93: Maker's Mark and Golfing with "Chubs"

This week we have a solid lineup of limited edition bourbons from Maker’s Mark. Our first podcast back together as a group of 3 since the pandemic started, we had a lot of fun catching up and talking shop. We each brought something different to run through a tasting together. Jake had Maker’s 101 and Maker’s 46 Cask Strength, Scott brought Maker’s Cask Strength (Batch 20-03), and Michael grabbed his Private Selection of Maker’s from Match Cigar Bar. We discussed the legendary Maker’s Mark red wax, Maker’s bottle collections, and how we believe Maker’s in a great position to continue to evolve its lineup. Maker’s Mark may be one of the most well known wheated bourbons around today, but it was clear that they needed to branch out into different offerings to stay competitive. We enjoyed each of these bourbons for different reasons, so be sure to tell us which is your favorite bourbon from Maker's Mark.

Tim Knittel is the first Official Bourbon Ambassador of Churchill Downs where he developed the Bourbon program for the new Matt Winn's Steakhouse. In 2016, he founded Distilled Living which provides Bourbon education, tourism and consulting services and is the world's largest combined virtual and in-person Bourbon tastings company. From Japan to Scotland to Kentucky, Chief Blender Shinji Fukuyo has traveled the world over learning, studying and perfecting the art of blending whiskey and distilling spirits. For him, Legent presented numerous unique challenges. Bourbon isn't a spirit that's blended routinely. He also wanted to honor Fred's family heritage and produce a unique bourbon of the highest quality. After years of tasting, testing and refining the recipe with Fred, Legent has become another step in Shinji's pursuit of mastery.
Like any bourbon, it all starts with the grains. But unlike any other bourbon, how Legent ends up in your glass is a completely unique process. Fred and Shinji each played an integral, collaborative role in the creation of this truly unique bourbon.

Eric has since regained movement in his shoulders and improvements to his overall health. From becoming an author, sports analyst for ESPN, Sirius, the Big Ten Network and Rutgers radio, to a much sought after motivational speaker, Eric has given a voice to the paralysis community to mobilize support for critical initiatives, policies and cutting-edge research. He has been recognized and received awards by Sports Illustrated, ESPY Awards, and the WWE Hall Of Fame. He also realized his NFL dream when his college coach and then Tampa Bay Buccaneers head coach, Greg Schiano, signed him to a professional contract in 2012. In May 2014, Eric graduated from Rutgers University where he was an honored speaker at the commencement ceremony. Since his injury, Eric has shown the world that obstacles can be transformed into opportunities, and he will continue to drive his mission forward until he delivers on Christopher Reeve’s dream of a world with empty wheelchairs. To Eric, it is not a matter of if he walks again, but rather when. Additionally, he has extended his versatility by becoming a savvy entrepreneur. 49: Broken Barrel Whiskey

On this week’s episode we sit down with Broken Barrel Whiskey Founder and CEO, Seth Benhaim. Seth started the Infuse Spirits Company in 2012 when he was 25 years old. The Infuse Spirits line focuses on naturally infusing and blending spirits with natural fruits and spices. Seth's passion for infusing spirits led him to become the youngest brand owner to ever win Best-in-Show and Double-Gold at the San Francisco World Spirits Competition.
While the Infuse Spirits line primarily focuses on blending and infusing Vodka spirits, Seth realized he wanted to expand his blending experience to whiskey. This created the spin off from Infuse Spirits to Broken Barrel. We sat down with Seth and shared some pours of his Single Oak series of Broken Barrel Whiskey. The premise of this project, was sourcing Kentucky and Indiana whiskey, and then additional aging in steel containers, using staves from used barrels. In the single cask series, Seth has created a Mizunara finish, a Peated Scotch finish, and an Amontillado Sherry finish. Seth's process for accomplishing this, is to use reclaimed barrels that have seen a life of aging other whiskies. Once Seth receives the used barrels at his Los Angeles warehouse, he removes the barrel hoops and then the fun part, smashing the barrels with a sledge hammer, giving him the staves needed to age his whiskey and created unique flavor profiles.
It was fun getting to sit and talk with Seth for this podcast. Seth is not a Master Distiller, he is a spirits enthusiast who loves to blend sourced spirits and create new and interesting flavors that stand out in a crowded market. The story of Buzzard’s Roost started nearly two decades ago with one man’s goal to educate people about whiskey. From the opening of the first bourbon-focused bar - Bourbon’s Bistro to pioneering the idea of barrel selection for restaurants, Company Founder and Master Blender Jason Brauner has always been at the forefront of whiskey.
After taking part in more than a 100 barrel selections over his career, Jason is embarking on his most exciting challenge yet - Buzzard’s Roost Sippin’ Whiskey, a Rye he designed with the bourbon drinker in mind. His goal with Buzzard’s Roost is still the same as it was 19 years ago, to educate and share his love of whiskey.
THE PROCESS:
We start by sourcing the best aged whiskey we can find, but the real magic is in our barrels. We use only brand new, 53-gallon white oak barrels that are carefully toasted and very lightly charred. Each one is designed from the ground up to deliver a specific flavor profile.
We work closely with our cooperage to tweak every parameter of the barrel - from the seasoning to the charring to the development of our custom toast profiles. All of our barrels are unique and proprietary to our company, giving Buzzard’s Roost a truly one-of-a kind flavor. After resting only a few weeks in our new barrels, the whiskey is purposefully transformed and ready for bottling.

Since opening Bourbon's Bistro in 2005, Jason has had an active single barrel program allowing him to work side-by-side with many of Kentucky's leading master distillers. Through those relationships, he not only has gained a tremendous amount of knowledge but also garnered the respect of those distillers. Jim Rutledge says: “If I could pick an understudy for J.W. Rutledge Distillery when it gets going it would be Jason. That is how much I respect his passion and his palate”.
The knowledge gained through these distillers combined with his overall passion for the industry grew into a desire for Jason to go from just selling whiskey to making whiskey.

59: Kentucky Owl and Dixon Dedman

On this week’s episode, The Bourbon Lens travels to the historic Beaumont Inn in Harrodsburg, KY to sit down with Kentucky Owl Co-founder, Dixon Dedman. Dixon resurrected his great-great grandfather, Charles Mortimer Dedman’s whiskey brand that had fallen victim to prohibition in the early 1900’s. The Kentucky Owl name laid dormant until Dixon had the idea to revitalize the family brand.
Kick back and enjoy our conversation with Dixon, as we talk about growing up in his family’s Beaumont Inn, and the historic relevance of this Inn that his family has owned since 1919. Hear Dixon’s interesting tales of his great-great grandfather, C.M. Dedman, and what inspired him to bring back a brand that had been a family ghost for nearly 100 years. Dixon talks about what it takes to masterfully blend excellent whiskey and what the partnership with the SPI Group means for Kentucky Owl.

Recently, we had the opportunity to sample 6 single barrels from Western Spirits Beverage Company; you may remember our previous episode. This was all in preparation for their upcoming release ofSam Houston BourbonRelease No. 6. We were honored to be selected, along with several other “bourbon influencers”, to help provide feedback that would contribute to a final batch for Release No. 6, a 15 year old Kentucky Straight Bourbon Whiskey. Hamilton Distillers was born of a novel concept by former furniture producer and woodworker Stephen Paul. Paul observed the Velvet Mesquite, native to his home in Arizona’s Sonoran Desert, leftover from his woodworking and conceived to use this easily sourced, local wood to make a mesquited style of American Single Malt whiskey modeled after Scotch. About Dafne Mejia
Born in Los Angeles in 1992, Chef Dafne is the daughter of Suyapa and Luis, first generation immigrants from Honduras. Dafne started her career by following the American Dream, seeking to fulfill her parents’ hope for a better life in the land of opportunity. En route to becoming an OBGYN, Dafne attended SFSU where she was a biology major and quickly realized this was not her dream, but the dream of her parents.
From early in her childhood, Dafne’s creativity was what brought her the most joy. As she realized medicine was not her true passion, she made a bold transition and decided to follow her heart to the creative arts. Committed to forging her own destiny, Dafne enrolled in The Art Institute of California - San Francisco where she graduated with an Associates degree of Science in the Culinary Arts. During her education, Dafne started apprenticing under a Certified Master Chef, learning the art of cooking at the highest level for four years.
Moving back to Los Angeles in 2015, Dafne began cooking as a private chef for Aubrey ‘Drake’ Graham, a high profile assignment that catapulted her to a Sous Chef level. Following her time as a personal chef, Dafne was soon hired by a fine dining Vietnamese restaurant, allowing her to hone new skills, honor different traditions and discover a new level of respect for the sometime tedious process of cooking.
For most of her culinary career, Dafne’s primary love has been found in Italian cuisine. Her specialty, and most requested dish is born from the craft she’s perfected through more than ten thousand hours of meticulous work: Handmade Corn and Truffle Ravioli. Reminding her of her Latin American roots, Dafne fell in love with the culinary traditions of Italy as she proclaims, both cultures’ cuisines are “dominated by grandmas”. Following her passion for pasta, Dafne worked under many talented Italian Chefs, who all imparted their own expertise and artistry, ultimately inspiring Dafne to lean on her creativity in the kitchen.
In 2019 Dafne became the Executive Sous Chef at Spring Place, a private membership club in the heart of Beverly Hills. After helping to organize and build the restaurant from the ground up, Chef Dafne (and the rest of the culinary world) was rocked by the arrival of the pandemic. Though not discouraged for long, Chef Dafne was able to shift and once again, re-entered the private chef world.
While working as a private Chef Dafne was able to indulge in new found creativity, playing around with the culinary arts on her social media - creating captivating stories of her pasta making endeavors. It was through this that she began to gain some notoriety, and towards the end of 2021, Dafne was invited to partake in the world renowned cooking show, Hell’s Kitchen.

Louisville, Ky. (August 11, 2021) – Today, Old Forester Distilling Co. announces the release of the second expression in the 117 Series -- a blend of barrels from historic Warehouse K.
The 117 Series is a limited-expression lineup created in Spring 2021, directed by the unique palate of Old Forester Master Taster Jackie Zykan.
117 Series: Warehouse K features a blend of barrels aged on different floors from a warehouse known to produce exceptional liquid. Constructed in 1953, Warehouse K uses the time-honored tradition of heat-cycling and has long been one of Old Forester’s favorite places for Single Barrel expressions.
"Warehouse K has gained a cult following among bourbon connoisseurs,” Zykan said. “This blend is a representation across multiple floors and locations within this warehouse, giving a more holistic example of the profile its barrels yield."
This year marks Old Forester’s 151st anniversary, making it the only bourbon brand with an uninterrupted history, sold by the same family company before, during, and after Prohibition.

The Legacy of Brown-Forman begins with Old Forester - Old Forester Bourbon History & a Legacy of “Firsts”
1846 George Garvin Brown (GGB) was born in Munfordville, KY.
1870 GGB, a young pharmaceutical salesman starts J.T.S. Brown and Bro. with his half-brother with $5,500 in saved and borrowed money.
Old Forester becomes America’s First Bottled Bourbon, the first bourbon to be sold exclusively in sealed glass bottles to ensure quality and consistency, an innovative approach at a time when whisky is commonly sold by the barrel.
Their offices are housed at 322 W. Main Street
Old Forester was blended from different distilleries, including Mattingly, Atherton and Mellwood to create a consistent flavor profile. Old Forester is originally presented at 90 Proof.
Old Forester is named after a prominent physician and friend of GGB, Dr. William Forrester who endorsed Brown’s innovative concept of medicinal whisky sold only in sealed glass bottles. Old Forester, originally spelled with 2 “r”s to be associated with the doctor, drops the second “r” when Forrester retired.
1882-1919 Brown-Forman offices and bottling lines were housed at 125 W. Main Street (today 119 W. Main Street). Main Street was the hub of the bustling bourbon business in Kentucky, home to 89 distilling companies. Only one of those companies is still operating today – Brown-Forman and its founding brand, Old Forester.
1890 George Garvin Brown gifts first single barrel selection to then Governor of Kentucky, Simon Bolivar Buckner
1897 U.S. Bottled in Bond Act is enacted. Old Forester moves to 100 Proof to comply with regulations.
1901 George Garvin Brown moved from blender to distiller with the purchase of B.F. Mattingly Distillery.

2014 Brown-Forman announces plans for Old Forester distillery on Whiskey Row
2015 Fire on Whiskey Row; 119 W. Main was not fire damaged, it becomes a vital piece of support while structural integrity was restored to the entire block, delaying completion by about one year. (July 7, 2015)
2018 Old Forester Distilling Co. returns home to Whisky Row and opens at 119 W. Main Street, housed in the same building that the brand called home from 1882 – 1919.
Old Forester is the only bourbon continually sold by the same company before, during, and after Prohibition.
Old Forester distillery is the only downtown distillery which houses an active cooperage, charring barrels in the same facility where spirits are being aged.

About Greg Metze
Greg Metze, Master Distiller at Old Elk Distillery, has four decades of distilling experience, starting at the Joseph E. Seagram & Sons Distillery located in Lawrenceburg, Indiana, in 1978. He is considered one of the spirits industry’s premier master distillers and has had a hand in crafting many of the whiskies on the shelf today.
Greg’s connection to Old Elk traces back to the distillery’s inception. He was master distiller at MGP Ingredients when Old Elk Distillery asked him, in 2013, to create the signature mash bill for Old Elk Blended Straight Bourbon Whiskey thatwould bring to life the vision of Old Elk’s founder, Curt Richardson. With an unrestricted approach, Greg’s direction helped develop a custom mashbill with four times more malted barley than the conventional recipe.
After spending most of his career at Seagram & Sons (which later became LDI and then MGP Ingredients), Greg was offered the Master Distiller position at Old Elk. He joined Old Elk Distillery in 2016, marking the first time he has ever worked exclusively for one brand.
Greg and head distiller Kate Douglas developed Old Elk’s proprietary Slow CutTM proofing process, where the liquid is proofed down over an extended period of time instead of the traditional 24-48 hours. This results in less heat created during the proofing process, and thus a smoother tasting bourbon. All Old Elk whiskies, including this wheat whiskey, go through the Slow Cut™ proofing process.
While Greg quietly earned fame among whiskey enthusiasts as the master distiller behind many popular sourced whiskey brands, he now has a distillery and a legacy brand to call “home.”

The whiskies are married in Madeira Casks where they undergo the BLACK NOISE sonic-enhancement process using a playlist selected by both Master Distillers. It’s bottled at cask strength at 109.6 proof.

Castle & Key just released its 3rd installment of Restoration Rye, 2021 Batch #1. This batch was crafted from 80 barrels and was meant to highlight some notes that are perfect for summer whiskey drinking. We compare this 2021 release to Batch 1 from 2020 in this episode. Each batch of Restoration Rye Whiskey is blended using a series of pods. Each pod is created by grouping barrels to create a specific sensory profile. Restoration Rye features a mashbill of 63% Rye; 20% Malted Barley; 17% Yellow Corn. The new release continues to pay tribute to the restoration of the historic property, which was once the iconic Old Taylor Distillery, originally built over a century ago. The Restoration Rye 2021 Batch #1 is available for purchase at the distillery and in stores in Kentucky, Indiana, Tennessee, South Carolina, Texas and Georgia.
“With the first batch of Restoration Rye for 2021 being released just before the start of summer, it was blended with the intent of highlighting the softer notes of our Rye Whiskey. Many of the barrels chosen for this offering were those that expressed higher levels of fruity and floral esters and had lower levels of wood char and baking spice. This resulted in a smoother whiskey for the warm weather, to be enjoyed on its own or in a summer cocktail,” says Jon Brown, Quality Manager at Castle & Key.
The Restoration Rye 2021 release features one batch with unique flavor profiles created from a blend with 80 barrels. During the blending process, the barrels are grouped into pods with specific sensory profiles. Those pods are then blended to achieve the unique, high quality flavor profiles.

We're discussing a new style of whiskey for us, American Single Malt Whiskey. And who better to talk with than Westland Distillery, co-founders of the American Single Malt Whiskey Commission. We discuss what makes an American Single Malt Whiskey and the efforts to ratify a definition on a national level to protect the whiskey category.
We enjoyed 3 of Westland’s single malts; American Oak, Sherry Wood, and Peated. Made from 100% barley, American Single Malt Whiskey may not share a lot of similarities with Kentucky Bourbon, but we enjoyed exploring the style. The rise in interest of the category has developed a lot of unique offerings across the country to compete with bourbon and rye whiskey.
According to the American Single Malt Whiskey Commission, there are six standards of identity. An American single malt must be:
Made from 100% malted barley
Distilled entirely in one distillery
Mashed, distilled and matured in the U.S.
Matured in oak casks of a capacity not exceeding 700 litres

92: Bhakta Brandy - 50 Year Old Armagnac for Whiskey Lovers

Raj Peter Bhakta, the founder of WhistlePig and now Bhakta Farms, has left the world of rye whiskey and entered into the world of rare Armagnac brandy. Raj just introduced BHAKTA 50, a marriage of Argmanac’s he discovered with Vintages from 1868 - 1970. And he’s gone a step further and finished it in Islay casks. A complex spirit that is ideal for the curious whiskey lover. Sweet and smoky but not overly so, this finishing process for 50+ year old Armagnac is unlike anything else. Raj had us all on our toes for this episode and we were excited to explore something so rare and unique. And don’t miss the teaser for Raj’s next big project; his whiskey project, called Empire, a “global whiskey” coming out next year (2021).

Raj Peter Bhakta, founder of WhistlePig Whiskey and Bhakta Brandy, has a deep appreciation for rare and exquisite spirits—as well as a knack for bringing them to American attention. His success in rye established the category during a time when the industry overlooked it. Now, with BHAKTA, he is reviving another spirit: ancient Armagnac brandy, bottled stateside in Vermont.
Bhakta is a first generation American. Both of his parents are immigrants. Born in 1975 to a Gujarati father and an Irish mother, he grew up in the Philadelphia area and attended the Hill School in Pottstown, PA before graduating Boston College in 1998. After beginning his career with investment banking firm Violy & Co, Bhakta departed to found Automovia, a valuation tech startup for pre-owned vehicles. He also worked for a time in the family business, leading a condominium development project in Vail, CO.
While in Colorado in 2004, Bhakta scored a role on Trump’s nascent reality show The Apprentice, Season 2. His business prowess and theatrical antics helped him navigate, barter, and flirt to the ninth week before being fired by Trump. His charisma with women became fodder for gossip columns like New York Post’s Page Six, and his frequent wearing of bow ties was credited with a surge in the accessory’s popularity.
In 2006, Bhakta ran for U.S. Congress from Pennsylvania’s 13th district. His campaign gained national notoriety due to his television background and playboy reputation. In October, Bhakta protested US-Mexican border weakness by riding an elephant along the Rio Grande with a 6-man mariachi band. This garnered even more publicity, and by the end of his unsuccessful campaign, Bhakta appeared on MSNBC, CNN’s Crossfire, and Fox News.
After his defeat in 2007, Bhakta moved from Manhattan to seek green fields. He purchased a decrepit Vermont dairy farm and began searching for obscure spirits to market under his new brand WhistlePig. Acquiring stocks from Canadian distiller Alberta Premium, Bhakta partnered with master distiller Dave Pickerel and began bottling his 10-year rye in 2010. Praised nationwide, WhistlePig put rye back on the map and grew to America’s premier luxury whiskey in just a few years. After selling in 2019, Bhakta began a crusade for the world’s finest spirits.
On this journey, Bhakta stumbled on a stock of rare and exquisite Armagnacs in a Gers chateau. Distilled 1868-1970, the portfolio contains enough to bottle blends well over 50 years old. The vintages also predate Armagnac history’s largest crisis, the Great French Wine Blight, which devastated vineyards and changed grape varietals forever. The oldest brandies use only original cultivars, making them perhaps the only genuine Armagnacs left in existence. Bhakta, immediately enamored, negotiated a hefty purchase and brought them back home to Vermont.
With these assets, Bhakta is set to outdo his former ventures. BHAKTA 50 Year Brandy is older than any whiskey available and steeped in generations of small-scale craft. It also gets a unique Islay cask finish: the perfect marriage of brandy and Scotch. Bhakta has even put his own name on the bottle, showing just how proud he is of this magnum opus. BHAKTA offers a singular experience: brandy for the whiskey-lover. Just like he returned rye to the national spotlight, he’s now found a niche new spirit with its own distinct category.
Bhakta Brandy has just launched this 4th of July. Barrel 1 contains vintages 50-152 years old, with more released one-by-one this year. With only 38 total barrels, the $250 price tag seems impossible. As more barrels launch, demand will swiftly outpace his vanishing supply to create a fast-appreciating asset. Recall Bhakta’s BossHog Line and WhistlePig 111, which began at $111 and now sells for upwards of $2,300. For followers of these previous ventures, the upward potential in Bhakta’s liquid investment is easily tenable. The rest will have to taste and find out themselves if his unique brandy is worth the acclaim.

Matt has passion for exceptional whiskies that reflect the region where they were made. He has received a General Certificate in Distilling from the Institute of Brewing and Distilling in London, as well as a Postgraduate Diploma in Distilling from the International Center for Brewing and Distilling at Heriot-Watt University. Founded in 2010 and acquired by Remy-Cointreau in 2017, Seattle’s Westland Distillery brings a new and uniquely American voice to the world of single malt whiskey by exploring possibilities that have been ignored for generations. Trey Zoeller, Founder of Jefferson's Bourbon, joins us for a great evening enjoying two of Jefferson's popular offerings, Jefferson's Ocean Aged at Sea and Jefferson's Reserve Pritchard Hill Cabernet Cask Finish. We also talked about a little friedly competition between himself and Julian Van Winkle (of the Old Rip Van Winkle Distillery aka Pappy Van Winkle Bourbon) in the mid to late 1990s and early 2000s.

We discuss the "controversy" surrounding our pick for best whiskey from our 16 selections. We also discuss if larger bourbon producers, like Woodford Reserve and Jim Beam, have a stigma in the industry. We dive into another controversial product head on and debunk any negativity towards it. Bernie is a wealth of knowledge of all things bourbon and The Bottled-in-Bond Act of 1897. We attended a tasting event at Liquor Barn recently and we are reporting back on the event. We discuss the products we sampled and compared. We also discuss some of Bernie's insight into the recent news from Heaven Hill, 7 year Bottled-In-Bond. About Noah Neiman:
Exploding onto the New York City fitness scene in early 2011, Noah Neiman has made his presence known as a NYC household name. Noah was able to showcase his unique talents, personality, and passion for empowering others to the most discerning of fitness clientele.
Noah was diagnosed with ADHD at a young age and his childhood therapist told him when he feels stressed and out of control - that he should hit a pillow. He then turned that aggression to jiu jitsu as well as group fitness classes. In a deep depression and issue with male body dysmorphia in his 20s, Noah turned to drug use and after having a near death experience, he promised his family (in the hospital) that he would turn his life around.
Noah helped to co-found Rumble Boxing, which is a boxing-inspired group fitness concept that is a 45-minute, 10-round, full-body cardio and strength workout crafted around specially designed water-filled, teardrop-style boxing bags.

About the Whiskey:
North Carolina Straight Rye
Proof: 92 proof
Mash bill: 70% rye, 20% corn and 10% malted barley
Tasting Notes: Starts with light wood tones on the nose, almost like a kiss from the barrel. The palette comes through with some agave notes, then transitions into sweet rye cereal. The finish is subtle and sweet, with some medium pepper spices.
About the product: The story of the stave couldn’t be more evident than in the small batch rye whiskey we produce. Each batch is created using different pages of a stunningly beautiful story. You’ll fall in love with each chapter!
Bringing together our best 6-year-old barrels from our sister distillery here in North Carolina,
our rye whiskey is a grain-to-glass local product, showcasing what the ideal climate of the Piedmont region of North Carolina can do to a whiskey as it ages.
The constant large swing in daily temperature year-round forces the barrels to breath deeper and more often, allowing the whiskey to penetrate the grooves at a higher rate.
Tasting Notes: Starts with a nose full of pecans and buttered honey cake. Once it hits the palette, silky smooth toffee bar takes over. Then a lingering finish of butterscotch, leaving a light spice on the tongue.
About the product: This is Tom and Matt's heart. They are bourbon guys through and through and wanted to bring quality and creativity to the spirit, so they chose to pursue the four grain. As a rare find on the shelves, this style of bourbon brings depth and uniqueness.
Bringing together our best 4- to 6-year-old barrels from our sister distilleries in North Carolina and Kentucky
we batch them, let them get to know each other for 48 hours or so, then re-barrel them in the same barrels for additional aging.
Once we feel the barrels are ready and matured, we batch them one last time before proofing and bottling to 92-proof.

48: Taconic's Mizunara Finished Bourbon

From Buffalo Trace to The Big Apple. Brandon Collins, Head Distiller for Taconic Distillery, joins us for this week's episode of The Bourbon Lens. Brandon moved on from his role at one of the most recognizable distilleries in world to take on craft distilling in New York state. Taconic Distillery is located 90 miles north of New York City and is gaining ground by their willingness to experiment with excellent barrel finishes and their ability to produce high quality bourbon and rye whiskey. Brandon Collins Bio/Background: Raised in Carlisle, OH, Brandon grew up with a love of chemistry that eventually led to his passion for producing amazing whiskey. Brandon received a BS in Chemical Engineering at Ohio State University, where his studies included Brewing and Fermentation Science. After graduating college, he went on to hold a highly coveted Distillery Supervisor position at Buffalo Trace. During his tenure at Buffalo Trace, the oldest continuously operating distillery in the country, Buffalo Trace was named “Whiskey Distiller of the Year” in 2014 and “Brand Innovator of the Year” in 2015, by Whisky Magazine’s “Icons of Whisky America”.
During his travels Brandon developed a love for New York City, where he currently resides. When an opportunity arose at Long Island Spirits in 2017 he decided it was time to combine his two passions and relocate to New York. There he went on to produce a “Chairman’s Trophy Rye Whiskey” in the Ultimate Spirits Challenge.

Cody Matthews is Senior Vice President, for Truist Financial Corporation. He oversees the Louisville market and is responsible for the coordination and promotion of Truist’s image within the market. Since being named to this position in February 2020, Matthews has overseen commercial loan growth exceeding $310 million (108% growth) and commercial deposit growth of $279 million (70% growth). During his tenure, deposit market share for the Louisville MSA has grown $590 million (37% growth), taking 52bps of market share from competitors. Matthews was recognized as a Top Performer in 2023 with the CCB Performance Award. With more than 10 years of finance experience, he previously served as a CPA for BKD and Ernst and Young and owned his own financial planning practice with Northwestern Mutual.

Past guest, Mike Montgomery, re-joins Bourbon Lens to talk whiskey. Mike is the co-founder of Blue Run Spirits and previously appeared in Episode 115 and Episode 177 of Bourbon Lens. Mike is currently the Vice President of Spirits for the Molson Coors Beverage Company, which acquired Blue Run Spirits in mid-2023. Molson Coors is growing its spirits division and Blue Run is a big piece of that movement. Coors Spirits Co. was established in 2023 to house Molson Coors’ growing spirits division as part of the company’s shift from a beer company to a total beverage company. Molson Coors’ entry into spirits began with the 2021 launch of Five Trail Blended American Whiskey, which gained quick accolades that included Double Gold at the 2022 San Francisco World Spirits Competition. In spring 2023, the company added Barmen 1873 Bourbon (a reference to the hometown of Coors Brewing founder Adolph Coors and the year he established the brewery in Golden, Colo.) to its lineup. Troy Bolotnick is back for his encore appearance on Bourbon Lens to talk about Filmland Spirits. We discuss Filmland Spirits and their expanded lineup since his last visit, including the Extended Cut bottlings of Moonlight Mayhem and Ryes of the Robots. Extended Cut is the brand’s Cask Strength offering of their whiskies. Since his last appearance, Filmland has also debuted Town at the End of Tomorrow, a limited release 9 Year Kentucky Straight Bourbon. We’ll talk about what’s in the pipeline for the brand, including the possibility of some finished whiskey offerings and their growth / market expansion.

We're joined by American Whiskey Legend, Greg Metze, for this week's podcast. If you don't know his name yet, you'll definitely know his whiskey. Greg has decades of experience at one of the largest spirits producers in the United States; MGP in Lawrenceburg, Indiana. As part of his retirement planning, Greg decided to venture out on his own and develop products for the Old Elk Distillery, including the 3 we taste through in this episode.

Greg Metze, Master Distiller at Old Elk Distillery, has four decades of distilling experience, starting at the Joseph E. Seagram & Sons Distillery located in Lawrenceburg, Indiana, in 1978. He is considered one of the spirits industry’s premier master distillers and has had a hand in crafting many of the whiskies on the shelf today. Greg’s connection to Old Elk traces back to the distillery’s inception. He was master distiller at MGP Ingredients when Old Elk Distillery asked him, in 2013, to create the signature mash bill for Old Elk Blended Straight Bourbon Whiskey that would bring to life the vision of Old Elk’s founder, Curt Richardson.
With full creative control, Greg personally developed a custom mash bill with four times more malted barley than conventional bourbon recipes. Many of the barrels of liquid from that mash bill are still aging and are not yet on the market. Greg has personally overseen the production of several Old Elk products. Even though he was employed at MGP Ingredients when he started on the Old Elk project, Greg was entrusted with full leadership and creative control so he can speak to the quality that’s inside every bottle.Greg and head distiller Kate Douglas developed Old Elk’s proprietary Slow Cut™ proofing process, where the liquid is proofed down over a period of weeks instead of the traditional 24-48 hours. This results in less heat created during the proofing process, and thus a smoother tasting bourbon.
We really enjoyed our time with Greg and tasting through his whiskey creations. If you are looking for a unique whiskey, definitely seek out Old Elk. You will not be disappointed.

The Bourbon Lens is traveling to some Louisville hotspots over the next few months and we are stopping in one of the newest spots in NuLu (New Louisville). This week we are at The Local Seltzery as we gear up for Derby Week. This Seltzery is a high tech mixology bar which leverages unique natural flavors with booze and carbonated water to craft hard seltzers. And, just in time for Derby, they’ve added a Bourbon Mint Julep Seltzer to their lineup. We sit down with The Local Seltzery’s General Manager Tyler Sparkman as we discuss the concept of a Seltzery, the changing landscape of the booze business, and how a Seltzery is positioning itself in the heart of Bourbon Country.

Since joining Diageo as a Quality Technician in 2018 and being named a Master Blender in 2020, Samantha has blended a number of fan-favorite, high-quality whiskies including I.W. Harper 15 Year-Old and Bulleit Rye. In fact, her very first blend—I.W. Harper 15 Year-Old—won Double Gold at the San Francisco World Spirits Competition that same year.
Samantha initially uncovered her passion for working with whiskey while completing her senior thesis at Hanover College where she sped up the maturation process by rapidly aging the liquid to mimic a 4-year-old aged whiskey. After graduation, she received her Master’s in agriculture (with a focus in food science and management) from Washington State University and landed a position as a Quality Technician at Bulleit Bourbon Distillery.

Umberto was born in Milan, Italy into a small, tightly-knit family. Eugene, Oregon-based Wolf Spirit released its first foray into fine whiskey with the release of Puncher’s Chance® Kentucky Straight Bourbon in Fall 2020. Crafted through a partnership with IJW Whiskey Company of Louisville, Kentucky, Puncher’s Chance is now available at fine spirits retailers and online at $34.99 SRP for a 750 ml. Puncher’s Chance Kentucky Straight Bourbon is a five- and six-year-old blend of fine whiskies, crafted from a 75 percent corn, 13 percent rye and 12 percent barley mash bill and proprietary yeast. The liquid coming off the all-copper column still is aged in American white oak barrels with a #4 alligator char in traditional wood rickhouses. Clocking in at 90 proof, the final whiskey strikes the nose with aromas of apricot and maple oatmeal.

Aged for 12 years in traditional stone and wood rickhouses and finished in California Cabernet Sauvignon barrels, The D12TANCE is now available at fine spirits retailers at $120 SRP for a 750 ml.
Just 70 barrels of The D12TANCE, sourced from the IJW Whiskey Company in Louisville, Kentucky, were born from a mash bill of 84 percent corn, eight percent malt, eight percent rye and a proprietary yeast strain. With a complex aroma of vanilla, dark cherry fruit and toasted oak, this Tennessee Bourbon yields incredible flavor. At a respectable 96 proof, the warm hint of caramel and vanilla hits the palate first. As the proof gently fades, the tongue picks up a long, fruity finish reminiscent of the French Oak wine barrels in which the liquid rested for two months.

A big thank you this week to Bill Straub for inviting us into his home to share his whiskey with the The Bourbon Lens. We sat down with Bill Straub and Bob D'Antoni, co-founders of Four Gate Whiskey, and explored the history of their brand as well as their unique take on whiskey. Four Gate is known for its collaborations with Kelvin Cooperage, a craft barrel maker in Louisville Kentucky. Four Gate produces unique batches of barrel-finished, barrel proof, and limited release American Whiskey for bourbon and whiskey enthusiasts. They just released Batch 5 and it's safe to say that every batch is unique. As a small-scale blender, finisher, and bottler of whiskey, Four Gate is currently available in limited markets but is looking to grow its footprint. We discuss the business side of being a non-distilling whiskey producer and how they leverage their close relationship with one of the best craft barrel suppliers in the state.

Batch 1: The Kelvin Collaboration The first batch from Four Gate was the one that started it all for the company. They chose 14 of their oldest and most flavorful barrels of 11 year old whiskey and combined them into Kelvin's ex-sherry rum casks and let them age. The Mash Bill is 74% corn, 18% rye, 8% malted barley. 1732 bottles were released at 61.7%/123.4 Proof. Blend Selection Collaborators: Brian Haara (Bourbon author, aka “Sipp’nCorn,”) Owen Powell & Craig Rupprecht (Louisville Bourbon Hounds), William Hornaday (Kelvin Cooperage). MSRP: $199.99
Batch 2: Outer Loop Orbit Likely the most unique offering from Four Gate, a blend of 5.5 Year and 12 Year Kentucky Straight Bourbons. Then finished in Orange Curaçao-Gin Casks from Kelvin Cooperage. The two bourbons that were blended were a 5.5 Yr Mash Bill: 78% Corn, 10% Rye, 12% Malted Barley and a 12 Yr Mash Bill: 74% Corn, 18% Rye, 8% Malted Barley. Non-Chill Filtered and bottled at 120.3 Proof. 2,402 Bottles were released with an MSRP of $199.99.
Batch 3: Foundation This is a unfinished 9 Year, 9 Month Old Kentucky Straight Bourbon; Mash Bill: 75% Corn, 13% Rye, 12% Malted Barley. It is Non-Chill Filtered and bottled at 119.4 Proof. Only 748 Bottles were produced and it carries an MSRP of $199.99.
Batch 4: Split Stave™ by Kelvin The Split Stave is a creation of Kelvin Cooperage; Kelvin crafted a series of medium toast casks, then a series of #2 char casks, and finally a third series of #4 char casks. Then William Hornaday and his team at Kelvin broke all the barrels apart and rebuilt them, alternating between toasted staves and #2 char staves on some barrels, and toasted and #4 char staves on others, they have created the first ever “Split Stave™” barrels. It is a Kentucky Straight Bourbon Whiskey; consisting of a 5.5 Year Mash Bill: 78% Corn, 10% Rye, 12% Malted Barley and a 12 Year Mash Bill: 74% Corn, 18% Rye, 8% Malted Barley. The blend was rested in Split Stave™ barrels for five months. It is Non-Chill Filtered and bottled at 115.6 proof. Only 2700 bottles were released with an MSRP of $174.99.
Batch 5: Foundation #2 The second release of Foundation. This is the last of this whiskey the company will release, and only 590 total bottles were produced. It is a Kentucky Straight Bourbon Whiskey distilled from a mash bill consisting of 75% corn, 13% rye, and 12% malted barley, and checks in at 120.2 proof, and aged 9 years, 9 months.

The Story
O’Shaughnessy Distilling Company was founded with a belief that the spirit of family and friends, and our shared experiences together, provide us with deep connection and meaning in our lives. Our whiskey was created to celebrate the spirit of family, support our community, and leave a meaningful legacy for generations to come. Several years ago, cousins Patrick and Michael O’Shaughnessy, along with Michael’s father Gerry, were sharing a bottle of whiskey at the end of a long and joyous day at an O’Shaughnessy family reunion. They were reflecting on the importance of family; on how to make sure future generations stayed connected; and the legacy they wanted to leave.
As conversation went deeper into the night and more whiskey was poured, they had a realization: the answer was right there in the glass.
It was at that point they set out to create a whiskey that celebrated their Irish American heritage and the cousins set off to Ireland. They sent a chance email to whom they considered the finest Master Distiller in the world - Brian Nation – and much to their surprise, Brian responded and a meeting in Dublin was put on the books.
That 30-minute meeting turned into a 5-hour meal as Michael, Patrick, Brian, and his wife Una, created an immediate connection. A new family was forming, and a vision was emerging: to blend the best of Irish and American whiskey traditions to create something entirely new.
The Distillery
The team set out to make their vision a reality, and while they procured some of the finest stocks of aged whiskey, they knew they needed to make their own. They needed a place where Brian, the legendary Master Distiller responsible for making some of the most renowned products on the market, could fulfill his desire to innovate and push the category beyond expectations.
They began creating the O’Shaughnessy Distillery in an old potato factory right in the heart of their hometown of Minneapolis. At the heart of the world-class distillery are three beautiful copper pot stills, the key to making Irish style whiskey. The distillery opened to the public in Summer 2021 and boasts a guided education tour, a tasting room, multiple bar areas, private spaces for events, food service, and outdoor patio seating. The distillery is destined to become a home away from home for all whiskey lovers.
The 30,000 square foot distillery houses more than 15,000 square feet dedicated entirely to the whiskey making process, including the signature component: three wondrous copper pot stills(SHOW NOTE: 8000 Liter Wash Still, 6000 Liter Feints Still, 6000 Liter Spirits Still or approximately 2113 Gallon Wash Still, 1585 Gallon Feints Still, and 1585 Gallon Spirits Still). The remainder of the distillery is comprised of the Keeper’s Heart Whiskey Lounge, featuring unique shared spaces for people to come together and enjoy. From our Main Bar centered around our three copper pot stills, our Potato Bar, paying homage to our building’s history and our Irish American heritage as well as our outdoor Spirits Garden and Rooftop Terrace.

Scott wanted to bring his culinary experience to distillation by focusing on the ingredients to make a unique whiskey and experience.
Let us introduce you to Jimmy Red. Jimmy Red Bourbon is a 100% corn bourbon, but it's not what you may be thinking. Jimmy Red is the type of corn used to make this whiskey. It provides a rich, sweet and creamy taste that lingers on the palate and has an extremely viscous mouth feel and has a deep, dark amber color in the glass.
Scott walks us through the start-up process and why he chose to make his whiskies with 100% Jimmy Red corn. We have to be honest, we weren’t sure what to think when we received this bourbon made of 100% corn, but oh boy were we surprised! This would be a great whiskey to test your whiskey loving friends on, blind!

Jay Erisman is vice-president of strategic development and co-founder of New Riff Distilling. A home brewer who became a fine spirits expert and then a self-taught distiller, Erisman is nicknamed New Riff’s “chief blender and palate.” He focuses on grains and raw ingredients, cooperage, aging strategies, product development and regulatory compliance. An expert in pot still distillation, Erisman also spearheads the distillery’s gins. Previously, Erisman served as fine spirits manager at The Party Source.

The bourbon industry was hit with some bad news when a portion of a multi-story rickhouse collapsed at Owensboro's O.Z. Tyler Distillery. We discuss this and some other bourbon news in this week's episode. Facebook cracks down on bourbon sales and the bourbon secondary market is scrambling. The new visitor center for the Bulleit Distillery is opening on June 25, 2019 in Shelbyville Kentucky. 173: Bourbon and Blockchain with Party Horses NFT

They’re taking the bourbon craze into the world of crypto, blockchain, and NFT. Party Horses joins Bourbon Lens to demystify the NFT (non-fungible token) and discuss how the bourbon community can embrace the blockchain to gain exclusive access to rare bottles and once in a lifetime events. Party Horses co-founder Chris Wiedmar is our guest for this week’s episode. Party Horses is a collection of 3.2k NFTs on the Ethereum Mainnet. Their vision is to create a future where NFTs create access and special experiences in perpetuity, backed by great art and community. NFTs in this project are produced as generative artwork that lives on a blockchain. Using an Ethereum smart contract that is created through computer code, algorithms uniquely assign traits to each piece of art during a process called “minting.” The Party Horses NFT is an evolving NFT that will generate real-world benefits, from bottles of rare bourbon to exclusive event access.

We've created the world's first luxury RTD cocktail: the Gold Fashioned. It's impeccably sourced with split base whiskeys, our house-made saffron bitters blend, an orange atomizer and runs $150/btl. About Dan McKee:
Born and bred in Indiana, Michter’s Master Distiller Dan McKee moved to Kentucky to pursue his dream of making whiskey. He began his career in the bourbon industry as a Distillery Operator at Jim Beam Distillery in Clermont, Kentucky. After two years of hands-on experience making some of the industry’s leading bourbons and ryes, he was promoted to Distillery Supervisor at Booker Noe Distillery, where he worked for seven years. At that distillery, Dan reported to Pam Heilmann and gained valuable experience in all aspects of whiskey distilling. After being brought to Michter’s Distillery by Ms. Heilmann, he played an integral role in assisting with the construction of the company’s new Shively Distillery, and along with Ms. Heilmann and Andrea Wilson he built the company’s current production team. Dan has continued to expand the company’s operations with his work to bring Michter’s Fort Nelson distillery online with its legendary pot stills and cypress wood fermenters from the original Michter’s Pennsylvania operation. With his expertise in grain, Dan has played a key role in working with our local farmers to coordinate the planting schedules on Michter’s 205-acre parcel in Springfield, Kentucky. Having graduated from Indiana Wesleyan University, Dan serves as Michter’s technical representative on the Kentucky Distillers’ Association.
About Andrea Wilson:
Andrea is Michter's Master of Maturation as well as its Executive Vice President - General Manager. As Michter's Master of Maturation, Andrea manages barrel specifications, barrel procurement, heat cycling and temperature monitoring during aging, tracking maturation of barrels, whiskey filtration in preparation for bottling, and innovation to continue to improve the aging process. Becoming the first woman to ever serve as Chair of the Kentucky Distillers' Association is among the many honors achieved by Andrea during her illustrious career. Andrea is admired for her accomplishments in the whiskey industry and has been involved in all aspects of making Michter's whiskeys. Before joining Michter's, Andrea spent over ten years with Diageo in various whiskey related positions including Director of Distillation and Maturation, North America - overseeing both the U.S. and Canadian distillation and maturation programs. Prior to her departure from Diageo she was the company’s Director of Whiskey Strategy for North American operations. She holds a Master of Chemical Engineering degree from the University of Louisville, and she has been highlighted in the KET television documentary, Kentucky Bourbon Tales: Distilling the Family Business.
About Michter’s Process:
Cooperage We Pay Careful Attention to the Wood Used in the Construction of Our Barrels. We are specifying wood that has been thoroughly and properly dried, sometimes for as long as 18-48 months, in order to enhance the natural properties of the wood which allow for better flavor and to reduce the levels of tannin imparted to the whiskey.
Toasting & Charring The Barrels Made to Our Specifications Are Toasted Before Charring. Toasting a barrel before charring helps to make the wood’s sugars more accessible. These sugars caramelize and concentrate to form the "red line" in the barrel stave cross-sections due to the heat, ultimately adding more flavor and color to the whiskey as it seeps through the char to the caramel red line.
Low Entry Proof We Enter Our Rye and Bourbon Into Barrels at 103 Proof (51.5% ABV).Although the typical industry entry proof is 125 proof, we believe that the lower 103 proof (51.5% ABV) level – which was historically regarded as the gold standard in Kentucky – allows for the concentrated sugars in the toasted and charred wood to dissolve more readily into the distillate as it cycles in and out of the barrel. Even though the lower entry proof yields fewer bottles per barrel, we believe that the smooth flavor and richer mouthfeel makes it worth it.
Heat Cycling We Heat Cycle Our Barrels During Their Aging. The more often whiskey expands and contracts ("cycles") soaking in and then out of the wood of the barrel, the more flavor it absorbs from the sugars in the caramelized red line of the wood. Heat cycling is an uncommon practice used to raise and lower the temperatures in the barrel warehouses to induce extra cycles within a given year. This practice is extremely costly because heat cycling significantly increases the "Angel Share" evaporation during aging, but in most cases enhances the flavor of the whiskey.
Chill Filter At our distillery, we chill filter all of our whiskeys instead of using carbon filtration that can strip out flavor and aroma. Moreover, rather than use the one size fits all approach of many distillers, we use the different filtration mediums and techniques best suited to each of our individual whiskey offerings – despite it being time consuming and costly – to highlight each expression’s best qualities.

About Master Distiller Brian Prewitt:
Brian’s interest in the beverage industry was peaked when he landed a job at a brewery while attending Colorado State University obtaining his bachelor’s degree in food science.
Upon graduation, Prewitt further honed his interest for brewing and distilling by completing the Master Brewers Program at University of California, Davis. From there, he joined The Great Divide Brewing Company in Denver, Colo., eventually becoming its brewer.
When Prewitt saw an opportunity to try his hand at distilling spirits instead of beer, he jumped at the chance to join E&J Distilleries in Modesto, Calif. and was eventually named Senior Distiller. It was at E&J that Prewitt was able to train under two Master Distillers with a combined experience of more than 70 years in the art of distillation, learning about raw material selection, fermentation, distillation, and maturation.
Brian was named Master Distiller at the A. Smith Bowman Distillery in 2013, and he is excited to carry on the Bowman family tradition of award-winning products while introducing some new offerings as well.
A native of Colorado, Brian now lives in Fredericksburg, Va. with his wife and three children.
About A. Smith Bowman
Smith Bowman's distilling roots date back to the years before Prohibition when the Bowman family had a granary and dairy farm in Sunset Hills, Virginia. They used excess grain from the family estate to distill spirits. In 1934, after the Repeal of Prohibition, Abram Smith Bowman and his sons continued the family tradition and built a more modern distillery in Fairfax County, Virginia called Sunset Hills Farm. In honor of International Women's Day and Women's History Month, we sat down with a very influential woman in the Kentucky Bourbon world. Peggy Noe Stevens has played a huge role in crafting Kentucky's bourbon-ism culture and creating bourbon-centric experiences for many thousands of guests in her career. Even if you didn't know her name before today, you definitely know her work if you've ever traveled on the Kentucky Bourbon Trail.
Peggy Noe Stevens has written a new book to share her knowledge of hosting parties, entertaining, and pairing bourbons with meals in her latest book, “Which Fork Do I Use with My Bourbon?”, releasing in April 2020. Stevens, the first female master bourbon taster in the world, was recently inducted into the 2019 Bourbon HallofFame and the 2020 American Whisky Magazine Hall of Fame.
In the Mid-1990s, Stevens spearheaded opening the Woodford Reserve Homeplace and co-created the Kentucky Bourbon Trail, which now attracts more than 1 million visitors a year. She founded the Bourbon Women Association to provide an opportunity for women to network and learn. With her company Peggy Noe Stevens & Associates, she also builds distilleries around the country creating unique consumer experiences in food, beverage and tourism.

On a recent trip to Myrtle Beach we crossed paths with Jason Queen as he was working to promote his bourbon in South Carolina. Jason shared a bit of history with us and a whiskey too. That chance meeting and conversation inspired this latest episode of the Bourbon Lens Podcast. Jason, a serial entrepreneur and conservationist purchased Cook’s Mill, an old grist mill in order to restore this once thriving mill. About Jason Queen & The Brand
Cook's Mill Whiskey owner and founder Jason Queen is also the owner and broker at Monarch Realty in Raleigh, NC. Given his profession, Jason has an inherent interest in historic preservation, which he shares with his wife, Jeanne. For their 10th anniversary, Jason purchased Cook's Mill, an abandoned grist mill that acted as a community gathering place particularly during the Regulator Movement in the 1770s, from Preservation North Carolina so they could restore and preserve it together. While assessing the disrepair and the efforts needed to salvage and revitalize the mill, sacks of heirloom grain were discovered in the mill and inspected by the Agriculture Department of NC State. From there, the idea to reintroduce these heirloom grains to farmlands through whiskey production was born to celebrate the rural heritage of the mill and North Carolina.
The Story Behind Cook’s Mill Whiskey
Cook’s Mill Whiskey originated after founder Jason Queen, who is also the owner and broker at Monarch Realty in Raleigh, NC, purchased an abandoned 1700s grist mill from Preservation North Carolina, which is located halfway between where he and his wife grew up, as a 10-year anniversary gift for his wife. Both having an inherent interest in historic preservation, the idea was to restore and preserve the piece of history together. Inspired by other craft brands and his background in restaurants and hospitality, Queen decided to create a bourbon whiskey made from corn grown, harvested, distilled and bottled in the state - with a portion of the proceeds going back to the cost of restoring the mill.
The brand is named for that pre-Revolutionary Alamance County grist mill, which is one of only two remaining grist mills of the original 41 in Mebane County. Inspired by the proud tradition of farming and distillation in North Carolina, Cook’s Mill officially released in October 20202 after years of being kept a secret. A straight bourbon whiskey aged in new white-oak charred barrels, Cook’s Mill’s first iteration blends supreme flavor as a 3-year-old bourbon made with NC native corn and a dose of history.
Across the state, the team worked on farming myriad non-GMO heirloom corns native to NC to yield ideal bourbon whiskey flavor profiles. To do so, Queen and his team partnered with experts at NC State who have dedicated their careers to native NC heirloom corns. The team isolated seven heirloom corns housed in a university vault in small amounts and offered them to Queen and his team for them to grow.
“These are real true heirloom seeds, original genetic varieties of these corns, that we have unique ownership of,” says Queen, “and there are only like a handful of some of these corns. They’ve never been commoditized—you can’t get them out of a catalog.” In fact, he explains, they were probably used by the pre-Prohibition NC moonshiners and distillers—and allowed to go out of production because of the dense GMO corns that are so much easier to grow.

About The Chieftain:
Alastair Brogan has had a few lives: a Royal Air Force veteran, Vice President of the family business, ‘voted off’ reality TV star (internet it!), world traveler, and now owner/operator of Boulder Spirits by Vapor Distillery. While Alastair certainly could have stuck to the long, brittle winters of Scotland to pursue his lifelong dream and make whiskey at home, his sense of adventure and intrigue for innovation made not only the United States, but, most accordingly, Colorado the perfect place to settle. Upon commissioning a 1,000 gallon copper pot still from the famed Forsyths (one of the oldest still makers in the world), he packed up the caravan with the family at his side and found a home in Boulder, Colorado. This is a place that breeds adventure and innovation.
The Movement:
Unbeknownst to Alastair during his pursuit of whiskey, an entire movement was abrew. Since the day we filled our first freshly charred, virgin American Oak barrel with malt whiskey to the day that we filled our first bottle, the American Single Malt Whiskey category was born. Around the country, as well as the world, the taste for American Whiskey has grown. The thirst for Bourbon stays strong, but this country is great at many things, and innovation is absolutely one of our greatest. This innovative mindset shared by distillers in every corner of this country has created an entirely new set of flavors to explore; these flavors all begin with one common source: 100% malted barley. Currently, there are over 130 distilleries that have ventured into the American Single Malt Whiskey realm, each with as different of an approach to creating whiskey from each other as the next. Single malt whisky is made in many, many countries around the world, but only the United States utilizes the virgin American Oak as a standard. We believe that is the truest defining characteristic of American whiskey.
We take traditions from Al’s homeland, along with American ingenuity to find a balance that creates award winning whiskeys: distillers malted barley, a Scottish pot still, #3 char American White Oak barrels, aged in an arid, high elevation climate, and cut with the celebrated Eldorado Springs water. The distillery for Wild Turkey Bourbon is in Kentucky, situated on a deep limestone shelf on the Kentucky River. The shelf acts as a natural filter and provides the distillery with crystal clear water, vital to making such a high-quality product. Wild Turkey features the legendary father and son Master Distilling team of Jimmy and Eddie Russell, who have over 100 years of collective experience working at the Wild Turkey distillery.

About High West:
High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to a whiskey distillery in Kentucky. In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history.
High West began with humble roots, opening a small, 250-gallon still and Saloon in an historic livery stable and garage. What was once a small operation in downtown Park City has grown to be an internationally-recognized, award winning brand.
