Medical Center.

Chuck is also joined by Nolan Rodman and Dr. Hana Kahleova to find out how Nolan’s transition to a plant-based diet is progressing. In part 1 of the interview, Nolan was getting ready to try going vegan for the first time. How is he feeling now? What did Dr. Kahleova discover about his transition? They’ve run the tests and the results are in!

One mistake would change Alana Moor's life forever. She was sentenced to 4.5 years in prison in a foreign country that was thousands of miles from her home and everyone she knew and loved.
 
Although isolated and stripped of her freedom, it was there that Alana began to find a healthier path forward.
 
The food in the Panamanian prison system would routinely cause her to fall ill. On a few occasions it even required a trip to the hospital.
 
Alana's journey to healing began with her pushing for healthier food options and leading daily exercise classes for other inmates. Through that she found self-empowerment and a sense of worth that had been lacking.
 
And today she is working with one of the largest plant-based event companies in Canada while continuing to champion healthier options for those who remain incarcerated.

Then we unveil The Exam Room Burger! It’s a smoky black bean quinoa burger created exclusively for the show by the ultra-talented vegan chef Lauren Kretzer! This is a recipe you’re not going to want to miss!

 

The Exam Room Burger

vegan, gluten free, oil free

By Lauren Kretzer

Serves 6

 

Ingredients:

  • 1 (15.5 oz) can black beans, drained and rinsed
  • ½ cup cooked quinoa
  • ½ cup walnuts
  • ½ cup roughly chopped fresh cilantro
  • ¼ cup oat flour
  • 1 clove garlic
  • 2 Tbsp tahini
  • 1 Tbsp tomato paste
  • 1 Tbsp tamari
  • ½ tsp salt
  • ¼ tsp chili powder
  • ¼ tsp smoked paprika
  • Whole wheat hamburger buns, sliced avocado, and sprouts, for serving (optional)

 Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or a Silicone baking mat (such as Silpat).
  2. In the bowl of a food processor fitted with an “S” blade, add black beans, quinoa, walnuts, cilantro, oat flour, garlic, tahini, tomato paste, tamari, salt, chili powder and paprika. Process until ingredients are just combined; mixture should have some texture, but should hold together.
  3. Transfer burger mixture to a cutting board and divide evenly into 6 patties (about 3-3 ½” in diameter).
  4. Place burger patties on lined baking sheet and cook for 18-20 minutes, turning halfway.
  5. Serve burgers on hamburger buns with avocado and sprouts (and/or any other desired toppings).

Josie is just 13 years old but she’s already saving lives and making the world a better place!

Before the calendar flips to 2020, this super inspiring teen joins “The Weight Loss Champion” Chuck Carroll for a special episode of The Exam Room™ to share her astonishing story. The young vegan spotted a cage on the side of the road. On the outside was a sign reading “Free Bacon.” On the inside was a tiny abandoned pig.

Josie knew she didn’t stumble across a meal, she stumbled across a friend whom would soon have a new home and a new name, Franny.

Their story has captured the hearts of thousands and now Josie is working tirelessly to help rescue other animals while spreading awareness of the benefits of a plant-based diet.

Her efforts are similar to the work being done in Michigan where lawmakers are working to outlaw painful experiments on dogs. Chuck is joined by Kristie Sullivan, Vice President of Research Policy at the Physicians Committee, to get an update on our efforts in the state and where things stand with the groundbreaking legislation.

Her research shows that eliminating meat and dairy from the diet is capable of more than just extending your life, it can add quality years to it. She says that the Fountain of Youth can be as close as your kitchen!

 

Dr. Neal Barnard also joins the show to discuss the newest government funded artery clogging creation at Taco Bell, the Grilled Cheese Burrito. “The Weight Loss Champion” Chuck Carroll is joined by Dr. Hana Kahleova who has studied the link between the Keto Diet and diabetes. She says that it’s time to rethink sugar and carbohydrates as the culprits behind diabetes and instead look at the other foods on your plate, including meat and dairy. In fact, she cites a long-term study that finds following a low-carb diet for 10 years or more significantly increases the risk of becoming diabetic.

Dr. Kahleova and Chuck explore the three major nutritional problems that are causing people to live sicker and die younger. It turns out that the three are directly to related to the carbohydrate-restricted Keto Diet.

Chuck then explores the plant-based scene in England with a little help from Emma Humfrey. Interest in healthy eating is leading to a boom in options for plant-based eaters it seems! What happened to the health and waistlines of participants over the course of a 16-week study was quite remarkable!

Then Dr. Steve Neabore travels back in time to when Chuck still weighed 420 pounds to perform an examination. At that point, his uncontrolled blood pressure was 190/110 and he was first given medication to treat hypertension in high school. Cholesterol and blood sugar were also trending in the wrong direction as was his waist, which had expanded to 66 inches around.

Dr. Neabore explains the metabolic damage being caused by the extreme high-fat diet and discusses exactly what is happening in the body as the chest begins to tighten and it becomes difficult to breathe even when taking just a few steps. What do the arteries look like at this point? How hard is the heart having to work?

Then the focus turns to gut bacteria as Dr. Leigh Frame joins the show to talk about the wildly popular research that’s being done on microbiome. Scientists are finding that the link between health and the gut is even stronger than we thought thanks to advancements in DNA research. Fun fact: no two people have the exact same gut microbiome profile. So, what’s in your gut is as unique as your fingerprint. Tony Schiera was more than 700 miles into a 1,000-mile-long bicycle ride from Indianapolis to Washington, D.C., with his wife Rachel when tragedy nearly struck. They clung to hope that he was just dehydrated, but that hope quickly faded when he was rushed to one of the premiere cardiac centers in the United States.
 
Despite being exceptionally physically fit, Tony had major blockages in at least five arteries. Doctors told him that he required lifesaving quintuple bypass surgery. It proved to be a success, but it was only the first step in a new life.
 
Although heart disease ran rampant in his family, he and his wife embarked on a mission to find out whether genetics were to blame for his brush with death. What they would learn would change both of their lives and Tony’s outlook for the future. He was no longer living on borrowed time. He was now destined to live to a ripe old age.
 
Together they have discovered that a new way of eating doesn’t mean depriving themselves of their favorite foods. Instead, it means discovering heart-healthy recipes to continue enjoying them, including one for mac and cheese!
