We get into autumn mode in Episode 5, exploring the basics of stirred rum cocktails with Smuggler’s Cove co-owner Martin Cate; then check in with our 2018 “Beer People of the Year” Beny Ashburn and Teo Hunter from Crowns & Hops, on their beer and upcoming brewery, and their 8 Trill Pils Initiative; and we chat about Barbados rum with Trudiann Branker, the master blender for Mount Gay Rum

 

Ship Shape

2 oz. rum*

¾ oz. High Seas Mix (to taste)

1 dash Angostura bitters

Tools: barspoon, strainer

Glass: coupe

Garnish: lemon twist

Stir all of the ingredients with ice until chilled, then strain into a chilled glass. Twist a piece of lemon peel over the drink, then use as garnish.

High Seas Mix: In a bottle, combine equal amounts Averna, Kronan Swedish Punsch, and oloroso sherry. Shake to combine. 

* Cate recommends using bolder aged rums in this cocktail, though he notes that this simple recipe invites experimentation with a range of different rums. Depending on the choice of rum, adjust the amount of High Seas Mix, to taste.

This year’s Imbibe 75 highlights people, businesses, and organizations working to build a better drinks world. The cover of this year’s Imbibe 75 issue features Atlanta bartender Tiffanie Barriere, who first appeared in Imbibe while helming the renowned airport bar One Flew South. More recently, she's combined her bartending skills with her gift for communicating and educating, particularly about the deep connection between Black history and cocktail history.  She shares these stories in a cocktail context through her work as a cocktail educator and consultant, and on Instagram as The Drinking Coach. For this episode, she talks about the importance of connecting history with today’s cocktail culture, and she shares a recipe for an Agricole Old Fashioned.

Agricole Old Fashioned

2 oz. aged rhum agricole (Barriere uses Rhum Clement Select Barrel)
1 tsp. brown sugar
2 dashes Angostura bitters
3-4 dried lavender buds
Tools: barspoon, strainer, fine strainer
Glass: Old Fashioned
Garnish: orange twist

In a mixing glass, add the sugar, bitters, and lavender buds, along with 1 tsp. of water, and stir to dissolve the sugar. Add the rum and several ice cubes and stir to chill, then double strain into a glass holding one large ice cube (or several smaller cubes). Express the oil from an orange twist over the cocktail, then use as garnish.

Brother Cleve was a musician, DJ, bartender, and bar owner who helped shape the direction of the modern cocktail renaissance, while bringing up a generation of Boston bartenders and bar owners, earning the title “the Godfather of Boston’s Cocktail Scene.” In 2017, we featured Brother Cleve and the significant role he played in cocktail culture. This past September he died unexpectedly, leaving behind a recently opened bar, Lullaby, in New York City, and legions of admirers across the country. For this episode, we look back on his life and influence with longtime friends Jackson Cannon from Eastern Standard in Boston; Jeff “Beachbum” Berry from Latitude 29 in New Orleans; and Patrick Sullivan, former owner of the B-Side Lounge in Cambridge, Massachusetts. Sother Teague is the author of I’m Just Here for the Drinks, a co-host with Damon Boelte of The Speakeasy podcast, and beverage director of Amor y Amargo in New York City. For this episode, he walks us through incorporating bitter liqueurs into holiday cocktails; mixes an Amor y Amargo original, the Bald Mountain; and discusses the state of his bar in the COVID era. 

In 2018, Teague was profiled by Shanna Farrell for Imbibe, focusing on his advocacy for mental health care among bartenders and other hospitality professionals. In this episode, he shares resources he’s found helpful during the COVID crisis, including FOH (Focus on Health, from bartenders Lauren Paylor and Alex Jump), and The Healthtender, from bartender Amie Ward. Bald Mountain

1 oz. Varnelli Punch Fantasia

½ oz. aged rum (Amor y Amargo uses The Real McCoy)

½ oz. overproof rum (Amor y Amargo uses Smith & Cross)

½ oz. rich cinnamon syrup 

¼ oz. Giffard Caribbean Pineapple Liqueur

2 dashes Dale DeGroff’s Pimento Aromatic Bitters

Mulled Hot Water, to top

Glass: 8 oz. mug or cup (Amor y Amargo uses the iconic New York City takeout coffee cup)

Garnish: orange twist, fresh-grated nutmeg

Combine all of the ingredients in a cup, and top with mulled hot water. Twist a piece of orange peel over the drink, and sprinkle with fresh-grated nutmeg.

Rich Cinnamon Syrup: In a saucepan, combine 2 cups of demerara sugar, 1 cup of water, and 4 cinnamon sticks, broken into pieces. Bring to a boil while whisking to dissolve sugar, then let simmer for 8-10 minutes, stirring frequently. Let cool, then strain and bottle for use; keeps refrigerated for up to 2 weeks.

Mulled Hot Water: Fill a small saucepan or electric kettle with water, then add one or two cinnamon sticks, several whole cloves, and a couple of whole star anise, to taste. Let mixture simmer for 10-15 minutes, and keep warm for serving.

Dale DeGroff is one of the pioneers of the cocktail renaissance, and Episode 6 is devoted entirely to his stories of being a bartender in New York City and Los Angeles in the closing decades of the 20th century; his thoughts on the growth of the modern cocktail movement and the future of bars; and the recently released The New Craft of the Cocktail, a revised and updated edition of his influential 2002 book.

Martini Cocktail 1888

1 oz. Old Tom gin (DeGroff uses Ransom)
1 oz. sweet vermouth
1 dash gomme syrup
2 or 3 dashes bitters (DeGroff uses Bitter Truth Bogart’s Bitters)
1 dash curaçao or absinthe (optional)
Tools: barspoon, strainer
Glass: cocktail
Garnish: cherry or olive, lemon zest

Stir all of the ingredients with ice, then strain into a chilled glass. Garnish with a cherry or an olive, then express the lemon peel over the top of the drink and discard.

Nickle City’s Ranch Water

1¼ oz. blanco tequila
¼ oz. fresh lime juice
¼ oz. orange liqueur (Nickel City uses Cointreau)
Chilled Topo Chico
Glass: chilled mug or highball glass
Garnish: coarse salt, Tajin

Moisten the rim of the serving glass with the cut edge of a fresh lime, and dip the rim in a small dish containing a mixture of coarse salt and Tajin. Shake to remove the excess, and chill the glass for serving. To make the drink, add the first 3 ingredients to the prepared glass and top with chilled Topo Chico.

Audrey Saunders has been one of the world’s most influential bartenders and bar owners for more than 25 years, at places including Blackbird and Bemelman’s Bar starting in the 1990s, followed by her pioneering New York City bar, Pegu Club. In this episode, Saunders makes her first-ever appearance on a podcast, sharing details behind her role in restoring the Tom & Jerry to prominence as a holiday drink; other favorite holiday cocktails; and what life has in store for her following Pegu Club’s permanent closure in 2020.

Go old-school with this recipe by beating the batter with a whisk or mixer—or take Audrey Saunders’ recommendations from this episode, and use a food processor to speed things up.

Batter
6 eggs, separated
1 pound sugar
1 ounce aged rum
3 Tbsp. vanilla extract
¾ tsp. ground cinnamon
¼ tsp. ground allspice
¼ tsp. ground nutmeg
1/8 tsp. ground cloves
2 dashes Angostura bitters

For each drink
6 oz. milk
1 oz. aged rum
1 oz. Cognac

Make the batter: In a bowl (or a food processor), beat the egg yolks until thin. While still beating, slowly add the sugar, rum, vanilla, spices, and bitters. Separately, beat the egg whites until stiff, and fold into the yolk mixture. Refrigerate the batter in a large container overnight.

To serve, heat the milk in a hot pot or a small saucepan until boiling. While the milk warms, pre-heat the serving cups, and use a whisk to recombine the batter. For each drink, add 2 oz. of batter, 1 oz. each of rum and cognac, then slowly top with boiling milk, whisking the drink until foamy and well-combined. Top with grated nutmeg.

Martin and Rebecca Cate are the owners of Smuggler’s Cove and Whitechapel in San Francisco, and the authors of the James Beard Award–winning book, Smuggler’s Cove. The Cates have also both written for Imbibe, and for this episode, we talk with Rebecca about her essay in our November/December 2021 issue in which she reflects on what pandemic closures meant for their bar’s family of regulars, and what it’s been like welcoming these old friends back to the bar. Martin also shares the recipe for a holiday favorite served at Smuggler’s Cove.  

Hibiscus Rum Punch
This recipe is an adaptation of Sorrel Punch, a traditional holiday drink enjoyed throughout the Caribbean. This version was originally developed using a house-made hibiscus liqueur; you can make your own, or use Sorel, a recently released commercial version from Imbibe 75 alum Jackie Summers. 

1½ oz. aged Jamaican rum (such as Worthy Park)
1 oz. hibiscus liqueur (see note above)
½ oz. fresh lime juice
1/3 oz. demerara syrup (2:1)
2 oz. chilled soda water
Tools: shaker, strainer
Glass: Collins or highball
Garnish: edible hibiscus flower or lime wheel

Shake the first 4 ingredients with ice. Add the soda to the shaker, then strain into an ice-filled glass, and garnish.

Hibiscus Liqueur: In a large glass jar, combine 3 quarter-size discs of unpeeled fresh ginger, 10 whole cloves, and 1 liter of lightly aged rum. Cover the jar and let it sit at room temperature for 24 hours, then strain out the solids and add ¾ cup of dried hibiscus flowers, and let it sit covered for another 48 hours. Strain the flowers, then seal; the infusion will keep for up to 6 months. To make the liqueur, take 2½ cups of the hibiscus infusion, and add 1 cup of 2:1 simple syrup, and ½ cup of honey (warmed in the microwave or on the stovetop, so it’ll dissolve easier in the mixture). Stir thoroughly to blend, then keep refrigerated for up to several weeks.
