Chef Day Radley is the founder of THE VEGAN CHEF SCHOOL, created to provide the vegan movement with progressive learning and innovation. As a newbie vegan chef, in 2010, Chef Day Radley expected to dive into a world where her fellow chefs adored their work; creating dishes with love, pushing back the boundaries of cruelty free food.....sadly this wan't to be the case.It was 2010 and Chef Radley was working in her first pro-chef job. The kitchen was a maelstrom of grumpy, tetchy chefs, barking at each other whilst churning out food with as much care as a factory robot. Any love for food resided solely with her. The rest of the ‘team’ were not vegan or vegetarian and couldn’t care less about cross contamination. They were grown boys stuck in a career that was the best of a limited choice given them at age 16; work as a mechanic, builder or chef. For many, becoming a chef seemed like the easy choice. The long unsociable hours, minimum wage and sweaty, greasy conditions soon makes it clear that it is far from easy. This is a persistent problem in UK kitchens and one that adds to our terrible reputation for a severe lack of culinary finesse. When you pair that with the vegan movement the consequences could be even more severe; it has the potential to limit the growth of veganism. Todd Sinclair became a vegan author and activist, Todd Sinclair spent years leading travel groups in far-off places, a fitting occupation for someone who is now showing the way to a radical new approach to veganism. On Sunday 11 September 2022, Kate and partner Kieren Windsor will leave bigmoose café in Cardiff and cycle anticlockwise around the circumference of Wales. The couple will be relying on the hospitality of strangers as they complete this tour. Using bamboo, a renewable and carbon-effective product, for the bikes they have filed down themselves from six individual pieces, they hope companies and individuals will realise that we can change to a more sustainable way of living without compromising performance or activities. They’re inviting cyclists to join them on the last section of their tour. The leg starts at 10am in Swansea on Saturday 9th July and they will pass through Cowbridge, Cardiff Bay (where cyclists can also join the leg) and finish at BigMoose cafe. Kate, 43, only started training for athletic success in her early 30s following a relationship breakdown that forced her to re-evaluate her life and focus on her passions. Within two years she was crowned world champion in long-distance triathlon in 2014 and subsequently broke 3 world records in static cycling in 2021. Kieren, 49, has never participated in any solo sports and only recently took up cycling. In addition to the Tour de Wales, on 5th June 2023 (World Environment Day), Kate Strong will embark on a 3-month cycle challenge covering over 3,000 miles cycle challenge around the circumference of England, Scotland and Wales. She will be cycling in the “red zone”, areas that are highly likely to be affected by sea level changes directly due to climate change.
During Challenge 3000, Kate will stop at 30 official locations and plant over 3,000 trees. She will also give talks and host workshops about sustainability and the simple changes we can make to mitigate the effects of climate change. Kate says “Through Challenge 3000, I want to connect communities to nature and to each other. We all are being impacted by the climate crisis and my intention is to inspire people to work together and create a radical solution.”

She is also a co-founder of the Veterinary Vegan Network and Ethical Globe. Kellogg’s Cornflakes, HUEL shakes, Marmite, Cow & Gate baby formula, Tesco’s plain flour, Soreen Bars, Sainsbury’s Orange Juice, Oatly Oat Milk, Nutri-Grain Bars, Slimfast… All of these products have one thing in common. They contain synthetic (not natural) vitamins and minerals. What are the synthetic vitamins made of? Do they work like natural vitamins? Are there negative side effects? The clinically proven answers to these questions might surprise you. With £500k of UK government funding - one startup, BIOVIT, and a team of scientists are comparing the effects of synthetic vs plant-derived nutrients. Synthetic nutrients, that are in all fortified foods, which over 80% of us consume daily, have been shown to have limited to no effect, and in some cases increase cancer risk. Recent article in ‘Food Navigator’ here The fall out of this could have major impacts on food labelling, nutrition guidance, human health, and food production sustainability. With Governments globally being lobbied by companies such as Safe Food Advocacy Europe on broader use of synthetic ingredients, it’s only a matter of time before all certified natural and plant based foods are banned from using synthetic nutrients for good. The vitamins lurking in your everyday corn flakes are not the wholesome nutrients nature intended, instead, they are lab-made vitamin analogues, often made using unsettling ingredients such as coal tar, cattle brains, and a cocktail of harmful chemicals. These artificial impostors, known as 'synthetic nutrients,' are not identical to natural nutrients. They are missing essential enzymes and cofactors required for absorption and use by the body, and there is a growing body of clinical research that indicates they do not work and may even increase the risk of cancer. Highly regarded website Healthline outlines key differences between synthetic and natural nutrients, and lists a large body of evidence showing adverse health effects. “Synthetic nutrients from supplements and fortified foods may have deleterious effects on health, especially when used in high doses” BIOVIT are the UK’s leading experts in plant-derived nutrients for food. They have developed the world’s first clinically developed and tested plant-derived multinutrient blends that can replace synthetic multinutrients, for use in food manufacture. Now, alongside Professor Richard Bracken and his team at Swansea University, they are conducting first-of-its-kind research into the bioavailability and efficacy of plant-derived vs synthetic nutrients. Ex-CEO of the ‘Vegan Friendly’ certification and founder of vegan rugby club Green Gazelles Brendon Bale commented: “Consumers of plant based and natural products value transparency and trust most of all… synthetic micronutrients are neither natural or made of plants, and so the labelling needs to declare that. It’s about health and trust”. Ky Wright, founder of BIOVIT, suggests the shift to natural nutrients should be common sense for the food giants: “Independent surveys have shown that over half of the public are generally unaware that foods they eat contain synthetic nutrients. They also show that a heavy majority (90%) would prefer their fortified foods to contain only natural nutrients, and 86% would pay more. I knew I wasn’t alone! As a Vegan parent, I felt my kids were somehow missing out on things and it just wasn’t fair. I wanted them to feel empowered and to know they are part of something much bigger and then the idea for the Vegan Kids festival began. After a farmer and villagers put a stop to our first year, it really sent me back to the drawing board. I still wanted to create this community but finding willing farmers and suitable venues was a nightmare. AND well then COVID hit. so that really put a stop to all our plans. I put the idea on the back burner, and focused on other things. but soon my calling was getting louder in my ear and I started offering online kids sessions every Saturday. I realised the Kids festival doesn’t need to be the only thing we do to connect Vegan kids. There are lots of ways we can. So I went back to the drawing board and started the Kids community on Facebook, then I got one of my favourite things a notepad and started jotting down ideas. They just kept coming. I want to create a group where Vegan Kids can explore, share, create, learn, make friends and most importantly have fun. I’m well aware I can’t do this all alone and hope to form many partnerships, to enable us to help other vegan organisations and businesses. As for the future, this is something I want to focus on, longer term the BIG dream is to have a Vegan kids retreat, where kids can come to learn and play, enough land to hold our own vegan kids festival, rescue any animals that need it and a cool eco village where people can stay, volunteer and play. Until we get there, we want to create lots of experiences for vegan kids, both online and in person, We’re only limited by our imagination.
