Looking for how to start a new healthier lifestyle? Interested in moving away from the Standard American Diet? Are you feeling tired of being tired and just want to get your health and vitality back? Well, that is exactly what we hope to help you achieve on this brand new podcast! While we will focus primarliy on the Ketogenic lifestyle and way of eating, I also plan to give you lots of info on just eating real whole foods and how Paleo is also a really great way for many to get their life and health back. In this very first episode you will get a quick introduction to me, Jessica Tye, and my husband, Derek, who is cohosting with me on this episode and probably a few more in the future. We touch on describing the Paleo diet, eating "real food" and Ketogenic diet. Are there things you want to hear about in the future? Certain guests you would like us to have on? I have been vegan, vegetarian, paleo, low carb/low fat....Ive done about every cleanse you can imagine and royally messed up myself along the way. What started me on the right path? In my 30's I was sitting in front of my OB/GYN doctor complaining about how tired I was and how I just seemd to have this stubborn 15lbs I couldn't shed since giving birth to my youngest son nearly 10 years earlier. I always felt bloated and my periods were just getting worse every year. When we got the results back from my blood work she sat me down and told me that I was on my way to type 2 diabetes, had high cholestorol, was anemic and was very very low in vitamin D. How was this possible? Okay, I knew I had a sweet tooth, but I hadn't been drinking soda regularly in years. Ate occasional treats at parties, special events and holidays and liked a bit of ice cream a few times a week, but I wasn't the candy bar eating, soda sucking, Twinkie loving person I thought you had to be to be running headlong into Type 2 Diabetes.....boy did I so misunderstand how the body worked. And for the record, so did my doctor at least when it came to nutrition. She also suggested that I cut out red meat since my cholestorol was high. I was a VEGAN at this time and had been for nearly 2 years! She put me on a very high dose of Vitamin D and an iron supplement (wasn't red meat supposed to supply me with that?). I knew that day I had to make some changes. Even though I didn't know much about health and nutrition (even though I thought I did at the time) I knew enough that this didn't make any sense based on what I knew I was eating and NOT eating. I had seen my dad recently be diagnosed with Type 2 Diabetes, I had watched my mother in law lose 2 husbands to ill health at an early age and like most of you I knew lots more people (seemingly younger and younger all the time) that were sick and dealing with chronic issues and diseases. My oldest son was also dealing with lots of health issues and had been since birth so I just launched myself into researching nutrition and health. I began learning about the then fairly new way of eating called "Paleo" and the whole "real food" movement. I began working with a Functional Medicine Practioner shortly there after and began turning around my health. My husband jumped on board and we were off to changing our family! In the process we found out that my oldest son high a gluten sensitivity and was suffering greatly from that. My youngest daughter also is gluten sensitive and can't have dairy. Watching our children begin to thrive was amazing and gave me the steam to keep learning. Early in 2017 I took the "leap" into the Ketogenic way of eating. All of the things that had been continuing to plague me even with all the positive nutrition changes I had made started to clear up once I sent Keto. My adult acne cleared up - I had struggled years with really bad cystic type acne. My intestinal issues and distress went away. Brain fog is all but gone (remember I have 5 kiddos so that's a miracle in itsself ;)! My energy has shot through the roof. I sleep way better than I ever have before and I have lost several dress sizes. Long gone are the heavy and hard periods and the bloat! I am super passionate about helping others to make changes in their lives and the lives of their families and am super excited to share things I learn on this podcast. **In this episode I talk about "Oil Pulling" near the end of the podcast (around the 18:00 minute mark) and I completely forgot to finish up by telling you how to end the Oil pulling session. Im sorry! So here you go: After swishing it around 20 minutes or so (start with 5-10 minutes if you need to and work up to 20 minutes) you can spit it into the trash can (don't spit it down the sink. The oil can gunk up your pipes). Then rinse your mouth with warm water and spit that out. You can brush as normal if you want. I typically just put water on my tooth brush and brush like that for a minute. If you try this out and notice great results I would love to hear about them. Why does low fat and low carb not work. Why are all carbohydrates treated the same by your body? What happens when we listen to bad advice to eat too much protien. What...no "heart healthy whole grains" needed? That's right! Your body will literally make all the carbs that we need if we don't take enough in and we certainly do not need to ever eat carbs in the form of grains and sugar. Today's episode is based on a Listener email. Sonia wrote: "Hi Jessica! I’ve been following you for a while, and i’ve basically listened to every single one of your podcasts and I absolutely love everything that you are sharing. I currently find myself in a confused and upsetting situation. I’ve been eating organic my entire life in Romania and UK, but with no discipline whatsoever, i’d eat cake with a salad and i thought i was doing fine just cause it was all organic and homemade. I did this until i was 17, which is when i took a blood test and saw that my total cholesterol was 240; this is when I decided I need to take better care of my diet. My cholesterol did not drop ever since, but this is probably because all my family has high cholesterol and also because I’m generally a stressed person. I tried all sorts of diets until last year when i became keto. I’ve been keto ever since, with some casual carb cycling. I even introduced meat into my diet because I really wanted to see the best results possible, and I’ve basically been a pescatarian my entire life since I always hated the taste of meat (not anymore, I found some that I like now). I also started drinking bone broth after I listened to one of your podcasts. I used to do intermittent fasting for like 24 hrs daily (sometimes even longer); but I stopped for 2 months now since I read that it can really mess with female hormones and even digestion, so I got scared. I work out daily, I’ve been doing this since I was 12. In terms of supplements, I used to take probiotics (>20 billion cultures) and digestive enzymes everyday for the past 2 years, but my doctor said that is way too much and I should stop, which i did about 2 months ago. I felt great when I started this lifestyle, but after a while my digestion system started feeling worse and worse. I now get bloating and gas all the time and have unbearable abdominal pain, so I was basically diagnosed with IBS and the doctors put me on a low fodmap diet, (I still eat fats and most of the things I used to eat on keto, I just avoid some veggies and fruits now more than I did before so this step was no biggie for me). My total cholesterol is now 300; out of which the LDL is 200 and HDL 100. My VLDL is 9 mg/dl, triglycerides are 47 mg/dl with T3 0.67 and T4 7.19. My GH was rather low but i’m not sure if they did the tests correctly 1.48 ng/ml. All markers (I tested way more things from my blood) seem in place (according to the hospital’s guidelines) apart from cholesterol and my digestion which is getting under control with fodmap diet, as in it’s not getting worse, but i still don’t feel like my digestion is normal. My digestion is really slow - i went to do an abdominal ultrasound and what i saw was that even though i stopped eating 6 hours before the ultrasound my food did not even pass through my stomach during this time. I’ve also gained 10 pounds in the last year, which I cannot seem to get rid off. No matter if I do caloric deficit (I usually eat 2000 kcal, so I would go for 1600 kcal), fast for days, drink plenty of water or no water at all, before or after sauna, I even did a series of hyrdocolon therapy for cleansing and still nothing seems to move the scale AT ALL. So frustrating. I observed that if i stop eating salt I’m not as puffy, but still no change on the scale. Other symptoms i’ve had to deal with include major hair loss and thinning, generally high blood pressure (many times i measure sitting down and i’m at 90-100 beats per minute when i stressed about sth and i can easily pass 200 when running). I’ve been battling depression in summer, but i feel better now. I’ve been doing nothing this whole year apart from sitting at home and reading about this and watching videos and podcasts and gathering information from as many books and sources as i can just to try to fix myself, but I seem to get nowhere and I don’t know what to do anymore. I went from eating every meal at restaurants, to cooking everything at home for almost every meal. I virtually spend all my money on doctors appointments and blood tests and supplements and organic grass fed not farmed food, and all I wish for is to get well (thing which I would have never ever thought I would end up wishing at only 23 yrs old). I know you always talk about digestion being the key starter point, and I feel like throughout my journey I’ve somehow ruined/unbalanced it, and I was wondering if you have any advice for me. About Jessica Stern-Enzi: I have loved being in the kitchen for as long as I can remember. I come from a family of cooks and bakers and as an adult, I’d spend hours thinking of recipes I wanted to try or create, perusing cookbooks like they were novels and creating menus for friends and family. I have also been a follower of a whole foods, low sugar, mostly plant based, organic diet for most of my adult life. I was the one always nagging my family to watch their sugar intake and eat healthy, real foods. That’s what made it so ironic to find out (completely unexpectedly) that I had type 1.5 diabetes, otherwise known as LADA, at the age of 43. I take care of myself better than most people I know and diabetes was the last thing on my radar. I now joke with my husband and say that a higher power must have grown sick of me worrying about what I ate so they made it simple and took away sugar and carbs. How in the world would I ever eat and bake dessert again? This was one of the first thoughts I had. I played around with alternate flours before, never all that successfully, but now it was a necessity. So I dove head first into the kitchen and into low carb, no sugar baking and quickly discovered that I could still get my fix, I just had to learn how ingredients work and adapt! I learned about the ketogenic diet and how dessert could still be a part of it. I was aware of gluten free and vegan bakeries in Cincinnati, but none that specialize in low carb. I knew there was a hole that I needed to fill. So, Beyond Grain Bakery was born. 7 KEYS TO OPTIMIZING YOUR KETO LIFESTYLE with Jessica Tye, NTP 1. Digestion is the FOUNDATION of health. If digestion is off you will not be able to heal, lose weight, balance hormones, sleep well, manage stress, etc. If the Nutri-Q tells you that you have digestion needs we have to start there first. 2. Drink HALF your body weight in water every single day – just water – you may add a squeeze of lemon or lime if you would like. If you drink diuretics like tea or coffee then you need to add that amount to your total water intake to make up for the diuretic effects. When you begin drinking the right amount of water for your body so many things can begin to resolve related to your health and weight. 3. Cut out ALL processed foods (snacks, pastas, breads, cereals, etc.) and sugars (agave, table sugar, coconut sugar, etc). 4. Be careful of including the following in your diet on any type of regular basis (I think all of these should be avoided completely by most everyone as they are the most reactive foods that I see across the board clinically): Soy, Corn, Sugar, Wheat (gluten) and Dairy (mostly in the form of milk – hard cheeses, butter, ghee and sometimes heavy cream can be okay for some people). 5. Eat 1-3 meals per day and do NOT snack. Snacking between meals keep your blood glucose high which will keep insulin elevated. Insulin is the “fat storage” hormone. It turns unused/unneeded ener- gy from food we are eating into fat and stores in on our bodies. To avoid this eat only when you are hungry and make that a MEAL. 6. Your meals should be nutrient dense whole foods containing higher healthy fats, moderate protein and low carbohydrates. Generally keeping your ratios to about 70-80% fat, 20-30% protein and 5-10% (or less) carbohydrates is what I recommend. Your carbs should come mostly in the form of green or cruciferous veggies and occasional fruit or root veggies. Track what you are eating on an app like My Fitness Pal or Carb Manager for a while to get an idea of how many of each macro you are eating. By knowing what the ratios are you can play with them a bit based on how you are feeling and how your body is reacting. This will also help give me an idea of how to help you if you are able to share with me exactly what you are eating each day. DO NOT pay attention to the amount of calories these apps tell you to eat – they are always WAY low! 7. Know you BMR! This is the amount of calories that your body needs every day just to do your daily tasks and function your organs. If you eat less than what your body needs everyday you will lower your metabolic rate and your body will not only store body fat, but it will not let go of what you have regardless of how little you eat. Repeat after me; “Eating less will NOT help me weigh less. Eating nutrient dense food until I am satiated will give my body the signal that I have plenty and we do not need to hold onto extra stores of energy (body fat). I will NOT restrict calories and instead will work hard to give my body what it needs every day so that I can feel and look my best!” To learn your BMR follow these instructions: BMR/RMR – energy required to maintain body systems and control body temperature at rest (Harris-Benedict Equation) Males: BMR = 66.5 + (13.75 x weight/kg) + (5.0 x height/cm) – (6.76 x age/years) Females: BMR = 655.1 + (9.56 x weight/kg) + (1.85 x height/cm) – (4.68 x age/years) Ex: 18 year old female weighs 55kg and is 175 cm tall 655.1+(525.8)+(323.75)-(84.24)=1420.41 (1420 calories) Or follow the link below to: http://www.bmi-calculator.net/bmr-calculator/ But THEN you need to figure out your TER based on PALS... This is the time of year we are all trying to stay well and not fall victim to whatever virus is being passed around. My Bone Broth Recipe: In a slow cooker 24-48hrs on low In Instant Pot 5-7hrs 1-2 free range/organic chicken carcasses with meat removed (we usually use the meat for a dinner and then throw the bones into a freezer bag for storage until we are ready to make the bone broth) 2-3 organic carrots roughly cut 2-3 celery stalks roughly cut 1 medium onion cut into quarters water to cover chicken bones garlic, salt, pepper splash of apple cider vinegar When it has cooked desired time, pour through a strainer and into a large bowl. From the bowl I strain through a metal strainer into Ball/Mason jars. Once cooled down a bit I seal top on and store in fridge for 5-7 days. If I need longer storage they go into the freezer. Oh, hello! It’s nice to meet you. I’m Erica. I am a wife, a mother to 3 busy boys, and I love to cook. In January 2018 I entered a weight loss challenge. I didn’t have much to lose, really, but was excited for the challenge. I knew that there was room for improvement in my weight and overall health. After doing my research, I just had to try Keto! Instantly I started feeling better. I no longer feel bloated, my complexion is clear, my energy level is up, I sleep better at night, my joint pain nearly gone, and I dropped a total of 20 lbs- that’s double my goal! I am feeling great and am so happy that I started this journey. As I mentioned above, I love to cook. I especially love to bake! Past diets have not only left me feeling deprived of food, but have left me feeling deprived of my favorite hobby too. During this Keto journey, it has been important for me to have diet appropriate treats on hand (this girl needs her sweets!). My love of food has driven me to create recipes that have satisfied my sweet tooth while keeping me on track with my diet plan. I never expected Keto to become a lifestyle for me. But, with the right support, knowledge, and food, it is exactly where I want to be. I truly hope that our business can make your journey a little brighter too! I am really excited to share our low carb, absolutely delicious goodies with you! Meet Jenni: Oh, hello! My name is Jenni, I am excited to tell you about my Keto journey. The first time I talked to Erica about Keto I was a week into a weight loss challenge that had weekly weigh ins. I remember telling Erica that I wasn’t really sure about Keto because of all the fat. She just shrugged her shoulders and confidently said “I really think it is a good thing”. A week later I had spent between 1-2 hours each day at the gym. I weighed in at the exact same weight. As hard as I try, I always failed to watch what I was eating. I sure love my sugar, and I always had an excuse of why it was okay to eat it. The following week I started eating a high fat, low carb diet not fully ready to commit. I lost 6.5 pounds that first week and I was hooked. The energy I had was off the charts and I immediately felt the difference in my body not feeling bloated. As I educated myself on macros and what my body needed, Keto was definitely the answer. I have lost a total of 35 pounds since January 1, 2018. My body fat percentage has gone from 35% to 20% and still dropping. I still have some work to do, and am going to see where Keto can take me long term. Being a mom with 3 active kids between the ages of 8-12, Keto has fit right into my life. My husband prefers to eat gluten free and my kids are coming around to trying new things. These baked goodies have really helped the transition. Jessica addresses this email that came in from a listener: "Dear Jessica, Good morning. I am sitting here in my living room this morning crying in my coffee. I feel like I am out of control with my diet. I have been low carb for 3.5 years and lost 63 pounds (I started at 216.) I have since gained about 8 pounds and I can’t get it off. I am 46 years old and I am majorly stressing over my food choices. Confession... I have had at least one bad meal a week since thanksgiving. I know that’s what my problem is but I can’t get it under control. I do great during the week and fail on the weekends. I try to IF but I literally get sick a lot of times if I try to stretch to 16 hours. When I do good, I have bacon and eggs for breakfast, no snacks and lunch is usually a pc of chicken or a ground beef patty with added butter and a veggie. Dinner is usually a salad with spring mix, a little tomato, Parmesan, roasted pecans, 1 tablespoon of olive oil and two tablespoons of marzetti all natural ranch dressing. I am done for the day after dinner. What can I do to get back on and stay in track? This a lifestyle not a fad diet. I can’t afford to hire a private coach so I am at this alone. I don’t know of any low carb doctors or dieticians in my area so I have no one to turn to. I don’t do social media so that knocks out any help there. I am scared to trust just anyone. 7 Days to beginning your new keto lifestyle – Just add one change a day and have a whole week of new lifestyle changes in places at the end of the week and you are ready to dive into your new Keto lifestyle!
Day 1: Take Measurements and “Before” pics! This may not be something you want to do, but this can be so super helpful in the beginning of a health or weight loss journey. Whether you are looking to “get healthier”, lose weight or gain muscle, measuring your progress is super helpful. Don’t rely on the scale whose numbers can be super deceiving as it can’t tell you when you have lost fat, but gained muscle (muscle weighs more) so you can be disappointed in a number that ultimately means nothing. Measure your bust/chest, waist, hips and take pictures. Weigh yourself if you must, but do not judge your new lifestyle by that number.
Day 2: Start a Journal! Journal every night or every morning, but just make sure you’re journaling. This is a great place to keep your measurements, write down how you feel each day, keep track of what you are grateful for (so you can focus on that when things get tough because it always does when you are trying to make big changes!), write down what you ate and how it seemed to be affecting you, etc.
Day 3: No more sweets! Cut out all sugars, artificial or natural sweeteners, cookies, candies, sugar sweetened drinks, fruit juices, all fruits, alcohol including wine, gums and mints. Getting these out of your life will help you be successful in your new lifestyle. I often advise clients that they can add some of these back in moderation, but when starting Keto and helping your body become adapted it is best to quit them all cold turkey!
Day 4: Drink more H2O! Ideally you will drink ½ your body weight in ounces daily (if you weight 150lbs drink 75 ounces daily). However, do not exceed 128oz per day. If you drink coffee or tea then you will need to drink 1.5x that amount of ounces in addition to your normal daily ounces count. Often our cravings and “hunger” is simply caused due to thirst. Make sure to head that off by drinking at least the amount you need every day. And if a craving does hit that is a good time to drink some water. Having a hard time remembering when to drink? Place a color hair band or rubber band (loose fitting of course!) on your wrist for every 8oz glass that you need to consume every day. Remove a band when you have consumed that glass. When you get to the end of the day your wrist should be bare – if it isn’t then you know you need to drink up!
Day 5: Get good Sleep! This is a super important step that is so often overlooked. Did you know that if you are overly tired you will have a very hard time making the right dietary choices? It is a fact that when we are sleep deprived our brains will tell us to get quick fuel in the form of glucose and that is exactly what you are trying NOT to do. Sleep deprivation can also cause us to have naturally elevated levels of glucose which will cause elevated insulin production and ultimately lead to reduced levels of ketones. Try going to bed around the same time every night and getting up around the same time every morning (within and hour). This will help to set your circadian rhythm and will begin to make it easier for you to fall asleep and to wake in the morning.
Day 6: Start tracking your macros! The general guidelines to get you into ketosis effectively is 70/25/5 – that’s 70% fat, 25% protein and 5% carbs. Keep in mind that this is not exactly the same for everyone, but it is a good place to start so at least you have a starting place. To track you want to download an app that will calculate your macros based on what you type in as your meals. I like “Carb Manager”, but there are many. Download a couple and decide what you like best. The idea is to make sure you accurately track everything you eat into the program so you can see where you need to tweak your intake to achieve the “right” numbers. Keep in mind that without my “Day 7” tip you will have no way to know if what you are tracking is working to get you into and keep you in ketosis!
Day 7: Test your ketone levels! How can you know that you are in ketosis unless you test? You can’t! This is where many people mess up. They think they are doing everything “right”. They have read that you eat a certain ratio of macros, that you eat a certain amount of fats and that you do intermittent fasting and so as long as you do those things according to what you read on the internet, then you MUST be in ketosis, but that is just Flat. Out. Wrong. What worked or is working for all those people telling you how to do it on the internet may or may not work for you. And this is not telling you to use the urine strips to test – don’t! I am not going to get into all the reasons they don’t work especially long term, but just know that they don’t. I prefer blood testing over anything. There are different devices on the market that work like a glucometer (many function to measure glucose, as well, using a different strip) and any of them is fine. Just find one, learn how to use it and start testing. What numbers are you looking for? Really anything above .5mml means you are producing ketones. Striving to get closer to 1.0-2.0mml may be better, but I know some individuals that never get above 1.0mml lose weight, have health issue resolve and feel great so just find what works for you. Once you know what “being in ketosis” feels like and you have confirmed it with the meter then I would just test every now and then to make sure what you are doing is still working. Our bodies are constantly changing and we will need to change up what we are doing from time to time to optimize our results. Part One of my interview with Maura and Danny Vega! Danny Vega: I grew up in Miami, Florida and I have always been interested in nutrition and fitness. Ever since I was a young kid, I wanted to be a “strong man”. In high school, I was the starting runningback for my football team, and led the county in rushing yards. I then went on to receive my bachelor’s degree from Columbia University in 2004, where I was a member of the football team and a three-time Dean’s List recipient. After college, I pursued my Master’s of Science in Human Performance from the University of Florida, where I worked with the national championship men’s basketball team, along with women’s basketball, tennis, and golf programs. I then went on to become the Strength & Conditioning coordinator for VCU basketball, helping the Rams win the 2007 conference championship and making it to the second round of the NCAA tournament. I have been out of collegiate Strength & Conditioning for almost a decade, but I have continued to compete in sports such as crossfit, powerlifting, half marathons, and now rowing. In June of 2016 I discovered the ketogenic lifestyle and I never looked back. I found so many benefits within a week of switching, that I knew this would be my new way of life. Inflammation and injuries from years of playing on turf and beating myself up with heavy lifting were gone. I regained control over my hunger and found a mental clarity and increase in productivity that I had never experienced before. In August of 2017, after over a year of dipping their toes in the water, our two boys joined us. Desmond, our eldest, felt an immediate increase in energy and improvement in his allergies and asthma. Dean, our youngest, has had astounding improvements in his eczema and mood. Our children are immune to cravings. It has been an amazing thing to see. We thought our kids were “picky” just like most kids supposedly are; keto changed their taste buds and now they crave real, nourishing food like the recipes you will find on this PDF. Maura Vega: I’m Maura Vega, or as many of you know me, Fat Fueled Mom. I grew up in Miami, Florida, and was a dancer for most of my life until I graduated high school. I was classically trained in ballet, jazz, and contemporary. I competed throughout high school winning multiple team and individual awards. I found my love for fitness once I graduated high school and started college. Unfortunately for me (a curvy latin girl), the body type that was in style back then was tall and thin. Being a dancer, there was always focus around the way I looked and I always longed to have that tall and thin figure. I’ve been dieting since high school and it has been quite the battle over the years. Eating disorders and body dysmorphia have plagued me for as long as I can remember. I’ve experimented with vegetarian, paleo, and IIFYM. It wasn’t until I found the ketogenic lifestyle that I was finally able to heal my body and repair my metabolism, as well as my mind and my relationship with food. I started Keto in June of 2016. After a 2 year battle with Postpartum Depression after the birth of my youngest, I knew I had to make a change. I was eager to get off medications and I knew that the ketogenic lifestyle was my only hope. I have now been keto for almost 2 years and I’m happy to say that not only have my depression symptoms been drastically reduced, my anxiety has also improved, I feel the best I’ve ever felt and it continues to get better. Seeing how impactful this lifestyle can be on our bodies, I decided to help transition my children to this healthy way of life in hopes that it would relieve them of some of the ailments they had. I now eat for health and performance, and I never feel deprived. I haven’t binged or restricted food since I started back in June of 2016. Our boys have now been keto for a little over 8 months and I’m happy to report that not only has my oldest found relief from his asthma and allergies, but we’ve also witnessed a major improvement in our little one’s mood and eczema. They are still kids, so they have treats at birthday parties and special occasions; we don’t want them to feel left out. However, we have seen how powerful keto is at fixing broken relationships with food. Our oldest rarely is phased by treats he passes by; he truly does not crave them. My little one spit out half of his Halloween candy last year because he didn’t like it. It is absolutely amazing to see these changes in my children, knowing that I’m setting them up for a lifetime of success. I’m so happy that my family and I have found this amazing way of life.
