13 Apr 2020Ep 172: Chocolate Chai Kefir Cake00:28:24

Stefin and Andrea were blown away by the recent virtual Preheated Bake Along spearheaded by Listeners Jesse and Rebecca in late March. From cranberry banana bread to “ugly cake,” with stops in Florida for strawberry jalapeño jam, fennel crackers in London, and first-time croissants, our Listeners worldwide had a great time sharing their original bakes. Though this is the first official month devoted to desserts made with tangy dairy, the Preheated hosts have been baking with buttermilk, sour cream, cream cheese and crème fraîche since Episode 1, but have never baked with the milk kefir featured in the Chocolate Chai Kefir Cake from Olive Magazine. Sadly, though both are fans of warming chai spices, as well as chocolate cake, they felt the flavor combo did not work. Hopefully, this week’s bake along, the Lemon Sour Cream Pie from Tastes Better from Scratch will be a creamy, cheerful delight. Finally, in an ongoing feature on how to make some of this month’s featured dairy ingredients in your own kitchen, the duo describe making homemade crème fraîche, buttermilk and sour cream.

Stefin and Andrea are singing the praises of two cookbooks, Jubilee by Toni Martin, and Regula Ysewijn’s Pride & Pudding — both full of food history, beautiful photographs, and intriguing recipes. Andrea’s looking for suggestions for what to do with over-proofed bread dough after a Midwest Made mixup, while Stefin’s looking forward to her summer reading list, which includes Pride & Pudding: A History of British Puddings, Savory and Sweet. Both hosts went rogue on the No-Bake Grasshopper Pie from The Spruce Eats, with mixed results. Then the duo introduce the final “no-bake along” of the month, an Almond Granita from Saveur. Finally, Listeners weigh in on the best summertime treats, from frozen lemonade to hot-fruit cobbler. Will your favorite get a shout out? You can read the full show notes here. 20 Jan 2020Ep 160: Small-Batch Shortbread Pumpkin Pie Bars00:30:50

Hot on the heels of their 2020 trend report in Episode 159, Stefin and Andrea are happy to see Australian vanilla company Queen’s baking trend report, and even happier that Preheated is right on trend, or planning to be, in the coming months. The Small-Batch Shortbread Pumpkin Pie Bars from Baking Mischief provided a petite portion of pumpkin pie with a shortbread crust, but were they the right flavor for January? This week’s bake along will suit anyone in need of quick and delicious comfort … Nigella’s Emergency Brownies serve two (or one if you’re in truly dire straits). Bake along, if you’re in crisis or not! Finally, Stefin reports on her pastéis de natas class in Lisbon, and admits to eating an entire wreath of bolo-rei in Porto, when the Globetrotting Gourmet heads to Portugal. 24 Aug 2020Ep 191: Quick Bite No Churn Cake Batter Ice Cream00:09:40

It's finally time for Andrea to make good on her #20for20 promise to make a dessert that tastes as good as the raw cake batter from Episode 122! First stop: the scientists, who say cake batter flavor is a combination of vanilla, nuts and butter. Andrea started trying Funfetti cake batter dips (thanks to listener Miranda!) but found them too 'cream-cheesy' and not fluffy enough. It wasn't until she was making Nigella's No Churn Coffee Ice Cream that she realized it had the texture she wanted. A quick search of the Internet turned up a No Churn Cake Birthday Cake Ice Cream from America's Test Kitchen, always a trusted source.

Did this ice cream fulfill Andrea's quest to safely indulge in raw cake batter? Listen to find out! You can read the full show notes here.

Stefin and Andrea are excited by the 2020 James Beard Award-nominees for outstanding baking and dessert cookbook, and struggle to decide which they’ll purchase first. Were the Extra Tall Extra Fluffy Japanese Soufflé Pancakes extra delicious or just extra frustrating? This week’s bake along is Black Sesame Cookies from Just One Cookbook, a recipe the hosts already love for its mix of savory and sweet, its use of weights and measures, as well as well-thought-out variations and tips. Finally, in the Resource Roundup, the hosts gather the cookbooks, blogs, and videos that they relied on this month so you can continue your Japanese baking throughout the year. 18 May 2020Ep 177: Pineapple Upside Down Skillet Cake00:30:55

Is it doubly delicious, or double trouble, when a recipe mix-up for this week’s bake along leads Andrea and Stefin down two different pineapple paths? Then it’s time for a Canadian heritage pie with the perfect title for our Roaring ‘20s month: Flapper Pie from Allrecipes.com! And, after you’ve stopped by this week’s Intimidation Station, you’ll be a champion of custard and a master of meringue. You can read the full show notes here.

20 Apr 2020Ep 173: Lemon Sour Cream Pie00:33:17

A variety of quarantine baking challenges kick off the show; your favorite baking duo are on the case to help you with freezing dairy and locating egg- and flour-free desserts. The recipe review of Lemon Sour Cream Pie from Tastes Better From Scratch featured one roaring success with a blind bake! Both hosts agreed this pie's star ingredient, sour cream, makes for a lovely and delicious dessert. This week's bake along is Donut Loaf from Midwest Made by Shauna Sever. Stefin's excited based on recipe name alone, while Andrea's hoping it will help her overcome her donut aversion.

This August, the hosts are "TCB" -- that's Taking Care of Baking -- to tackle some of their remaining #20for20 baking resolutions. Stefin's up with the third of five Quick Bite episodes: Short and sweet segments to see you through the dog days of summer. Today, she's working on a Tasty Toponym (a food named after a place): Lake Bled Cream Cake from Slovenia. Creamy, rum-infused custard and sweetened whipped cream are sandwiched between crispy sheets of puff pastry. As good as the real deal?

Chocolate chip cookies are always in heavy rotation throughout the year, and this month is no exception as the hosts start off talking about their favorites, and some new discoveries. Then the hosts kick off an entire month of Japanese sweets and treats. First up is a classic Japanese milk bread, the Shokupan from Chopstick Chronicles. Will Andrea and Stefin love what they've been missing in this fluffy, soft white bread? Andrea's latest Netflix obsession, Kantaro: The Sweet Tooth Salaryman is the inspiration around the segment on anmitsu, a traditional Japanese dessert.

Garden parties and tray bakes are just two of the terms Stefin has taught Andrea since moving to London. The hosts provide three ideas for special Halloween treats, and then Andrea’s up with her second Greatest Hit: London Fog Shortbread from Oleander and Palm from Episode 61. Happy People Fudge and Carrot Cake Coffee Cake are two Listener favorite recipes this week, and Andrea revels in the discovery of another new term: the simple and delicious counter cake.

19 Nov 2018Ep 100: Bagels and Royal Blue Ribbons00:38:43

This week's review is the Very Good Bagel, Easy-ish Too from Alexandra Stafford and both our hosts are roundly pleased with the results! The bake along this week is a Sweet Potato Pie inspired by Patti LaBelle from the food blog What's Gaby Cooking. Neither of our hosts has ever made a sweet potato pie (although they've certainly clocked in some time eating them!) so they're both pretty excited about this recipe.

Listen to the show to find out listeners' favorite recipe from the first 100 episodes, and Andrea and Stefin's picks for their Season Two Blue Ribbons (Hint: It's a Royal Blue Ribbon for both our hosts this time!). And you won't want to miss a sweet tribute from the duo's very first bake-along listener, Vickie.

Tipsy Treats Month is bouncing right along with a delicious (and potent!) Cherry Bounce recipe, which Stefin recommends using in a Mt. Vernon Mule. Andrea's taste testing her Bailey's in anticipation of this week's bake along: The Homemade Irish Cream from A Cozy Kitchen. Then fasten your seat belts for the Globetrotting Gourmet, where Stefin shares tales of a recent trip to Ireland. There she explored new types of soda bread, met some Kerry cows, had butter at every meal, and found Irish ice cream to be some of the most delicious in the world!

17 Dec 2018Ep 104: Irish Cream with a Side of Drama00:36:30

It’s a dramatic week in Tipsy Treats Town: Andrea’s running out for whiskey at 8 a.m., Stefin’s blender is exploding in a shower of sparks, and Andrea’s dog gets a tipsy treat of his own after a kitchen mishap. It takes a special recipe to overcome all that craziness: Is A Cozy Kitchen’s Homemade Irish Cream worth it? And will next week’s Chilled Chocolate Whiskey Soufflé with Salted Butterscotch Sauce be less theatrical? Finally, the duo chat about the many ways to repurpose the fruit from your homemade liqueurs this month (hidden in a crumble, on a cheeseboard, warmed over ice cream, or simply popped into your mouth!) as well as several you may want to make for last-minute gifts: merry maraschino cherries inspired by Stefin's brother, and a classic rumpot from Nancy Leson.

31 Dec 2018Ep 105.5: A Pudding Worth Singing About00:21:51

It's the final (bonus!) episode of 2018! Andrea and Stefin share listeners' reasons for baking: From stress relief to time with family to creating quality treats (not to mention showing off -- just a little!) it's a heartfelt list of "whys." Then, the duo sing the praises of that Victorian classic, Figgy Pudding from Geoff and Vicky Wells. Andrea loved her Instant Pot version, and Stefin was equally enamored of her traditional stove-top pudding. No wonder someone wrote a song about this rich and delicious holiday treat! Finally, the duo each award a coveted Preheated Blue Ribbon to the tipsy treat they most enjoyed this month. Happy New Year!

07 Jan 2019Ep 106: Eat Your Veggies00:33:31

Our hosts start with a quick update on their 2018 Resolutions. Andrea shares her discovery of a 1-2-3-4 cake as a new favorite template recipe, and details the glories of her newly purged and cleaned pantry. Stefin gives an update on her recipe organization system and regales us with her success of baking more bread throughout the year. Stay tuned for a Nineteen for 2019 Resolution List the hosts will use to guide their baking throughout the year.

This month is all about Eating Your Veggies...we're talking about adding beans, beets and even spinach to the treats this month in a quest to get Five a Day. First up is a Yukon Gold Potato Cinnamon Roll from Bon Appétit that Stefin last made back in 2009. Will this recipe stand up to the test of time almost 10 years later? Finally, our hosts talk about some new food trends for 2019 that they're excited about, and some they're happy to see fall by the wayside.

14 Jan 2019Ep 107: On a (Potato) Roll00:46:49

Andrea and Stefin are on a roll with their “19 for ‘19” baking resolutions, and have several on their list from their inspired listeners. In the duo’s review of the Yukon Gold Potato Cinnamon Rolls, you may be surprised to hear who mussed the mash, and who failed to rise (and who got a sweet potato treat). Then it’s time for next week’s challenge: a baked donut filled with … spinach (!?). Yep, the Baked Spinach Lemon Donuts with Lemon Glaze from Veggie Desserts is putting this month's theme to the test. Will this be truly tasty or truly bizarre? Finally, Andrea fills us in on how to host a cookbook swap, if clearing clutter is on your list of new year’s resolutions.

28 Jan 2019Ep 109: Deep Dish Cookie (and Bean!) Pie00:37:48

This week's show is chock full as the hosts review not one, not two, but three veggie-filled desserts! Starting off with the Deep Dish Cookie Pie from Chocolate Covered Katie, both hosts find this dessert to be one you'll want to keep for its vegan, gluten-free yumminess. Both the Parsnip, Date and Hazelnut Loaf from Six Seasons and the Beetroot and Ginger Cake with Cream Cheese Frosting proved to be very veggie-forward and added an interesting twist to the hosts' quick bread collections. Andrea wraps up the episode with a New Orleans Bakery Crawl you may want to replicate next time you're visiting The Big Easy.

04 Feb 2019Ep 110: Third Annual Pie Month!00:30:10

It’s Preheated's Third Annual Pie Month! But before Stefin and Andrea roll out the top crust, they each report on their “19 for ‘19” Baking Resolutions: Andrea’s reading recipes, and Stefin’s making Turkish pizza. Off to a great start, and it's only the first week of February! Then it’s time for an updated take on the British pie that has a small but significant role in Love, Actually, actually: Next-Level Banoffee Pie from BBC Good Food magazine. New to pie? Ease into our month with this cookie-crumb crust topped with layers of roasted bananas, caramel and peanut-butter whipped cream. (Yes, please!) Then, the duo head back, waaaay back, to discuss the origins of pie, and the many twists and turns it’s taken on the road to the county fair.

11 Feb 2019Ep 111: Going Bananas for Banoffee Pie00:40:02

Lest you think the hosts always agree, can you guess who thinks "fruit pie is delicious" and who thinks "hot fruit is disgusting"? What about breakfast in bed ... is it a delightful treat on Valentine's Day, or just a way to wake up angry? Stefin and Andrea start the week with their hot takes on the baking wars. While there may be some slight disagreement between the hosts, one thing they can agree on is this week's delicious recipe, the Next Level Banoffee Pie from BBC Good Food. Fresh Pear Pie from The Spruce Eats is the next bake along in pie month so cast your apple allegiance aside and try this American heritage pie. Finally, Stefin and Andrea solve common pie predicaments and muse on the best tips for tasty, flaky pie crusts.

18 Feb 2019Ep 112: Pears, Pastry & Predicaments00:40:05

It's the third week of Pie Month ... and mystery abounds! First, the Proper Pie Puzzle. Have you ever wondered about the etiquette that should be followed when eating a slice of pie? (Neither have your hosts, clearly.) Next, the Key Lime Pie Conundrum. Of course this iconic dessert was created in the Florida Keys ... or was it? Drama! Intrigue! Chills and thrills! But it doesn't stop there! Because it's time for a review of the Fresh Pear Pie Stefin calls the best ever, and which Andrea wishes hadn't been stolen (call it the Mystery of the Missing Pie). Then, it's time for this week's bake along, a Black Bottom Oatmeal Pie from Four & Twenty Blackbirds that's a riff on a Preheated favorite: A desperation pie (this one pumped up with a layer of bittersweet chocolate). Finally, your intrepid sleuths ... er, hosts ... get down to the (flaky) bottom of your most pesky pastry predicaments, solving the many mysteries you may encounter on your road to perfect pies.

04 Mar 2019Ep 114: Crazy for Chocolate00:26:47

Inspired by Andrea's daughter who said "Mom, can't you just make something chocolate?" this month is going to be chock-full of chocolate delights. A Salted Chocolate Rye Cookie from Tartine Bakery has the hosts very excited about cooking with an alternative and new-to-them flour. Andrea reports on her Black Bottom Oatmeal Pie from the prior week, which resulted in the smoothest and easiest pie crust she's ever made, although the final pie wasn't enough of a "wow" to offset the amount of work it took.

11 Mar 2019Ep 115: Salted Chocolate Sophisticate00:30:32

Andrea’s cardamom obsession is fueled by a recent listener-suggested recipe for Banana Cardamom Update-Down Cake from King Arthur Flour, and Stefin’s got some desserts that appeared “Previously on Preheated” that would be perfect for St. Patrick’s Day. Then it’s on to a review of Tartine's Salted Chocolate Rye Cookies – were these a hit with the younger set, or an indulgence for adult tastebuds? Next the hosts introduce this week’s bake along: Milk Chocolate Pots with Citrus Shortbread from BBC Good Food, which may be the epitome of an Andrea dessert: just a few ingredients, four steps, shortbread, citrus, smaller batch … too bad about the dreaded jug! Finally, your hosts answer the call for Kitchen Safety 101 during a short segment designed to keep you safe and sane in your happy place. You can read the complete show notes here. They’ve also got wildly different reviews of last week’s Milk Chocolate Pots with Citrus Shortbread, and are looking forward to baking together for the first time since July when they tackle this week’s bake along: Chocolate and Salted Pistachio Babka Buns from The Boy Who Bakes. Finally, the duo take a deep dive into natural and alternative sweeteners. Stefin introduces the Preheated Book Club pick for April, Pacific Northwest chef Greg Atkinson’s memoir At the Kitchen Table. (Read along! They’ll discuss in Episode 121.) Need another foodie read this month? Andrea also recommends Ruth Reichl’s fictional debut, Delicious! Then it’s on to the first “bookish bake” – sausage rolls from Harry Potter and the Goblet of Fire, via the charming Little Library Café blog. Finally, your intrepid hosts slow down in the grocery aisles and discover all kinds of wild and wonderful new-to-them products and gadgets.

And who is still singing We Built This City? (Original or sausage roll version!) Listen as the hosts review this week's recipe, Nigel Slater's Seed Cake, and see if this humble dessert captured their hearts. Literary Bakes month continues as the hosts celebrate World Book Day on April 23rd, and listen to learn if Hot Cross Buns from midwestern recipe expert Meggan at Culinary Hill belong on your table Easter morning. 06 May 2019Ep 123: Made it Myself!00:29:11

May is Made it Myself (MIM) month! But before diving into homemade crackers, Pop Tarts, power bars and even Oreos, Andrea issues a cautionary tale about baking in a kitchen that’s not your own, and a hilarious (and delicious) recap of treats Preheated Listeners have taken through airport security. (Just how many travelers are taking fully decorated cakes -- or muffulettas -- through TSA these days?) Next, Stefin has a five-star review of Waitress the Musical — a show she’s recommending to all the bakers in her life. Then it’s on to the first “MIM” bake — Life Changing Crackers from My New Roots. Chock full of seeds, oats and, yes, plenty of fiber, will this savory treat live up to its name? Finally, if you’re planning a summer vacation (or your honeymoon or 40th birthday, like one of your hosts) you may want to check out one of the hundreds of foodie factory tours that are available worldwide. 13 May 2019Ep 124: Crackers of Consequence00:34:49

It’s the second week of Made it Myself Month and the dynamic duo are up with a review of the Life Changing Crackers … did they live up to their name? (Well, Stefin did learn a new vocabulary word, and Andrea may have developed synesthesia!) Then it’s on to a slightly less healthy, but perhaps no less crucially important homemade treat — Stefin’s 1980s PixiFood — PopTarts! Will they be better than the iconic original? Finally, whether you want to perfect your pie crust or start your sourdough, there's probably a baking class out there to help you do it -- and your hosts have a worldwide round up to inspire your holiday planning. 20 May 2019Ep 125: Posh PopTarts00:35:39

Three-day weekends and festive "Dads and Grads" celebrations are on the horizon and Andrea and Stefin want to know what you’re baking up for the start-of-summer gatherings. Take inspiration from the back catalog with the August 2017 "Potlucks & Picnics" month, then connect on the Preheated Baking Podcast Listeners group on Facebook to let us know what you're up to. This week the dynamic duo are reviewing Homemade PopTarts from The Pioneer Woman contributor Sommer Collier. Kellogg’s may not want to hear about these easy, pretty and tasty “jam pies." Next up during Made it Myself Month: Mango & Passion Fruit Energy Bars from Watirose Weekend contributor (and former Great British Bake Off contestant) Martha Collison. Will these add some passionfruit puree pep to your hosts’ step? (Just don’t ask Andrea to say that three times fast!) 03 Jun 2019Ep 127: Completely Corny00:26:57

It’s the first week of Completely Corny month, a theme suggested by Stefin’s husband, and heartily endorsed by Andrea’s (Happy Father’s Day, guys!). But first: your hosts debate the tantalizing idea of breakfast appetizers, and share baking inspiration from Listeners. Then it’s on to June's first “corny” bake — Berry Long Cake with Ginger Crumb from Julie Richardson’s Vintage Cakes cookbook. Grab your local berries, candied ginger and, of course, cornmeal, and bake along! And speaking of what’s in season, the hosts have a worldwide rundown of fresh produce in both the Northern and Southern Hemispheres, as well as ideas for how to make the most of it over the next few months.
