Season 2, Episode 5 - We’re back in the South Bay at our final stop of our on-location recording session, El Segundo Brewing Co., with special guest and Certified Cicerone, Thomas Kelley. El Segundo Brewing Co. (@ESBCbrews), located in the city of its namesake, has quickly gained recognition as one Southern California’s best IPA breweries in the last few years. After opening its doors in May of 2011, brewer Rob Croxall and self-titled “Rain Maker” Thomas Kelly, set their sights on making great beers, one style at a time. This logic was partially due to their limited access to some of the more popular hops, such as Citra and Mosaic, as well as Rob’s limited experience as a professional brewer. Rob had some solid recipes from his days of homebrewing, and eventually, they secured the ingredients and the experience they needed to make the beers that would eventually make them stand out in a heavily competitive Southern California craft beer market. ![]() We kick the show off with a delicious pale ale made with Citra hops, named Blue House Citra Pale. It’s a fairly simply grain bill, consisting of 2 row and Vienna malts. The Citra hops provide flavors similar to tangerine juice and lemonade. It’s ESBC’s biggest selling beer, and rightly so. At 5.5% ABV, one could down a few pints without regretting it the following day, while still experiencing a beer with the hop punch of an IPA. Next up is a very popular ESBC IPA that’s in limited rotation, Mayberry IPA. It was first brewed last year, and it flew off the shelves. The beer is brewed with mostly Mosaic hops, with Chinook used early in the boil for bittering and Cascade added later in the boil. One interesting thing about the way Rob dry hops his beers is that he doesn’t recirculate the hops in secondary. A common practice is to recirculate the beer with the dry hops with the use of a pump to maximize the exposure of the beer to the hops. Rob chooses to simply let the hops sit in the beer for a week or so, and occasionally inject carbon dioxide into the bottom of the tank to get the hops back into suspension. For home brewers, this is the equivalent of gently rousing the carboy to get the hops back into solution. Mayberry IPA has huge hop character, which goes to show that just because something is common practice doesn’t mean it’s necessarily the best practice for everyone. ![]() The final beer is a departure from the others on the show thus far, a malty, fall seasonal beer conjured up by Thomas and other Certified Cicerones local to ESBC, a beer named Horn of Plenty. Part of ESBC’s “Cicerone Series” of beers, Horn of Plenty has the grain bill of a dunkel weisenbock, but is fermented with Westmalle Abbey Ale yeast. Lemon peel, thyme, and coriander were added in the brite tank, giving the beer a slight lemon edge on the nose. Special B malt was added to give it a rich, bread crust character, and Munich malt was used to help give the beer it’s ruby red hue. This beer was made to be paired with food and span different courses of a meal. The conversation on the show tangents for a bit into discussions about beer pairing, dinners, restaurants, and craft beer adoption in fine dining establishments. Season 2, Episode 43 – This week, our good friend John Ryti joins us and he brought some killer brew from Ironfire Brewing Company in Temecula, California. This week’s episode is sort of a mixed bag. A little bit of homebrew, some macro beer, some kettle sours, and some IPA. Nothing wrong with mixing it up, right? ![]() We’re kicking off the show with some home-brewed kombucha by Mr. Nagel. If you’ve never heard of kombucha, it’s basically fermented tea. It usually has a funky aroma with a sometimes fruity and tart taste. It’s very low in alcohol, and is loaded with many of the same microbial thingies you’d find in yogurt. I also hear it’s great for hangovers…just sayin’. If you’re interested in making your own batch of ‘booch, Kombucha Brooklyn sells an inexpensive kit that comes with everything you need to get started. ![]() Next, we’re going to the dark side, or, the light side, in Guinness’ case. Guinness recently announced their Nitro IPA. Yep. IPA, in a can, on nitrogen gas. We’re fans of Guinness so we thought we’d give it a shot. Spoiler alert: The beer is a bit bland overall, but not bad, which is better than what we expected. Get it now while it’s fresh if you want to try it. ![]() Our good friend, John Ryti is back on the show with us for the next few episodes, and he brought some beers from a great brewery based in Temecula, California, Ironfire Brewing Company. Ironfire just released their first two kettle-soured beers named, Sex and Violence, and Fast and Loose. Kettle-souring beers seems to be all the rage right now (kettle sours are the new session IPA…), and for good reason. They’re relatively easy to produce, and they won’t infect your brewhouse, since the wort is being boiled after the bacteria has “soured” it. Ironfire takes kettle souring to a new level by aging it in barrels and adding fruit. All the yums. We finish up with a beer more in line with what Ironfire is known for, a tasty double IPA called Dead on Arrival. Big thanks to Ryti for hanging out and bringing the brews! BREW THE SHIT OUT OF IT. There are vegan hamburgers to be grilled and beers to be drank. This week, we’re drinking some pretty hefty beers from Founders, AleSmith, and Bottle Logic. AleSmith Brewing Company’s Private Stock Ale and Mexican Speedway Stout are first up. Private Stock Ale is an Old Ale that was made for aging. AleSmith even encourages you to do this. Why? Because, man, IS IT HOT! So much booze on this beer, it’s crazy! But, that’s by design. AleSmith knows what they’re doing and when they tell you to age this beer, you should. Buy a few bottles and open them over the course of five or six years. The booziness should mellow out over time, allowing the beer to really shine. Drink a bottle fresh as a baseline for comparison and then another in a year or two. Hell, buy a case and really geek out with cellaring… AleSmith makes killer stout—probably the best in the world, according to certain folks. Speedway Stout is a classic coffee stout that lends itself well to barrel aging. This version, Mexican Speedway Stout, is a blend of fresh Speedway Stout and tequila barrel-aged Speedway Stout with cinnamon, Mexican coffee and Mexican Chocolate. The balanced of these particular ingredients in beer is critical, and AleSmith nails it—this beer is fantastic. ![]() We end the show with a beer that needs no introduction, Bottle Logic Brewing’s Fundamental Observation. This beer is the whale-iest of SoCal whales. It’s a fantastic blend of barrel aged stout that literally smells like alcohol infused brownies. This week we’re [stage] diving into what is quite possibly one of the most sought after items in the world of craft beer, The Lost Abbey Ultimate Box Set. There have been talks to open this box set on the show since the beginning of Four Brewers, and now we are finally delivering with this two part Box-Set-blowout-bonanza. Given the intensity and quantity of the 13 beers in the set, we decided to split the Box Set between two episodes. This episode is focusing on “Tracks” 1-6, and next week’s will feature the final six Tracks, 7-12. Season 2, Episode 14 - Here it is, folks! Part 1 of The Four Brewers Saison Showdown! Hey everybody! We’re back with another showdown of whalez and whatnot, but this time, it’s a style of ale known as saison! We chose 16 saisons from around the world (that we could acquire), and ranked them in order of the average rankings of Rate Beer and Beer Advocate combined. Who will be the big winner? Well, if you really want to know, like, RIGHT NOW, you can listen to the first minute of the show where we tell you what the randomly served beers were, which will allow you to know which beers we were talking about as they were randomly served to us, you can check out the scoring sheet we used for the showdown, or you can checkout the episode 14 show outline. If you want to wait until part 2, which will be released next week, then skip the first minute of the show and ignore everything else we just mentioned. It’s up to you, dawg! ![]() Saison is a very diverse style of beer, and it’s a pretty old style as well. It tends to have diverse interpretations among brewers and consumers, and we tried to touch on the different styles of saison that are currently available on the market that we could reasonable acquire. Season 3, Episode 1 – This week, we’re drinking three homebrews from Greg (two of them are pink!), and going in blind with John. Welcome to 2016 and season 3 of Four Brewers! This week on the show, we’re drinking homebrew from Nagel and going in blind with some blind tasting action provided by John. First up are two pink concoctions from Mr. Nagel. The first one is a cranberry Malbec wine cooler thingy. It should be noted that all of these brews were made by Greg for the holiday season to serve to guests in his home, and they’re all made from kits. The wine he made came as a kit with the grape juice, chemical additions, and cranberries, which makes for a really easy homebrew. Making kit wine is really easy. John wrote a piece on a Riesling wine he made from a kit a few years back. Check it out if you want a rundown on the process. ![]() Next up is a prickly pear witbier, which was again, made from a kit. The prickly pears, however, were not included in the kit, and were acquired at Greg’s in-law’s house in Temecula. In case you don’t know what prickly pears are (like John), they are the fruit that grows on a certain variety of cactus. They’re very hard to work with, as Greg explains on the show. The last brew from Greg is a milk stout that was originally intended to be a hard root beer, but in the end, the spicing didn’t quite work out. So, he ditched the root and kept the beer as is. All in all, these beers (and wine) were quite tasty. The brew days for these were all fairly low key and didn’t require a whole lot of time and effort. Don’t diss the kit! As long as you keep everything that’s post-boil clean and sanitary, and pitch the proper amount of yeast while maintaining proper fermentation temperatures, you should be good to go and on your way to making a great kit beer or wine. Season 3, Episode 10 – We’re back with part 2 of our visit to Bottle Logic Brewing in Anaheim, California, and this week, we’re saddling up some unicorns. Get your Four Brewers “Metal Logo” shirt! Before we get into the beers, it should be known that Greg’s cask ale festival called “Firkfest” is going down on March 19, 2016 in Anaheim, California. We’ve been promoting this event for good reason—it’s a unique festival to Southern California, featuring 30 breweries and 50 cask beers, ranginga from the more traditional cask conditioned beers to firkins with chocolate, peppers, or whatever else brewers want to add to their standard release and one-off beers. Get your tickets at firkfest.com. ![]() We kick off the show right where we left off with part 1, drinking some German Chocolate Cake. The beer lives up to its namesake, and we find out that this beer is also what runs through Nagel’s veins (he’s German…bad joke). This beer is served on both nitro and CO2 at Bottle Logic’s tasting room, which is a common practice of Bottle Logic. Good idea for those who don’t enjoy nitrogen infused brew. While we’re drinking this beer, we discuss the unique technique that Bottle Logic employs to add ingredients like cacao nibs, vanilla, and even wood to their beers while they’re still in the fermentor. ![]() Next up is a beer that has yet to be released, Bottle Logic’s brettanomyces brew, Some Assembly Required. The bottle we had on the show was midway through its bottle conditioning and a bit warm, so it was a bit explosive. This didn’t stop us from thoroughly enjoying the beer. Definitely a unicorn worth capturing when Bottle Logic releases it. Finally, the moment you’ve all been waiting for, a barrel sample of the renowned Bottle Logic barrel-aged stout, Fundamental Observation. This beer rocks! This was only a barrel sample we had on the show—it was flat and room temperature—and it was already amazing. F.O. is no hype-whale, it’s the real deal, from what we could taste, and this was only a single barrel sample. While enjoying this beer, we talk about how Bottle Logic designs a beer that is destined to be barrel-aged. It’s not as simple as making a stellar stout and throwing in a barrel. Big, BIG thanks to Wes and Brandon for having us at Bottle Logic. Season 1, Episode 23 - This week, a Duck Duck Gooze side-by-side, and some, er, interesting homebrew from Nagel. Welcome to November. It’s that special time of year when we get together with our families, roast birds in the oven, and drink barrel-aged beer to keep warm in the brisk winter weather. On the show this week, we’re cracking open two beers from The Lost Abbey called Duck Duck Gooze. You may have heard of it. It’s an excellent sour that many beer geeks consider to be a “whalez, bro”. No hype here. It’s fantastic.
Matt really knocked it out of the park for this episode by providing not only one, but two variants of the DDG, one from 2009, and one from the most current 2013 release, which was provided to him by his super-rad boss, Patrick Rue. So, thanks Matt…and Pat! We break away from the drinking for a bit to discuss the recent IPA showdown at Vendome Wine & Spirits in Toluca Lake, CA. The results may surprise you… Greg brought two homebrews for us to try this week, one made with sourdough yeast (yes, really), and the other, a Tart Of Darkness clone, which was a More Beer homebrew kit. We start with his Tart of Darkness clone. The beer itself turned out OK, but this homebrew teaches us that making a sour beer that’s on the level of The Bruery’s Tart of Darkness takes a lot more time and work that just adding bacteria to wort. Next, we try Greg’s collaboration beer that he made with OC Baking Company. Greg did a five day sour mash for this beer and fermented it with sourdough bread yeast from OC Baking Company. The beer really didn’t turn out well–we’re not gonna lie. Not all experiments turn out well. Sorry, Greg, but thanks for the beer! Season 2, Episode 47 – This week we’re hanging out with Jesse Friedman, co-owner and brewer at San Francisco’s Almanac Beer Co., and we’re drinking some really special stuff. This week we are joined once again by our good friend Jesse Friedman, co-owner and brewer at Almanac Beer Co. in San Fransisco, California, and we’re drinking some really interesting stuff that encompasses the worlds of beer, wine, and spirits. ![]() First up is the Almanac Dogpatch Sour. This beer is made with dried Rainier cherries and aged in red wine barrels for a number of months. The beer has a nice lactic tartness to it with the cherries giving it an extra fruity kick. Here’s something interesting. There is an undetectable amount of acetic acid in the beer, which we learned from Jesse is a good thing. Having a beer that is entirely lactic makes for a somewhat boring and overwhelmingly tart and thin beer. Almanac is by no means in the business of making vinegar bombs, but they’ve learned from others in the industry that acetic acid can also be your friend when it comes to making delicious sours. ![]() The next couple of beers are really interesting. The Dogpatch Grand Cru is essentially a beefed up version the Dogpatch Sour, but with a couple of twists. Jesse walks us through exactly what goes into making this beer on the show, but we’ll try to sum it up here. It’s basically comprised of 30% red wine grapes, consisting of Zinfandel, Syrah, Tannat, Petite Syrah, and Tempranillo grapes. Two versions of the beer are aged in new French oak barrels and then blended back together to make the final product. This is not your typical sour ale. The red wine presence is quite big, making for a complex and satisfying experience. It’s pretty damn good. The Farmer’s Reserve Grand Cru goes through a similar production process, but instead of using a variety of red wine grapes, this beer uses Muscat grapes. This beer got a lot of different reactions from the room. In summary, it’s loaded with aromas of pineapple, lychee, mango, and even a hint of Nelson hops, even though Nelson wasn’t used to make this beer. The wine presence comes through really nice on the palate, just like the Dogpatch Grand Cru. Think of these beers as beer and wine hybrids. Almanac wasn’t subtle about it either. Jesse thinks the best thing about both of these beers is how they can divide a room and really get people talking about what they’re experiencing while drinking the beer. Mission accomplished. ![]() We wrap up the show with a first for Four Brewers. We’re drinking some Dogpatch Whiskeyfrom Seven Stills, made in collaboration with Almanac. Seven Stills is known for making whiskey that is influenced by beer. Seven Stills is from the same neighborhood in San Fransisco as Almanac called “Dogpatch”, so this collaboration seemed natural. In order to make for a proper wash for distilling, Almanac brewed a version of Dogpatch Sour with wheat added to the grain bill and higher starting gravity that made for a higher post-fermentation alcohol level. After distillation, the whiskey was aged in used Dogpatch Sour barrels and then aged again in Dogpatch Sour Grand Cru barrels. This whiskey is cask strength, so you may want to add some water to cut down those fusel notes. Wood, cinnamon, vanilla, cotton candy, taffy, black pepper, caramel, and honey characteristics all come through on the aroma and palate. At $45-$50, this isn’t a cheap whiskey, but it’s unique and delicious. Seven Stills is on to something, here… So, thanks once again to Jesse for hanging out with us. BREW THE SHIT OUT OF IT. Season 3, Episode 3 – This week, beers from Founders Brewing Co., and Going In Blind with Matt. Michigan. More great beer from Michigan. Founders Brewing Co. is finally available in southern California, and we’re pretty stoked about it. Founders is a well known brewery among craft beer drinkers, brewing everything from hoppy IPAs to delicious, highly sought after bourbon barrel-aged stouts. Getting our hands on their beers proved to be quite the difficult task in the past, but not anymore. This week on the show, we’re sampling a bit of each. ![]() We always seemed to find a way to get our hands on a few of their beers before they were available here by means of trading, which was kind of a pain in the ass. How rad is it that we’ll now be able to go to our local bottle shop and get it right off the shelf?! So. Rad. This week, we travel to the deepest parts of our cellar to sacrifice the darkest of beers upon the alter of the internet, to the Beast, called by his disciples, “Palate.” The ritual begins with a roasted porter implanted with the darkest of coffee beans. Bred for darkness at Smog City Brewing Co., Groundwork Coffee Porter is reminiscent to that of coffee beans drenched in the eternal darkness and evil of chocolate. ![]() Born in twilight of a darkening sky in the year 2012, the next victim is an elusive beer that manifests only in the coldest of winters in the northernmost part of the land, from a place known as Hill-Farmstead. ![]() Twilight of the Idols taps into the deepest of wells for its lifeblood, and is then showered in the wrath of vanilla and coffee. Delivered to us by our brethren in beer, Beer Geek Radio, we toast their generosity and chant their name in the darkest cave in the city of Moreno Valley, California, known to disciples as the den of the Beast.
The final slaying is the from the depths of hell itself, Oregon. These final brews, which were laid to rest in barrels of bourbon, one with nibs of Theo, and the other with lurid coffee beans, are bound by time and pure darkness. Known as Black Butte XX and Black Butte XXVI, from the brewery of Deschutes, they are more than six years departed from one another, and yet their bond runs deep. Melting the wax from their fragile, dark, crowns frees them from their grim isolation, only to then be ravaged by the Beast itself. A worthy sacrifice indeed, but the Beast will never find true satisfaction. ![]()

Season 2, Episode 41 – This week, beers from Sixpoint Brewery, a super-yummy hoppy pale ale from our local friends, Wicks Brewing Company, sprinkles of Almanac Brewing Company’s Citra Sour, and some in-depth homebrew discussion on Quad recipe formulation. This week on the show, we’re taking a trip to Brooklyn, New York (we’re not really there, duh) to get some of that sweet Sixpoint Brewery action! ![]() But first, we start with a new segment on the show, the 4B Mailbag! To accompany the Mailbag segment, we’re drinking a delicious beer from a local favorite of ours, and many in the Inland Empire of southern California, Wicks Brewing Company’s Paladin Pale Ale. This beer is Wicks’ first official bottle release that has made its way to shelves, and it’s superb. A super-hoppy and danky pale ale that has the punch of an IPA with the ABV of a pale ale. This is no session ale, folks…it’s a pale ale, and it’s delicious. ![]() Next up are the Sixpoint Brewery beers. Thanks to 4B friend and Patreoneer, Scott McElhone, we were able to get our hands on three six-packs of Sixpoint brews that aren’t distributed in southern California. We’re trying to branch out, people! First is The Crisp. John thinks this is one of the coolest beer names for a lager, and the beer inside of this Sixpoint brew does not fall short of its name. It’s quite tasty and damn near perfect. Next is Sweet Action. We didn’t quite figure out what this beer was, exactly (turns out it’s a cream ale), but it did spur some conversation regarding guitars, bands, and Wayne’s World. Finally is the much sought after Resin. For an east coast IPA, this beer delivers. We beer drinkers in California often criticize east coast IPA for its over the top malt character and seemingly lackluster hop profile. This beer is not that. It quite good and unique for the style. The malts are definitely there, but they take a middle seat to the wonderful hop profile. It’s a solid IPA that’s worthy of the hype that precedes it. We wrap up the show with Citra Sour from Almanac Beer Co. while discussing possible beer recipes for a Quad that Greg wants to age in a rye whiskey barrel he acquired from Re:Find Distillery. Quadruple style beers can be difficult to brew. Barrel aging can also be quite difficult. We try to put it all in perspective. BREW THE SHIT OUT OF IT. Season 2, Episode 33 – This week, homebrew from Nagel and special guest Natalie DeNicholas. Friend and fellow homebrewer, Natalie DeNicholas, joins us on the show this week with homebrew in hand. She’s been brewing for a few years now, and is a member of the famous southern California homebrew club, Maltose Falcons. ![]() First up are two saisons that Natalie brewed early in her homebrewing career. While she doesn’t remember the details of the recipes, she does remember the basics of each of the beers. The first saison we try poured brilliantly clear in the glass and smelled wonderful. This beer was pretty basic as saison recipes go, and was fermented with a French farmhouse yeast strain (assumably Wyeast 3711). The carbonation and flavor on this beer was great and served as a perfect opener for the show. The second saison was more in line with a tradition Belgian saison, made with belgian malts and fermented with a Belgian White Labs yeast strain (WLP565, more than likely). Next up is Natalie’s anti-oatmeal stout. The recipe originally called for oats to be used in the mash but Natalie, well, forgot to add them. Whoops. It happens to us all at one point or another. This beer had a big chocolate aroma, and even though it didn’t have oats to beef up the body, it maintained a nice mouthfeel with a pleasantly sweet body. Great stuff, indeed. We finish up with a kölsch from Mr. Nagel. Prior to the show, Greg thought about filtering this beer to see how much it would affect certain aspects of it, but he ultimately couldn’t find the time to get it done. Since this brew was version 1.0, he thought he’d bring it by anyway to get our feedback on how it could be improved. Temperature during fermentation can have a big impact on the yeast character of a beer, especially a kölsch. We all conclude that the ester profile is a bit much in this beer and fermenting at a cooler temperature might help reduce it to an acceptable level. BREW THE SHIT OUT OF IT. Season 2, Episode 50 – This week, beers from Destihl Brewery, Allagash Brewing Company, and the return of Going In Blind: Greg Nagel Edition! This week, we’re diving into some more beers from Destihl Brewery’s Wild Sour Series, as well as some funky stuff from Allagash Brewing Company. Shows from session 27 (episodes 50, 51, and 52) were the first to be recorded in December, so this officially kicks off the 4B 2015 holiday season! It really is the best time of the year. ![]() We first learned of Destihl’s awesome sour beers way back in 2012 when John and Mattwere at the Great American Beer Festival. Destihl brought the pain with their awesome sours that made for huge lines during the festival. We had their gose from this same series on the show back in March. Friend and Patreoneer, Sandro Chiavaro recently sent us the other variants in this series, so of course we’re cracking ’em open on the show. Thanks, Sandro! While drinking these beers, we discuss the recent nerd-rage drama surrounding Kane Brewing Company’s release of A Night To End All Dawns. ![]() Net up are some beers from Allagash Brewing Company that we don’t see too often here in southern California. Season 2, Episode 44 – This week, we’re at The Beachwood Blendery with Gabe Gordon and Ryan Fields drinking the first two bottle releases from The Blendery, Propagation 001 and 002. Propagation 001 and 002 go on sale TODAY, November 1, at 11 am. If you’re not already in line, get down to The Blendery and pick up some bottles ASAP! The time has finally come, and we couldn’t be more excited. Beachwood BBQ and Brewing‘s new sour/wild beer project is finally off the ground. They’re releasing their first two beers today, Propagation 001 and 002, a petite saison and a Berliner weisse, respectively. Beachwood has quickly become one of the best breweries in southern California, garnering awards at the World Beer Cup and medals at the Great American Beer Festival. When they announced The Blendery back in December of 2014, beer geeks everywhere knew they were in for something special. ![]() This week, we’ve got owner and chef, Gabe Gordon and brewer/barrelmaster Ryan Fieldson the show with us. We’re kicking it off with the first Propagation series beer, a petite saison made with 12 different strains of brettanomyces. We talk to Gabe and Ryan about the process and the inspration behind the beers and the brewery itself, as well as what Gabe thinks a really good gueuze shouldn’t be (spoiler: it shouldn’t be an acetic vinegar bomb. Word.). ![]() One of the coolest things about The Blendery is their dedication to figuring out why Belgian gueuze is what it is. Is it possible to make these world-class, well known styles of beer in downtown Long Beach? Their approach to the process is both scientific and playful. Restrained experimentation and a structured, scientific process is the heart and soul of The Blendery. Ultimately, their goal is to make beers that even Belgian brewers could appreciate. ![]() Propagation 002 is the next beer on deck. This beer could easily be considered a reference for the Berliner weisse style of beer. It’s damn near perfect, and refreshingly delicious. While many might scoff at such a “simple” offering, Ryan reminds us that if you can’t even brew the most basic of beers in a particular style, then maybe you shouldn’t be brewing them at all. ![]() Big thanks to Gabe and Ryan for having us at The Blendery. Because we like you. ![]() If you’re familiar with the very much frowned upon “craft beer black market”, then you know how much moolah this bottle can fetch. It’s a ridiculous amount. This is a beer Johnhas held on to for the last six years, and rather than succumb to greed and unethical activity, he decided to open his ultra-whale, a 2010 Bourbon County Brand Stout Rare. Things got a little weird on this episode. Season 2, Episode 18 – This week we’re on location at Barley Forge Brewing Co. in Costa Mesa, California, the second of our three stops at three Orange County breweries. The second of our three brewery tour is Barley Forge Brewing Co. in Costa Mesa, California. Opening just six months ago, Barley Forge is already well on their way to becoming one of Orange County’s best craft breweries with a variety of beers ranging from the super-hoppy, to rich and exotic. Owner, Greg Nylen and Head of Brewing Operations, Kevin Buckley join us to talk about the brewery with a spread of Barley Forge’s outstanding brews. ![]() We kick off the show with a Dortmunder-stlye lager from Barley Forge named Grandpa Tractor. This 5.0% ABV euro-style lager is made with Northern Brewer hops and was designed by Greg and Kevin to pair with Asian foods. It’s light, clean and refreshing, and translates well in bottle format, which we try along side the draft version. Before we head into the IPA and stout beers, we take a detour into Belgium with Barley Forge’s Belgian-style amber ale, Goesting. This beer is 5.7% ABV and is brewed with Perle and Styrian Goldings hops. Orange peel is used during the mash to give the beer a slight citrus kick that doesn’t take center stage, and Achouffe yeast is used to ferment the wort and give it its Belgian edge. Stone fruit is prominent on the nose, and the beer pairs nicely with mild, nutty cheese and honeycomb. ![]() Next up is a side-by-side of two double IPAs from Barley Forge, One Louder, and Future Tripping. We acknowledge that none of us are new to the IPA style of beer, but Barley Forge’s IPAs stand out in that they can accommodate to a wider audience with different tastes. One Louder will appeal to someone who likes more of a balanced, NorCal-style IPA, and is brewed with Nelson and Chinook hops, with some honey malt to round out the flavor. Future Tripping appeals more to those who enjoy an aggressively bitter IPA, and is made with Simcoe and Amarillo hops. If you love SoCal IPA, then Future Tripping is your jam. ![]() We wrap up the show with a delicious coconut stout made with rye malt named, The Patsy. We find out later why it’s called the Patsy, but if you’re up on your classic British sketch comedy, you’ll understand the reference. This beer is awesome! Huge toasted coconut and chocolate aromas on the nose lead one to think that this beer might be a little too rich when it’s tasted, but the rye malts cut right through the sweetness and makes for a drier, cleaner than expected finish. Season 3, Episode 17 – Today, the 2016 California IPA Showdown. It’s been a while since our last showdown, and we’ve wrestled with how we are going to handle IPA for a long time now. Initially, we thought about trying to get the best of the best IPA from around the country and compare them all blind. The challenge there is it’s nearly impossible to get beer from all over the place, at an acceptable level of freshness, in one place at one time. Plus, as fun as it is to read about a magical elixir from a brewery thousands of miles away that drinks of pure unobtainium, what about something a bit easier to come by? Enter the CA Shelf IPA Showdown! ![]() These beers are all from California. They’re all IPAs and all widely and readily available. Hell, they’re probably sitting in your local grocer dying a slow painful death. So we set out to determine the king of the hill. The Method While we knew which beers were in the pool, we had our good friend Dr Zack administer the tasting for us totally blind. We didn’t know what we were drinking when we rated it, and we revealed at the end. We each rated the beer 1-100 using our completely arbitrary personal preference scales, and averaged those ratings to get a total. All of these beers were well within acceptable freshness range (The oldest bottle had a bottling date of 2/9/2016 which was less than 2 months before recording) and were purchased at our old standby Gerrard’s Market in Redlands, CA. All of the beer at this store is kept in a walk in cooler, so conditions were about as ideal as we’re going to get. But all of this beer was purchased, by us, off the shelf, and not provided by the brewery. The Rankings #9 Lagunitas Brewing Company – IPA ![]() Lagunitas IPA may hail from California, but you can probably get it at your local gas station. This beer is available in 48 states in the US, and likely the only IPA on at the janky bar down the way from you that got one of these IPAs that people keep talking about. In this field of CA standbys, Lagunitas disappointed. We were impressed with the clarity, but minimal hop presence combined with a maltier than average backbone and astringent flavors led this beer to rank a full 10 points below the next lowest ranking beer. #8 Sierra Nevada Brewing Co. – Torpedo Extra IPA ![]() Probably the only beer more ubiquitous than Lagunitas IPA is Sierra Nevada’s venerable Torpedo. This beer is available in all 50 states and Washington DC! It’s also doing pretty poorly against it’s CA born peers. We thought the beer was appropriately old school. Aroma notes included citrus, pine and crackery sweet malt character, but the flavor fell flat with our field. Too much sweet caramel malt, limited hop presence and an overall flat, bitter character dropped this standby near the bottom of the field. #7 Stone Brewing Co. – Stone IPA ![]() Stone IPA is a standby in California and beyond, acting as an aggressive example of the West Coast IPA style. We found it aggressive indeed – flavor descriptors include words like bracing, challenging, boozy and unrefined. While overall we enjoyed the beer, we found the rough around the edges approach to IPA to be limiting and knocked it down in the field. #6 AleSmith Brewing Company – IPA ![]() AleSmith IPA has been discussed on 4B before in a Going in Blind segment. It continues to vex the show, convincing Greg that he was drinking Stone IPA until the reveal showed him to be dead wrong. This beer scored high marks from John and Jason for being a classicly bitter “San Diego style” West Coast IPA, but didn’t do as hot with Matt and Greg. #5 Bear Republic Brewing Co. – Racer 5 IPA ![]() Racer 5 from Bear Republic has been the low key stand by west coast IPA for several years now. We were able to pick out a lot of different aroma notes, and kept finding different aroma descriptors the more we tried it. While it registered high notes with most of our crew, Jason was a dissenter and was so put off by the odd sweet aftertaste and diesel aroma notes that he knocked it down to his 3rd lowest beer of the day. Jason’s 66 score knocked it down from an 83.83 (and second place) into 5th. From a beer that has roots tracing back into the 1990s, Racer 5 made a very strong showing. #4 Alpine Beer Company – Duet ![]() We went in depth comparing Alpine Duet vs. Green Flash Duet way back in season 2, episode 32, and we had high praises for both versions then. Some might think that having the smallest distribution footprint (even after the Green Flash acquisition) would give this beer an unfair advantage, but the gang was divided on this beer in this showdown. Jason and John really liked it and considered it an above average beer. Greg and Matt, on the other hand, thought it was fairly ho hum. In the end, Alpine Duet scored solidly and placed above the middle of the field. #3 Green Flash Brewing Company – West Coast IPA ![]() While it kinda seems like a double up to have Green Flash and Alpine in the same showdown, the West Coast IPA is a classic and acts as a solid representative of the style. But you wouldn’t know that to listen to our notes, as we made it a huge point to talk about how not West Coast the beer is. It was a bit maltier and danker than we expected, and while our initial reactions were a bit reserved, upon digging into our glasses we came to really enjoy it. We didn’t absolutely love the aroma, but the flavor really brought us around. Between this beer and Alpine at number 4, Green Flash made a strong showing as a brewery. #2 Ballast Point Brewing and Spirits – Sculpin IPA ![]() Sculpin is the beer that really put Ballast Point on the map after their World Beer Cup Win in 2010. It quickly rocketed from a limited seasonal beer into a flagship and now one of the most readily available IPAs in the markets that get Ballast Point. An established favorite with Jason, this beer impressed the gang with it’s more modern IPA style and tropical fruit notes. Greg appreciated the malt character while Jason liked the lingering dankness. It hit everyone’s palate in a just the right way that took led it to barely edge out the competition from Green Flash. #1 Firestone Walker Brewing Company – Union Jack IPA ![]() Union Jack is considered by Matt to be the Rodney Dangerfield of the California IPA world. While very widely available, it does not usually get a lot of accolades from the beer world. It also suffered from being the oldest beer in our flight, bottled on 2/9/2016! Despite that, this beer wowed us. We loved the aroma, and loved the beer in just about every way. It seemed to walk the tightrope between malty and dry, hoppy and bitter, and came in right in the sweet spot for our palates. It was the second highest rated beer from John, and the highest rated from Matt, Jason and Greg. Despite being counted out by Jason going into the showdown, Firestone continues their dominance in 4B Blind Showdowns and tops the podium again. Season 1, Episode 2 - Modern Times Beer Fortunate Islands brings the wheat and hops… Welcome to episode two! This week on the show, we’re drinking wonderful a hoppy wheat beer from Modern Times Beer named “Fortunate Islands.” Modern Times is one of the newest breweries to sprout up in San Diego, California, and they’re making incredible beer. They’ve only been open since September 2013, and they’re already making a big name for themselves. ![]() Feature: Homebrew - John’s Oatmeal IPA, “Oats N’ Hoes” John’s oatmeal IPA has really garnered a lot of attention in the local Riverside, California homebrew scene. Inspired by Lee Chase and Automatic Brewing Co.‘s Will Powered IPA, Oats N’ Hoes is a west coast-style IPA, made with one pound of oats and Falconer’s Flight hops. Recipe: Oats N’ Hoes 10 gallon batch, 82% mash efficiency. 148º mash temp for 40 min, 20 min mash out to 168º. 60 min boil. 65º fermentation temperature. 1.069 OG. Malts: 25 lbs 2 Row Malt, 2 lbs US Caramel 15 malt, 1 lb U.S. Flaked Oats. Hops: 2 oz Falconers Flight Hops (all hops are Falconer’s flight) at firt wort hop addidion, 1 oz at 10 min, 1 oz at 5 min, 2 oz at flame-out. Dry hop: 2 oz at 7 days, 2 oz at 10 days. Season 3, Episode 9 – This week, a last minute stop into Anaheim’s Bottle Logic Brewing ends with juicy beers, something tart, and gigaflops of hops. Get your Four Brewers “Metal Logo” shirt! Before we get into the beers, it should be known that Greg’s cask ale festival called “Firkfest” is going down on March 19, 2016 in Anaheim, California. We’ve been promoting this event for good reason—it’s a unique festival to Southern California, featuring 30 breweries and 50 cask beers, ranging from the more traditional cask conditioned beers to firkins with chocolate, peppers, or whatever else brewers want to add to their standard release and one-off beers. Get your tickets at firkfest.com. ![]() Shooting each other in the junk with laser beams sounded like fun at the time, but drinking Bottle Logic Brewing beers in their barrel room seemed like a better idea. Speaking of shooting each other in the junk with lasers, it turns out that She Shot First with galaxy, citra and centennial in our gaping, carbonite mouths. Although hoppy wheats may be known for their modern unfortunate landmass times, this beer was birthed on the homestove of Bottle Logic Master Brewer Wes Parker. “Juicy,” says Four Brewers’ Jason Harris, otherwise known as Internet’s Golden Brett, in a nasally, high-pitched voice. Zerø Day juices our mouths with Vermont-style IPA cloud beer. Juice profiles are dialed in, maximum hoppage is achieved, targets are hit, and montages are played with sweaty Bottle Logic brewers listening to “I Need a Hero.” The beer looks like a yellow pair of Juicy Couture sweat pants got dipped in freshly dry hopped beer and wrung out into pint glasses. But, oh if it ain’t juicy and supremely delicious. ![]() Berliner Equation w/ Blueberries is next. It’s kettle soured and bursting with fruit. 350 pounds of berries tie our tongues into a quadratic equation, nearly turning us into Violet Beauregarde. Thankfully, we got rolled to the juicing room for squeezing, doopity doo. Expansion for sour beer? Yes! Bottle Logic is creating a sour/brett beer facility. Oh, and spoiler alert. Recursion 8.0 is next. This IPA is surprising software, with 2.5 hexadecimal pounds of dry hop per gigabarrel. Dank.exe is compiled with no bugs. Pee.bat is called. We wrap up part 1 of the Bottle Logic visit with medal-winning Cobaltic Porter. Details are then leaked about their anniversary Week of Logic: Hint: it’s space themed. Season 2, Episode 9 - This week, we’re going back to the hops with homebrew from Nagel and hoppy radness from Noble Ale Works, Alpine Brewing, and Societe Brewing Company. Now that we’re all fully recovered from last week’s epic stout tasting, we’re back with a homebrew from Greg, and some beers from some of SoCal’s best breweries: Noble Ale Works, Alpine Beer Company, and Societe Brewing Company. We kick the show off with a unique homebrew from Greg that’s kind of saison, and kind of a pilsner. Weird, right? The beer was intended to be a saison, and technically speaking, it is. It was brewed with Belgian pilsner and rye malts, and fermented with White Labs WLP568 Saison yeast. What makes this beer different was the utilization of whole leaf Saaz hops. The beer was bittered with Nelson Sauvin in the boil, while the Saaz hops were used in a custom hopback made by Greg. The Saaz come through so much in this beer that it’s reminiscent of a Czech pilsner. All in all, it’s a tasty, easy drinking beer and an example of how experimentation with homebrewing can lead to unintended, yet interesting results. ![]() Next up is yet another attempt to convince Matt that Sorachi Ace hops aren’t just extract from an old lady’s perfume bottle, Noble Ale Works Sorachi Ace Showers. Matt was given this beer from the brewer himself, Evan Price. If you aren’t familiar with the “Showers” line of beers, it’s a series that Noble Ale Works has been doing for quite a while now, that focuses on one specific hop. This beer is a great example of how to utilize the characteristic of this hop. The malt profile on the beer has a unique, malty, savory flavor, almost like candy, and the hops back it up with a balanced, lemony bitterness. This beer doesn’t smack you in the face, and it’s quite refreshing. Interestingly enough, Matt kind of digs the beer, while Jason is simply not a fan. Thanks for the beer, Evan! ![]() The next two beers are from Alpine Beer Company. Jason picked up a couple of growlers from Green Flash Brewing Company, who is now brewing Alpine beers at their facility in San Diego, California. Alpine Beer Company is a very small brewpub out of Alpine, California who is known for their spectacular beers, most notably their hoppy beers. They were recently purchased by Green Flash Brewing Company to help expand the brand, get the beers to a bigger market, and help Alpine Beer Company keep making the truly unique brews that they are so well known for. The two beers we have on this episode, Hoppy Birthday and Nelson, are two classics from Alpine. Both of these were brewed at Green Flash, which in comparison to Alpine’s brewhouse, is enormous. There are certain recipe scaling issues that come about when stepping up a beer to a production run of this size. We discuss those issues on the show, and whether or not these beers are truly accurate iterations of the beer Alpine is known for. ![]() The final beer of this episode is The Miser from Societe Brewing Company, by way of our good friend and “Ruler of the Underworld” at Societe, Mike Sardina. This beer is made with Amarillo, Simcoe, Mosaic and El Dorado hops, and boy does it show on the nose. This beer smells absolutely delish. Coming in at 10% ABV, the body on this beer is really nice, and not just a vehicle for hop delivery. Societe very much prides themselves on making a unique, quality product, and it really shows in this beer. Expect an on-location episode from Societe in the near future… BREW THE SHIT OUT OF IT. Season 1, Episode 31 - This week, head brewer at Twisted Manzanita Ales & Spirits, Daniel Cady, joins us live in the studio. Twisted Manzanita Ales & Spirits, formally known as Manzanita Brewing Company, has only been around for a few years but they’re making some spectacular brews. This week on the show their head brewery, Daniel Cady, joins us to share some of their best. First on deck is an India pale lager named Tinfoil Hat that they brewed in conjunction with San Diego Brewing Company. The unique thing about this IPL is the use of an Alt-Bier yeast, instead of standard Lager yeast. The yeast character really shines through, and the citrusy aspect of the hops really work well. This isn’t a grassy hop bomb, but its balance is quite refreshing. ![]() Next up is Twisted Manzanita’s delicious chocolate mint stout named Enlightenmint. Clocking in around 8% ABV, and finishing it’s fermentation at around 7° Plato, this beer is like drinking chocolate ice cream. It’s really something great. Big body and minty aroma, followed by a thick, sweet chocolate backbone. This is definitely worth picking up if chocolate and mint is your jam. This is where we get into the heavy hitters, as if 8% ABV wasn’t enough, and break out the sippers. First up is a brew from the original Manzanita Brewing Co branding, batch 1 of the Serenity barleywine, coming in at just around 3 years old, and aged in whiskey barrels. The beer is incredibly smooth and deceivingly easy to drink. The barrels shine through just like they should, and the body is just right. The beer is slightly oxidized, but it only enhances the character even more. The next beer is pretty special. It’s an “iced” version of the Serenity barleywine, in that it was ice distilled. Daniel gets into the logistics of how this was done on the show. This beer was not available to the public, but since we happen to know the brewer, we get to try it. Lucky us, right?! In short, this beer is boozy, but still fairly well balanced. The final beer is a sour that was blended just for the show and it’s named after a part number in the McMaster Carr catalogue…really, it is, and Daniel gets into why that is. Pretty rad, indeed. Daniel talks about the sour mashing that went into making this beer, and the many strains of brettanomyces from Europe that he got to experiment with in order to get the final product. Big, big thanks to Daniel and the folks at Twisted Manzanita for the insight and fantastic brews. Twisted Manzanita has a big future if they keep up the quality of the beers they’re brewing, and we couldn’t be more stoked on what’s to come from them. BREW THE SHIT OUT OF IT. Season 3, Episode 2 – This week, it’s all Bell’s Brewery. What’s that I hear? A bell? A tolling bell? This week on the show, we’re drinking NINE different beers from Bell’s Brewery. For us in SoCal, that’s pretty awesome, considering they just recently added distribution to southern California (May, 2014) and we were able to buy all of these beers in our local bottle shops. ![]() Fuck. Yeah. It would be quite tedious and redundant to go through and give a summary of every beer on the show this week, so I’m not going to do it. We tried to stick with more of the mainstream stuff from Bell’s that anyone could pickup in their area, if available (Saturn being the exception. That’s from Jason). Bell’s Brewery has been around for a long time, 30+ years, in fact. It’s safe to say that they know how to make great beer that’s unique to them, in more ways than one.
