23 Jun 2023Shantiel Sisneros, NTM, on Mindset Coaching and Going to School at NTI | EP 6400:26:51

Shantiel is a Nutrition Therapist Master and a Mindset Coach. She graduated from NTI in October 2022 and graduated from the Quantum Coaching Academy in November 2022. Before school, she spent her whole adult years practicing as a Massage Therapist and Esthetician. Shantiel has always had the urge to help others, but, with her own health struggles, found the way to true health is about what you put into your body and mind every day. 

Shantiel has dealt with autoimmunity since 17 years old and, like many others, heard that it was all in her head, she was just depressed, and it is just because of her age. These answers were not good enough, so she started doing research on her own, started seeing a Functional Medicine Doctor, and then found her way to Nutrition Therapy Institute. Once she felt the relief that she had been longing for for years, she decided that she needed to learn how to share this knowledge with others. On the journey, she also quickly learned that it's not just what we feed ourselves but it's how we take care of ourselves and how we speak and think about ourselves. Therefore, she started school at Quantum Coaching Academy to learn more about how to connect with people on a deeper level. 

The focus of Shantiel’s nutrition business is around women's health and autoimmune conditions, and as we well know, autoimmune diseases can also be turned on by how much stress we expose ourselves to on a daily basis. Shantiel truly believes that those with autoimmune conditions not only need the tools to know how to eat properly, but also how to reset their mindset to achieve their goals. Without the healthy mindset piece, those with anxiety, depression, fatigue, and all the other things, can easily slide back into old habits and not make or even attempt the diet goals. She knows, she’s been there.

We have reached the fifth and final episode of our NANP Board Exam Series! Today we hear from Sheri Johanson as she shares her tips, tricks, and lessons learned from taking the Board exam. 

Sheri Johanson is a graduate of NTI’s Nutrition Therapist Master program, and a BCHN® candidate, having passed the NANP holistic nutrition board exam in May. Sheri currently practices as a holistic nutrition counselor, with a focus on empowering women of all ages to navigate health challenges such as hormonal imbalance, inflammation, sluggish metabolism, and weight gain. Building upon her own experience and health journey, Sheri also places a special emphasis on digestion and gut health. Today, Dianne interviews Chef Tracy Spalding, the Lead Chef Instructor for NTI’s Natural Food Chef Program. Chef Tracy has had a natural understanding and love for cooking since she was a teenager. Her culinary passion, in combination with extensive travels, exposed her to the world’s cuisines. As an adult, she tested recipes for a variety of cookbooks and she has studied with many culinary experts in Spain, Zanzibar, India, and Italy. She graduated from NTI’s Natural Food Chef program in 2014 and was quickly hired to lead cooking demonstrations, classes, and weekend workshops. Along with her role as NFC’s lead chef instructor, Tracy maintains a private business where she caters for groups, cooks for individual clients, and teaches menu planning and kitchen arrangements. She has had a longstanding commitment to cooking for those in need and is actively involved in a number of non-profit and community cooking organizations.

Today, Dianne interviews recent Natural Food Chef graduate, Mason Spendow, on his experience in the NFC program, what steps he took to relocate for the program, and what he is doing now that he is a Certified Natural Food Chef.

Mason is a 2021 graduate of NTI’s Natural Food Chef Program who focuses on retreat catering and private chef opportunities in Grand Rapids, Michigan. Mason feels food is much more than just something people consume when hungry. Food is the sacred fuel that people derive their life force from. Not only is it vitally important to maintain a nutrient-dense and bio-diverse diet, but it is equally as important to recognize and cherish the energy of the food you choose to fuel your body with. Food is a conduit for love and possesses the power to heal us in profound ways--Body, Mind, and Spirit. Mason’s life work is to be a steward of the power of food. To bring people together with food. Autumn Smith is the co-founder of Paleo Valley, Wild Pastures, and the Wild Pastures Burger Co. In this special episode of the NTI PodTalk, Dianne and Autumn talk about regenerative agriculture, grass fed beef, and the Wild Pastures Burger Company. 


Autumn Smith suffered from debilitating digestive issues and crippling anxiety for most of her life. Specialist after specialist told her nothing could be done, and she was ready to give up. But as one final attempt at a life free of health issues, Autumn decided to harness the power of whole foods. She cleaned up her diet and in just 30 days, her IBS was cured. Dr. Megan Hammel is a board-certified Naturopathic Doctor based in Denver, Colorado where she specializes in Pediatric Health and Family Medicine. Graduating with Honors from the National University of Natural Medicine in 2017, Dr. Hammel has dedicated years of study to pediatric care and chronic illness, Autism Spectrum Disorder, allergies, PANS/PANDAS, Down Syndrome, ADHD, and pediatric mental health. She is passionate about creating a meaningful relationship with her patients and community to meet the unique health needs of each family. Dr. Hammel has worked in healthcare for over 8 years in both research and clinical practice and is a board member of the Pediatric Association of Naturopathic Physicians. Dr. Becky Spacke has made it her mission to spread the word about holistic Alzheimer's prevention, and show everyone that there are things we can do everyday to support brain health. Listen in as she and Dianne discuss the factors that contribute to dementia risk, and all the holistic things that can be done to avoid it.

Dr. Becky is a retired functional medicine practitioner, who was in private practice for more than 20 years. She was also blessed to be a member of the NTI team for several years, in the role of curriculum creation and course instructor. She was a daughter to parents who both died of Alzheimer’s Disease. She is now an Alzheimer’s Prevention Advocate, because she firmly believes that an ounce of prevention is worth more than a pound of cure.

"Hi, I am Selina, founder of Ahara Kalpa- Holistic Wellness By Selina Rai LLC. I am a Nutrition Therapist Master, Natural Food Chef, Reiki Energy Healer, and Yoga and Mindfulness instructor, with an in-depth knowledge of the biology of yoga, meditation, and Ayurveda.

My journey with Holistic Nutrition Therapy started as a search for solutions to my hormonal imbalances, PCOS pain, monthly PMS pain, hyperthyroidism, cystic acne, low energy, and hair loss. I knew early on that prescribed medications for my conditions were making my symptoms even worse. Then I started searching for information about holistic options. I came across Nutrition Therapy. As I started eating more whole foods, organic and pasture-raised foods, I slowly started feeling changes in my health. So I decided to go full-on board and joined the Nutrition Therapy Institute as a student. As I proceeded with the classes I practiced and applied what I learned to myself and my family. Now I am in my best health ever.

In 2022, I earned my certification in holistic Nutrition Therapist Master (NTM), and Natural Food Chef (NFC) from the Nutrition Therapy Institute of Arvada, Colorado."

Tami Miller is the owner of Sage Nutrition Coaching, Inc. in Wheat Ridge, CO— @sagenutritioncoaching on Instagram. Her educational background is in Molecular Biology, Biochemistry, Mycology, and Nutrition. Tami did research at the University of Colorado Medical Center for over 20 years. While obtaining her degree and for several years afterward, she tutored students at the university in a variety of subjects and decided that teaching was something she wanted to do on a regular basis. Tami has been teaching with Kaplan since 1999 and draws her passion for teaching from the success of her students. She has taught for all standardized tests at Kaplan and has traveled to Qatar to teach at Cornell Weil Medical College and to Abu Dhabi, UAE to teach at Khalifa University. She has recorded podcasts for Biochemistry and videos for Organic Chemistry. Tami is currently a regular Instructor at Khalifa University in addition to her teaching duties at the Nutrition Therapy Institute and Kaplan.

Karen is the Director of the Nutrition Education Department at Natural Grocers. She has a background in holistic nutrition after attending the National Institute of Nutrition Education in 1998 and the Natural Food Chef Program at NTI. She started working with Natural Grocers in 2002 as a Nutrition Health Coach and was soon promoted to the NHC Coordinator position. As the company has grown, so has Karen’s position. In her current role, she works with a team of 10 people and other departments within the organization to support NHC positions as well as strategizing, planning, coordinating, and helping execute projects and initiatives. Additionally, Karen helps with recipe management for the company.

Caroline is the Director of Nutritional Health Coach Regional Managers. Caroline graduated with a Bachelor of Science in Nutrition and Dietetics from the University of Nebraska-Lincoln. She started with Natural grocers in 2012 as a Nutritional Health coach in Wichita, Kansas, and in 2015 was quickly promoted to her current position. She works with a team of 8 Nutritional Health Coach Regional Managers with territories across 161 stores and 20 different states. Her and her team are responsible for hiring and providing ongoing training and support for Nutritional Health Coaches and working with the Operations Team to assist at Natural Grocers locations. She also works with the Nutrition Education Department and other departments within the company to streamline communication, coordinate, and execute company initiatives.

Listen in while Dianne interviews Amber Williams, MNT. Amber is an NTI grad and also a former staff member! 

Amber Williams graduated from NTI in 2018. Since then, she has started her own virtual practice, AMB:ition Nutrition, and works as the Wellness Advocate at Just BE Kitchen, a 100% gluten, grain, dairy, refined sugar, corn, soy, legume, and peanut-free restaurant in Denver, CO. Her career at Just BE Kitchen has lead her to creating nutritional courses and special dietary menus for the company whose goal is to become a wellness company with food always at the core of what they do.

Amber's passion for holistic nutrition started after going through her own health journey with Hashimoto's Thyroiditis and Hypothyroidism. Amber was diagnosed at a very young age and suffered from debilitating symptoms for years, even with frequent doctor's visits and taking multiple medications. Because she was not seeing the results she desperately needed, she decided to consult with a chiropractor who specialized in endocrine disorders. Holistic nutrition changed Amber's life. By changing her diet, mindset, and lifestyle, symptoms went into remission, and she was even able to stop taking the medications she had been on for 12 years. 

Her own health journey is what pushed her to pursue an education in holistic nutrition. While going through the Nutrition Therapy Program at NTI, she was consistently amazed by the information she was learning and how powerful the human body is. 

Amber's hope is to help her clients get to a place where they are feeling good and truly thriving. Lives are meant to be LIVED, and Amber helps her clients get to that place in a sustainable way.

She graduated from NTI in 2008 as a Master Nutritionist and started Path to Wellness LLC at that time. She specializes in Diabetes, weight management, and bio-identical hormone replacement. She also works with a board-certified chiropractic neurologist treating dementia, Parkinson’s, ADD, and traumatic brain injuries. She lectures throughout the USA as part of the Episcopal Church CREDO health faculty. She lives on the Alabama Gulf Coast and enjoys canoeing, kayaking, and all water activities.

Laura Waldo has more than 20 years of experience in the Information Technology sector where she worked as a consultant with Government and Private Industry clients. She became passionate about nutrition when her toddler son became extremely ill and a diagnosis eluded the medical community. Laura began learning about the healing power of food, and with the urging of family, and friends in the Holistic Community, she returned to school, graduating from the Nutritional Therapy Association in 2013.

Laura opened her nutrition practice in Virginia but became frustrated hearing stories of practitioners who were unable to work due to restrictive laws in the States where they resided. In 2017 Laura began her journey of grassroots advocacy and policy change as the Deputy Director of the Council of Holistic Health Educators. Now at the NANP, Laura works diligently to promote the rights of our members to practice nutrition without legislative threats.

She maintains her private nutrition practice, home-schools her son, and is excited to work with the NANP, aiding practitioners and advocating policy change at the State level.

Janine L. Malcolm is a Doctor of Naturopathic Medicine and Licensed Acupuncturist. Listen in as she and Dianne discuss the mind-body connection, preventative medicine, chronic disease, and more!

Janine received her BA in Psychology with a pre-med focus from the University of California, Berkeley in 1995 where she played volleyball in the then Pac-10. She also studied sports medicine and was certified by the American College of Sports Medicine as a fitness and strength trainer in 1996. Dr. Malcolm then went on to study natural medicine at Bastyr University and graduated with her Doctor of Naturopathic Medicine and her Master of Science in Acupuncture in 2000. Dr. Malcolm completed her clinical studies in Seattle, WA and an overseas internship in Shanghai, China.

Dr. Malcolm moved to Boulder and started her medical practice in 2000. In 2015, she and her family relocated to the beautiful town of Niwot. She then moved her practice to Niwot in April 2018. Janine has been teaching at various schools, including Bastyr University, Naropa University in Boulder, the Northwest Institute of Medical Herbalism, and Professional Conferences for over 27 years. She has lectured on many subjects including anatomy and physiology, nutrition, Naturopathic and Chinese medicine, preventative medicine, yoga and exercise, mind/body consciousness and meditation, cancer, and chronic disease.

Janine has been practicing yoga and meditation for over 25 years. When she is not immersed in her family medical practice or teaching, she loves to spend time with her 2 amazing children. Introducing Greg Durocher. Greg is a new instructor at NTI, teaching the Business Readiness and Coaching Skills course. Greg brings his diverse background and expertise in entrepreneurship to the online classroom.

Greg is the co-founder and CEO at SafeRide4Kids.com, a successful e-commerce business. In 2014, Greg was looking for ways to expand Safe Ride 4 Kids and knew that he needed a formal business plan to present when seeking funding, whether that be a loan or investors. He founded the Small Business Development Center (SBDC) with its business-oriented class offerings and no-cost consulting services. He quickly enrolled in the Leading Edge Business Plan Writing curriculum, which was exactly what he needed. Greg and his business have received recognition and awards in the statewide business plan competition, the SBDC’s Trout Tank pitch event, Denver Public Library's annual report, and various other media spots. In 2015, Greg was invited to take over facilitating the SBDC’s Leading Edge class as well as be on the team of consultants serving the SBDC clients.

Before entering the world of entrepreneurs, Greg was a firefighter/paramedic for 15+ years. He has also been a student of human behavior and behavior change. His training includes Human Needs Psychology, Strategic Intervention, Neurostrategies, NLP, Hypnotherapy, and EmMatrix. Beth graduated from the Natural Food Chef program in 2018, and since has opened a thriving business in Monument, CO. Beth came to visit the NFC Fall 2021 cohort to talk about her experience and give words of wisdom to our soon to be Natural Food Chefs. She was a popular addition to the curriculum and had such wonderful information to share. Today, she talks more about her experiences and what made her choose NTI as her school for natural chef training.

Beth McCarthy is the owner of Joyful Wellness, a successful holistic health coaching company in Monument, Colorado. Dr. Sam Berne has been in private practice in New Mexico for over 25 years and where he works with patients to improve their vision and overall wellness through holistic methods. He holds a Bachelor of Science from Pennsylvania State University, Doctor of Optometry from Pennsylvania College and did his postdoctoral work at the Gesell Institute in collaboration with Yale University. Kestrel Burcham is the Policy Director for the Cornucopia Institute. The Cornucopia Institute acts as a watchdog for the organic industry and advocates for an organic label that can be trusted. In this fascinating conversation, Dianne and Kestrel talk about the benefits of organic agriculture, how the Cornucopia Institute advocates for the industry, how consumers can help shift conventional agriculture to organic, and more!

Kestrel lives in northwest Oregon, in the lush Willamette Valley. Kestrel has a background in Animal Science and English from the University of California, Davis. They have worked as an animal technician in both research and industry settings and have experience with different types of livestock. Organic and environmentally conscious food production is part of their background, having grown up on familial farms and assisted in all aspects of farm management. Their favorite part of living with the land has always been getting their hands dirty caring for and nurturing crops that would end up on the dinner table.

Kestrel Burcham holds a J.D. with a certificate in Environmental and Natural Resource Law from Lewis and Clark Law School. After completing law school and passing the Oregon Bar exam, they practiced in animal and agricultural law for a few years before joining Cornucopia as a policy analyst. Kestrel is particularly passionate about sustainable agricultural, environmental protection, and animal welfare.

As a policy director, Kestrel champions authentic organic agriculture in their research, writing, education, and direct advocacy.

Kestrel enjoys exploring the outdoors through hiking, photography, gardening, and horseback riding.

Today, Dianne interviews an NTI Natural Food Chef Graduate, Haley Peck. Haley is the owner and Head Chef of Nourish Natural Foods, LLC. Haley earned her undergraduate degree in Public Health from Syracuse University and went to earn a Masters in Nutrition and Integrative Health from Maryland University of Integrative Health. After discovering huge impacts of her diet on her own mental and physical health, she decided to improve her education in the kitchen and completed the Natural Food Chef program at NTI. This led her to embrace her passion for cooking wholesome and healing foods for her clients. She has been serving her clients providing delicious and nutritious meals for the past 4 years.

Haley has spent time experimenting and perfecting healthier versions of her favorite recipes using wholesome and clean ingredients. Whether it be a nourishing grain bowl, a healthier twist on your classic lasagna, or a veggie packed Asian fusion dish, she has found that there are endless ways to satisfy all cravings while maintaining a healthy lifestyle. Haley has helped several individuals and families get their healthy habits back on track by removing all of the stress from meal planning and prepping.

In this episode of the NTI PodTalk, Dianne talks to Karen Shrum, an NTI grad and certified Oncology Nutrition Consultant. 

Karen’s nutrition journey began early on. After obtaining her bachelor’s degree from Eastern Michigan University, she moved to Colorado and began taking nutrition classes. A dietician degree was put on hold while focusing on marriage and starting a family. As the youngest in a family of eight, Karen became a good observer and, after watching family members battle cancer, hypothyroidism, diabetes, and cardiovascular disease, she set out determined to find a better way. Following the loss of her mother and sister to cancer and through God’s guiding hand, she discovered the Nutrition Therapy Institute in Denver and there learned the science behind the healing power of food. Completing the school’s Nutrition Therapy Master Certification directed Karen into seeking out Remission Nutrition and the Oncology Nutrition Institute in order to help reduce the risk of cancer through the use of therapeutic nutrition.

In her spare time, Karen finds joy in being a wife and mother, camping, mountain biking, kayaking with whales and travel.

Well, don’t just take her word for it! In this special episode of the NTI PodTalk, Dianne talks to Chef James Barry, who is also an avid promoter of eating organ meats. He created Pluck, a product that helps people easily include organ meats in the diet without the ‘ick’ factor. Listen in as James and Dianne discuss Pluck, the inspiration behind it, and how organ meats are the most nutrient dense food.


James Barry’s 16 + years in the culinary field started as a private chef cooking for celebrities such as Tom Cruise, Mariska Hargitay, George Clooney, Gerard Butler, Sean “Puffy” Combs, Barbra Streisand, and John Cusack. Most recently, James launched his first functional food product, Pluck, an organ-based seasoning. It’s the first of its kind and an amazingly easy and delicious way for people to get organ meats into their diet. James is also a published cookbook author having co-authored the recipes in Margaret Floyd’s book Eat Naked and co-authored the follow-up cookbook The Naked Foods Cookbook. Today, we are flipping the script, and the NTI office staff is interviewing the School Owner and Director, Dianne Koehler. Dianne graduated from Nutrition Therapy Institute in 2007. Since graduating she has become a teacher and active community speaker. She has continued her education through additional training in holistic health, high-level wellness, herbal therapeutics, functional blood chemistry analysis, and functional endocrinology. She has been an instructor at NTI for more than 10 years and became Academic Dean in 2017.  As the Owner/Director of NTI, her passion for learning about and teaching nutrition informs her desire to make NTI the choice for nutrition education.  She is profoundly grateful to have the opportunity to share NTI’s vision with our current and future students – Choosing to Create Optimal Health Through Nutrition Education – it’s not just a tagline, it’s truly what NTI’s students do, and Dianne is proud to be at the helm, driving expectations and making changes in the field of nutrition education.

In today’s episode, Dianne interviews Dr. Tracy McCubbin of Radiance Functional Medicine in Denver, CO. Dr. Tracy employs 2 NTI graduates and 1 NTI student in her business and she talks more about what pushed her to employ nutrition therapists as part of her staff. We also talk more about her experience and background, along with advice she would give other doctors or professionals looking to hire nutrition therapists.

Dr. Tracy McCubbin is a physician with over 30 years of experience in the medical field. She started her career in Emergency Medicine in Denver, Colorado. After many years of 60-hour work weeks on a shift schedule, increasing responsibility in the hospital and conducting clinical research and publications, she started to experience many of the same issues as her female patients who were in their 40’s (GERD, IBS, stress, depression, infertility, asthma, insomnia, perimenopause, and weight gain).

She was curious about treatment options to help her patients and herself. She met renowned physician Andrew Weil, M.D., and began to explore the field of Complementary and Alternative Medicine (now called Integrative Medicine). Knowledge of this burgeoning field led her to found Kaiser’s Centers for Complementary Medicine (CCM) in 2003. They opened a pilot site in Aurora, CO two days a week, and eventually grew to five locations in the Denver metro area.

After completing a two-year Fellowship at the University of Arizona School of Medicine (the premier integrative healthcare training program), she officially transitioned from the emergency department after 19 years and moved her clinical practice to CCM. In 2019, she opened her private practice where she sees patients from all over the country for a variety of health concerns including hormone balancing, digestive disorders, fertility, autoimmune conditions and healthy aging. Dr. McCubbin is Board Certified in Emergency Medicine, Integrative Medicine and certified in Functional Medicine and uses a combination of her education and experience when treating patients.

Dr. Abby Bleistein is the founder and medical director of a multidisciplinary Obesity Medicine practice, Healthful Life MD, where she currently practices in Golden, Colorado. The multidisciplinary approach includes a certified nutritionist, a registered dietitian, a certified trainer, specialists in health psychology, sleep disorders, trauma, and eating disorders, and a chef specializing in culinary nutrition.  She supports patients with compassionate, comprehensive, and coordinated care as they work towards a healthier life-style. She is board certified in Internal Medicine and Pediatrics and is a Diplomat of the American Board of Obesity Medicine.  She is the current Colorado State Advocacy Representative for the Obesity Care Continuum for the Obesity Medicine Association and she is part of the working group developing the Colorado Obesity Society.  In 2016, Dr. Bleistein was recognized by the Obesity Medicine Association as Candidate of the Year. She has served on the Pediatric Committee, the Advocacy Committee. and as a member of the Speakers Bureau of the Obesity Medicine Association.

Starting ballet at age 8, she danced through college and then professionally. She then taught at Canyon Ranch Health and Wellness Resort as a fitness specialist teaching ballet, Pilates, weight training, and aerobics, eventually becoming Director of their healthy lifestyle program. Laurie has maintained a Health Coach/personal training business supporting women in their wellness journey for over 30 years. Now at 65, she is committed to helping women be proactive and take charge of their health as we age. Laurie enjoys long walks with her dog, local theater and performing, and the beautiful sunsets in Arizona. However, she is most proud of her son and his vision to make the world a better place.

Adrienne strives to be a driving force behind healthy, tasty meat shipped to families nationwide and to select restaurants in Colorado. She knows firsthand how important it is for people to trust where their food comes from and what it takes to raise healthy animals and manage the land. Corner Post Meats is meat for people who “give a damn”, and the place for those who have concerns about health, care about how the animals are raised, and that land is managed to make ecosystems healthy and vibrant places.

Adrienne grew up spending most of her time outdoors-camping or fixing fences on her grandparents' ranch. She grew up in Littleton, CO, but found that ranch work suited her. She has worked on ranches throughout the West, where she met her business partner, Dan, and cohort in all kinds of adventures. Adrienne and Dan worked together for several years before starting Corner Post Meats with a handful of critters in Wyoming. To better connect with their customers, they left the rural mountains and settled in the Black Forest on a ranch owned by the National Audubon Society.

Meet Laura Waldo who is a Legislative Affairs Specialist at NANP. Laura Waldo has more than 20 years of experience in the Information Technology sector where she worked as a consultant with Government and Private Industry clients. She became passionate about nutrition when her toddler son became extremely ill and a diagnosis eluded the medical community. Laura began learning about the healing power of food, and with the urging of family, and friends in the Holistic Community, she returned to school, graduating from the Nutritional Therapy Association in 2013.

Laura opened her nutrition practice in Virginia but became frustrated hearing stories of practitioners who were unable to work due to restrictive laws in the States where they resided. In 2017 Laura began her journey of grassroots advocacy and policy change as the Deputy Director of the Council of Holistic Health Educators. Now at the NANP, Laura works diligently to promote the rights of our members to practice nutrition without legislative threats.  She maintains her private nutrition practice, home-schools her son, and is excited to work with the NANP, aiding practitioners and advocating policy change at the State level.

“Prior to enrolling in chiropractic college, I worked in the geological exploration sector of the mining industry. This gave me the opportunity to work on projects in extremely remote locations around the world including the northern tip of Greenland, the Tian Shan mountain range in central Asia, and the Svalbard Islands in the Norwegian Sea.

My inspiration to pursue a career in chiropractic came from an injury that jeopardized both my ability to work in the mining sector and my long-term physical health. After pursuing many forms of treatment without experiencing any relief in my symptoms, my father suggested that I seek chiropractic care. In addition to traditional adjustments, the chiropractor provided me with conditioning, stretching, and nutritional guidance, and my pain began to subside. After experiencing the frustration associated with constantly feeling unwell and the relief I achieved after receiving comprehensive care, I decided to dedicate my life to helping others achieve similar results.

Throughout the course of my education, I gained an even greater appreciation for the potential health gains that functional medicine and proper nutrition can provide, especially for patients with impaired biochemistry. Their farms serve as a platform for education, health, food justice advocacy, ecological stewardship, community wealth building, vocational training, and neighborhood resiliency.

Stefan grew up in Lakewood and Arvada, Colorado and spent his childhood helping his mom and grandmother grow their own food and explore the wildlands of Colorado. While studying environmental communication and wildlife biology at Colorado State University, Stefan worked for a local garden center and landscape company where his love for horticulture exploded. Stefan realized that the most effective way to make change in the world is through connecting, supporting, and educating people. After college, Stefan worked for the Denver Museum of Nature & Science creating programs for their community of families, children, and teens. Since leaving the museum setting, he has been running the operations of the outdoor education and park ranger programs and overseeing the organic garden club at Red Rocks Community College. He also just became a Colorado Certified Gardener with CSU Extension!

"My name is Maddie LeBrun and I've had the pleasure of being a graduate of both NTI's MNT and NFC programs. My own personal health journey and journey to find NTI started when I was in college. Always having been interested in medicine and the human body, I was a young nursing student with a busy schedule. As my health started declining and I started becoming sensitive and allergic to dozens of foods, I knew I had to find a solution. Being familiar with pathophysiology, research and how the human body works, I started reading anything I could get my hands about holistic health and eventually found a provider who filled in the missing details about the origin of my health struggles. I knew I wanted to learn everything I could about holistic health, but needed the science and the research to back up the claims I was learning about. This led me to NTI and eventually NFC. 

Having worked in hospitals for 7 years in a variety of settings, I have seen the impact of chronic disease on my patients. I've been determined to try and make an impact on my patients lives in small ways, whether it was discussing nutrition or lifestyle changes outside of the hospital, but the truth is I have seen our hospital systems from the inside out and know there is so much room to grow. 

As I navigate the next steps in my career away from the nursing bedside, I hope to use my background, experience and passion to blend the two worlds of conventional and holistic medicine to positively impact future patients or clients!"

Kelly Miller is a Certified Nutrition Therapist Master and Recovery Coach who specializes in nutrition for addiction recovery. She founded the Addiction Nutritionist in 2017, a virtual coaching and consulting practice, after years of struggling with an unhealthy relationship to food and other substances. Her program helps uncover the biochemical root causes of addiction and cravings. She created the PAWS Protocol, a nutritional intervention designed to alleviate the symptoms of Post Acute Withdrawal and address the unique needs of individuals in recovery.  Her clients typically experience improved mood, a reduction in cravings and relapse, and overall better quality of life. Welcome to Part 4 of our NTI PodTalk Board Exam Series! Today we hear from Aimee Smith, an NTI grad who took the exam in 2022. Aimee shares her board exam story and how she went from stress to success! 

Aimee Smith is a 2022 graduate of NTI's Nutrition Therapist Master program and Board Certified in Holistic Nutrition®.  She has also completed Level-1 certification in GI Functional Nutrition through Restorative Wellness Solutions. Before NTI, she spent her 28-year career as an RN in the hospital setting watching people get sicker and dealing with her own health issues. Aimee wanted to help have a more positive impact on health.  She now combines her nursing knowledge with nutrition and lifestyle changes to help people live their best lives.  She believes the best way to true, vibrant health is what we put in our bodies, removing barriers to healing, and giving the body what it needs to ultimately heal.

Driven by strong will and grit, Julie Ebert manages Ebert Family Farms with her husband Kres.  Julie grew up working with her family on a 5000-acre beef and buffalo ranch in Nebraska.  She went on to get a degree in Business and worked in retail and fulfillment management after college.  However, her passion for working outdoors, and her curiosity about health and nutrition led to starting a raw dairy.   

The dairy has been operated for 16 years and is run by Julie and her husband Kres, who is a 4th generation farmer. The GrowHaus is a business located in the heart of Denver. Their mission is to cultivate community-driven food justice through education and food access. They offer food distribution programming and educational opportunities related to growing and cooking food, as well as overall wellness. They strive to be a community-driven organization, meaning their goal is to have all programs led and implemented by members of their community. They are successful when youth, families, and communities are empowered to feed, nourish, and strengthen themselves and others.

Ciara, a volunteer for GrowHaus, grew up on a small family farm in Royalton, MN, and she is excited to be connected back to her roots working with plants and agriculture again at The GrowHaus! She went to school for Elementary Education and Spanish and taught Kindergarten for two years in San Pedro Sula, Honduras at an international school.

Food justice is a new concept to Ciara, and she is excited to continue the life-long learning process to explore food systems, and how they co-exist in specific communities, and how she can learn from this information and share it with others.

For young athletes, proper nutrition can make a huge difference in getting them that extra edge. Enter Katie Hardie, owner of Hardie Peak Performance. Katie specializes in nutrition for sports and athletics, with a particular focus on children and adolescents. In this episode of the NTI PodTalk, Katie shares insights into the critical role of nutrition education and practical cooking skills in promoting long-term health and athletic success for young individuals. Charis came to NTI as a registered nurse. Fed up with the conventional medical system, she decided to pursue an education in holistic nutrition. Listen in is as she and Dianne chat about conventional vs holistic health care, and Charis’s nutrition therapy practice, Prime To Nourish. 

Charis Sederberg has been a registered nurse for almost 20 years. She spent her nursing career taking care of patients with cancer.    About 10 years ago, her own health was suffering and she couldn't get any answers or support from the traditional medical model.  After being told "there is nothing wrong with you" a number of times, she decided to take her health into her own hands.  She enrolled in the Nutrition Therapy Institute for the education and quickly realized that she had to help others as she was able to help herself and her family.   

Prime to Nourish is built on three foundations for optimal healing;  digestion, nutrition, and nervous system regulation, or stress management.  Charis helps her clients develop strategies to support these foundations for their personal situation so they can start their health transformation.    When clients need more, Charis also designs personalized protocols based on functional testing to support her clients on their health journey.

Lauren has been practicing nutrition, coaching one-on-one, and educating others for nearly two decades. She has undergraduate degrees in both Psychology and Sociology, a graduate degree in Criminology, and numerous nationally recognized fitness certifications. She is the author of “Why Can’t is a Four-Letter Word” and “Get Off the Curb: From Flight or Fight to Activated Achiever.” She is a top motivational speaker, industry influencer, and leader in both health and wellness and personal development. Lauren has used her training and experience working with a variety of people to help change lives through the power of knowledge and inspiration. In her free time, you will find Lauren working out on her Peloton bike or tread, hiking with her friends, golfing, traveling, or even the occasional food and wine tasting. Jacqui is a graduate of both of NTI’s programs and is one of our chef instructors for the Natural Food Chef Program. Today, Dianne interviews her about her experience in our programs, how she is using her certifications, and what her favorite parts are about teaching aspiring Natural Food Chefs.

Jacqui’s enthusiasm for travel, wellbeing and human connection has led her to kitchens throughout the U.S., South America, and Asia. She’s gathered experiences and knowledge by spending time with home cooks, farmers, and professional chefs in these places. In 2016, she graduated from NTI’s Natural Food Chef program and continued to study nutrition science, obtaining her NTMC in the summer of 2020. She believes that cooking is one of the most empowering skills we can all gain: she teaches culinary lessons to people looking to support their health and cooks for families throughout Denver and Boulder. Exposing children to whole foods at an early age is one of her greatest passions. Meghan McGee’s interest in cooking for wellness was sparked by her desire to create inclusive and nourishing meals for community gatherings. This led her to the Nutrition Therapy Institute and the Natural Food Chef program. Listen in as Meghan talks about the inspiring path that led her to cooking for wellness, the transformative experience of the Natural Food Chef program, and her virtual cooking classes! About Meghan: I was blessed to have found a passion for health at an early age. I studied Health and Wellness Promotion and Nutrition in college and graduated with a Bachelor of Science. After graduating, I was unsure how I was going to use my degree and I loved all the knowledge I could get, so I enrolled at the Institute for Integrative Nutrition and got a health coach certification a year later. I dabbled in health coaching and other wellness jobs, but nothing really filled my cup. In my early 20's I was diagnosed with Lyme disease after many years of searching for answers. During that time, I dove into all the holistic health and nutrition information I could find and built a foundation for myself. Looking back, I am grateful for those experiences because they really fueled my journey to NTI. I graduated from the NFC program in the spring of 2021 and I now teach cooking classes at the University of Colorado Colorado Springs, and I offer private cooking classes in my clients' homes. The Farm To Consumer Legal Defense Fund is protecting, defending, and broadening the rights and viability of independent farmers, artisanal food producers, and their consumers. In this episode of the NTI PodTalk, Dianne chats with Executive Director, Alexia Kulwiec, about what the organization does and how they protect farmers. 

Alexia Kulwiec is Executive Director of Farm-to-Consumer Legal Defense Fund. She resides in Madison, Wis. and is a licensed attorney in both Illinois and Wisconsin. Alexia has practiced law for over 20 years, and has extensive litigation experience and experience in leading and managing attorneys. She holds an advanced law degree in Food and Agricultural Law, a J.D. from the Chicago-Kent College of Law, and a B.A. in Economics from the University of Notre Dame.

Alexia also has an appointment at the University of Wisconsin-Madison, where she has studied domestic fair trade on mid-sized farms, published and presented on farm labor issues, and teaches in the area of labor and employment law. This experience has inspired her interest in agriculture and the U.S. food system, triggering an interest in promoting smaller scale and sustainable farming. Alexia is published in several legal journals including an analysis of Poultry Growers as Employees in the Labor Law Journal. She has served on the Madison food policy council, and been active with other food and agriculture related organizations.
