Beers have been stored in wood for centuries.  Historically, it was simply a convenient water-tight vessel.  Today, brewers are using them because the wood itself adds character to the beer, whether it be subtle notes of the wood itself, flavors created by microbes living within the porous wood, or flavor fortification from spirits or wine previously held in those barrels.  Today, barrels can be considered ingredients themselves and brewers can use them to add depth and character to their beers.


But working with barrels can is time-consuming and unpredictable.  We talk with three brewers with substantial barrel programs about how they think about barrel-aged beer.

Right now around the world, the hops industry is in two modes: In the Northern Hemisphere, the hop farmers are prepping the poles for twine, making sure the bines that start to grow are the perfect plant to make the arduous climb up, and are preparing the farm for the busy season ahead.

While in the Southern Hemisphere, harvest has been over for weeks, so the hop farmers are composting, cleaning the kilns, and are taking a well deserved break. On this episode we talk to two hop farmers, Eric Desmarais of CLS Farms in Yakima, Washington and Andrew Sutherland, hop farmer at Oast House Farms in Upper Moutere, New Zealand about what they are currently doing around their farms and the differences seasonality makes.

After New England brewers changed the world of IPA, other brewers took note of the style, based on its popularity the new flavors the style provided. But as all inventive brewers do, they didn’t merely mimic the hazy IPAs coming from New England.  Instead, they further re-interpreted IPA, trying new hops, new yeast strains and even adding some bitterness back to the beer to satisfy their local palates. Other brewers have pushed the style to be bigger with double, triple and even quintuple hazy IPAs.

It is autumn in the southern hemisphere which means it is harvest time for hops south of the equator.  This episode of the All About Beer Podcast is all about New Zealand Hops.  Don and Em chat with Brent McGlashen of Mac Hops and Ron Beatson of NZ Hops.


Today, New Zealand hops are known for their tropical, fruity flavors, but it wasn’t always that way.  The McGlashen family itself has been growing hops for five generations and have watched New Zealand hops evolve from a commodity crop that was profitable based purely on maximum output, to the specialized, premium product it is today, highly sought by craft brewers around the world.


Much of that change is the result of hops breeding, which has improved the agronomics of hops, but also taken advantage of New Zealand’s unique soil and climate. Beatson is such a legendary hop breeder, they named a hop after him - Nectaron, but he is also responsible for breeding such legendary hops as Nelson Sauvin, Motueka and Riwaka. Beatson  discusses what makes New Zealand hops unique.

Attenuation is the consumption of sugar by yeast.  More attenuation means less residual sugar which generally means a drier beer … or does it?  A lot of factors come into play in how much attenuation a beer will undergo and that is only somewhat related to how dry or sweet that beer will be perceived by the drinker.

Pasteurization is a method of stabilizing beer through heat.  Although some people think pasteurization can negatively affect the flavor of beer, when used properly, pasteurization stabilizes and preserves flavors and gives brewers flexibility in the brewing process. And with the rise in popularity of non-alcoholic beer, which has less inherent preservative qualities, pasteurization not only keeps flavors stable, but is necessary to keep those beers free from pathogens.

Keith Villa, Ph.D., is a trailblazer in the beer and cannabis industries; and brewmaster and co-founder of Colorado-based CERIA Brewing Company, dedicated to brewing only alcohol-free beers. After earning his PhD in brewing from the University of Brussels in Belgium in the early 1990’s, an honor only a handful of brewers have achieved, Keith returned to the states with the idea of crafting beers inspired by Belgian styles, but with a twist.  He then began his 32-year career as founder and head brewmaster at Blue Moon Brewing Company, an operating unit of MillerCoors.

There’s no denying when “spooky season” comes around that pumpkin beers will be available. A popular autumnal seasonal, pumpkin beers are still a dominant force in “seasonality” in beer. Today we talk to two breweries who brew pumpkin beers with an eye to how they’re made, why they are a conversation starter and their lasting impact in the world of craft beer.

Chad Henderson is a NC native and original team member of NoDa Brewing Company.  He has been the head brewer for the Charlotte based brewery for the company's 12 year existence and is also Co-owner.  Chad's focus through the NoDa Brewing Company beers and products is to deliver a diverse array of exciting beers that range from traditional to experimental with an emphasis on quality and consistency.  The brewery releases new beers every week and has evolved to operate out of a 35,000 sq ft facility (that will soon be expanded to 50,000 sq ft) and a 60 bbl production system and a 5 bbl RnD system.  The brewery has won multiple major awards between World Beer Cup, GABF, US Open and many other local and national competitions.  Chad prides himself and team on being both a dependable brewery and one that is constantly looking for a new expression through beer while staying involved with the community through various charities and events.

Tyson Arp is Overlord of Brewing for Nebraska Brewing Company (NBC), overseeing operations at their production brewery.  His journey into craft beer began as a homebrewer in the early 2000’s and eventually he volunteered his way into an assistant brewer position at NBC in 2007.  Upon becoming Head Brewer in 2009, his focus on quality and process documentation quickly put NBC on the map as the most awarded brewery in the state.  Success of Tyson’s barrel aged products and expanding markets led NBC to open a packaging brewery in 2014 where Tyson was integral in the design, engineering, and implementation of the new facility.  Since then, continued focus on team building and process standardization has allowed Tyson more time to focus on product development and streamlining procedures throughout the brewery operations.

When you talk about America’s greatest beer cities, several names immediately enter the conversation. We always talk about Portland, Oregon, Asheville, North Carolina, Denver, Colorado, maybe even Chicago. But one name that always makes the list is our home for this episode, San Diego, California. Long an ambassador of great beer with breweries setting the style for the rest of the country and indeed the world, San Diego has a storied brewing history that I’m excited to explore today. I also can’t wait to talk with our two local experts today as it’s been about a decade since I last graced the sunny shores of southern California. 


To help us capture the essence of San Diego’s beer scene, we are joined by Jenny Mann and Brandon Hernandez. 


Beer writer and marketer Brandon Hernández has been deeply plugged into southern California beer for more than a decade. He has helped direct marketing at some of the area’s best known breweries, including Stone, Alesmith, and Societe. In 2019, the long-time writer decided to focus his efforts on creating a new interactive resource for fans of the area’s beer scene with the founding of San Diego Beer News. 

 

The site is a bit of a throwback to the earlier days of beer blogs and local brewspapers. Instead of doing deep dives into broad, weighty topics of national import, Brandon focuses on providing detailed and tangible information about San Diego breweries and beer bars. SD Beer News offers brewery maps, tap lists, interviews with local brewers and beer players, and lots of local beer news. 

 

A native San Diegan, Brandon is one of the most informed sources you’re going to find about that beer scene. 


When you research San Diego beer, Jenny Mann is one of those names that keeps coming up. For more than a decade she has worked for and with some of the top breweries and craft beer bars in the city. She has bartended, led brewery tours, taught draft beer maintenance programs, and helped breweries navigate the confusing world of social media. She is also a professional photographer who has captured many of the city’s breweries through her lens. Jenny is a brewery coach and well-regarded speaker who often presents to local brewery guilds. She and her partner recently departed for the Pacific Northwest but she still considers San Diego home and she has a wealth of knowledge to share.

About Garrett Oliver
Garrett Oliver is the brewmaster of The Brooklyn Brewery, the author of The Brewmaster’s Table, and the Editor-in-Chief of The Oxford Companion to Beer. He has been brewing craft beer since 1989 and is a veteran of over 1000 beer dinners and tastings in 16 countries. An original board member of Slow Food USA, he later went on to become a Councilor of Slow Food International. In 2014 Garrett was the recipient of the James Beard Award as the country's top drinks professional.  In 2020 he founded the Michael James Jackson Foundation for Brewing and Distilling (MJF), a 501(c)(3) grant-making non-profit organization that funds scholarships for technical education in the brewing and distilling fields for people of color. In 2022, Garrett was "enthroned" by the Knights of The Brewer's Fork of Belgium, descendants of the ancient brewer's guild.

21 Nov 2022Beer Travelers: Brooklyn with Courtney Iseman and Chris Maestro (Ep. 4)01:04:09

In this episode of Beer Travelers, we visit Brooklyn, New York, with its frenetic pace to its quiet neighborhood bars, and all the haze, lager, and sour beers you could ever want. 

Brooklyn was once one of the world’s great brewing centers. Home to nearly 50 breweries in 1900, the borough brewed a ton of beer under brands names like Schaefer, Rheingold, and many others lost to history. But that came to an end by the mid-1970s and the borough’s mashtuns went silent for the next 20 years. That was until 1987 when Steve Hindy Tom Potter decided to open up their own brewery in a warehouse district in Williamsburg. Named after the borough it inhabited, Brooklyn Brewery would go on to spread the word of craft beer around the globe and become one of the early pioneers of the resurgent modern American beer scene.


It took a while for brewing to catch on again in Brooklyn but slowly others opened, including Kelso and Sixpoint. And then there was the third wave of craft brewers, with names such as Other Half, Threes, and Finback. Today, Brooklyn's beer scene is top notch and the borough's bars and breweries make for an easy and exciting night out. 


After falling in love with it after my first visit, I trek down to Brooklyn a couple times a year including in December for an annual holiday themed pub and brewery crawl. It remains a favorite place to visit and drink and I look forward to exploring it with two great local experts.


Courtney Iseman is a freelance writer who has written engaging pieces for Vinepair, Craft Beer and Brewing, as well as her own newsletter, Hugging the Bar. She's a compelling voice in beer and has written extensively about everything from diversity and inclusion to her favorite local Brooklyn pubs, including about the bar owned by our second guest.

Biotransformation are flavor- and aroma-releasing reactions during brewery fermentation.  Lately, there has been much discussion of biotransformation in hoppy beers like IPAs where bound thiols are released when yeast interacts with them.  So hops provide not only bittering acids and flavorful oils, and yeast provides not only alcohol and esters, but the combination of yeast interacting with hop chemicals (and sometimes malt chemicals) produces new flavors.  New research into biotransformation is causing brewers to reexamine how they use hops, how they choose malts and how they ferment.

In the early days of craft beer, fruit was added to beer to offer something to people who didn’t like beer.  These beers were typically made with syrups added to a beer and not a lot of thought went into them.  Today, breweries are embracing fruit and building beers around them.  The fruit is the focal point of the flavor and with increased scientific knowledge of how to work with fruit, brewers are pushing and pulling levers - microbes used to ferment the beer, when they add the fruit and how much and for how long - to bring forward all the right flavor chemicals.  Modern fruit beer is bursting with flavor.

Bret Kollmann Baker is a founder and the COO of Urban Artifact in Cincinnati, Ohio. Urban Artifact is the countries largest fruit beer only brewery, using over 1,000,000 pounds of fruit per year. On this episode of the All About Beer podcast hosts Em Sauter and Don Tse dive into the wonderful world of Kolsch. 

Kölsch takes its name from the Cologne (Köln in German) dialect, which is known as Kölsch. The beer is a pale yellow, soft, refreshing ale, sometimes brewed with a touch of wheat malt and usually lightly hopped. It can be quite sweet from the malt or perhaps a bit more bitter from the hops, depending on the brewer. At a glance, a glass of kölsch can easily be mistaken for a standard pilsner, and perhaps that’s done on purpose in these modern times. Much like a pilsner, a typical kölsch is about 5 percent alcohol by volume in strength.

The only beer protected by the European Union, kölsch lays claim to an “appellation controllée.” At the Kölsch Convention in 1986, 24 breweries in Cologne and nearby towns agreed that a beer could only be called a “kölsch” if it met the following criteria:

1) Brewed in Cologne or the immediate area

2) Top fermented

3) Pale in color and clear

4) Filtered

5) Brewed between 11 and 14 degrees Plato (a brewer’s measuring unit)

6) Served in a 20-centiliter stange (a tall, narrow, straight-sided glass)

Pilsners have been enjoyed since their invention in Bohemia, now the Czech Republic, since their release in the fall of 1842. Since then, many iterations have been created and the pilsner has grown into one of the most beloved beer styles in the world. The beer continues to evolve and grow, with 21st century interpretations like the Italian pilsner to nods to the humble beginnings like using pitch lined wood barrels for aging. Brussels is widely acknowledged as one of the world’s greatest beer cities. But according to today’s guest, author, podcaster, and beer writer Eoghan Walsh, it’s a curious distinction for a town that until recently only had a single brewery. On this third episode of the Beer Travelers podcast, we dive deep into the history and current state of beer and brewing in Brussels, Belgium. Eoghan has a point. Beer lovers, especially those here in the US, tend to canonize Belgium and Brussels. We speak adoringly of its cafe culture, the care with which each beer is served. Much of that stems from the unique place that a brewery such as Cantillon holds in the hearts of all beer fans. But in reality, the history of beer in Brussels has been up and down for the better part of a century. Even in more recent decades, the city’s beer and brewing scenes have been in great peril. Assisted in part by that adoration of beer geeks from around the globe, and of course their tourist dollars, Brussels is making a comeback. And today Eoghan Walsh walks us through the city’s vibrant and curious brewing history and updates on the status of things today and what is to come in its future. Eoghan runs Brussels Beer City, a great website you should visit, and he’s the author of a book of the same name as well as the more recently published A History of Brussels Beer in 50 Objects. For more on those endeavors, I recommend listening to the podcast that Eoghan and I recorded together back in January on Beer Edge. But today, we’re talking about Brussels and its beer scene and culture. It’s an incredibly informative conversation and it left me excited to return to Brussels and visit some of the spots Eoghan talks about.

Spontaneous fermentation may be the most unique brewing technique in the world and the beers they produce are just as interesting, with many flavors not seen outside these styles. But “spontaneous” doesn't really tell you anything about what goes into making lambic, gueuze and American made versions from insane boiling hours to months and years waiting to see if the beer is actually any good to sell. Today we talk to two producers: one a classic lambic house from the Senne River Valley and the brewery that defined American sour brewing.

Werner Van Obberghen is one of the owners of Brouwerij 3 Fonteinen.

In 2013, Armand Debelder and Michaël Blancquaert called upon Werner to help shaping the future
of 3 Fonteinen. With his experience in strategy and with masters in finance and business economics,
he is now responsible with Michaël for managing 3 Fonteinen and its team of twenty. Michaël takes
care of the creative & operational side (brewing, blending, bottling, labelling) while Werner manages
the business side (administration, sales, marketing, tasting room).

Michaël and Werner continue the life-long craftmanship of Armand and – inspired by his values and
wishes – took 3 Fonteinen a step further. Longer barrel ageing, a local cereal and hop collective with
farmers, a network of families with Schaarbeekse sour cherries, a direct relation with some of the
most progressive biodynamic wine makers are just a few examples.


Jeffrey Stuffings grew up on the gulf coast of Florida. He studied government at Notre Dame and law at Boston College. While in law school, he discovered homebrewing and craft beer. He and his wife Amber moved to Texas 2007. Shortly thereafter, Jeff began working on starting Jester King with Amber (co-founder) and brother Michael Steffing (co-founder). 

Today, Jeffrey focuses on beer making and Jester King’s operations. He and Amber live in the Dripping Springs, Texas area and have two children Laura and George.

The French Pilsner is a beer style that some craft lager focused breweries have been making lately, especially throughout America.

Oregon is pretty close to my own personal idea of perfection. It has a little bit of everything, from vibrant, engaging cities, to sweeping, picturesque coastlines, and mountain high deserts. While the landscape is fascinating, the people and the culture might surpass it. Tucked into the northwestern corner of this Pacific Northwest gem of a state is a city with an outsized beer reputation. Today we’re exploring Portland, Oregon. Known for its outdoor friendly lifestyle, craft breweries, coffee scene, and the looming presence of nearby Mount Hood, Portland is vibrant, lively, and full of character and characters. 


And in this episode, we explore not only the great local beer scene but the cast of characters who have put Portland firmly in the center of any discussion about the world’s greatest beer cities. And to do so, we’re joined today by perhaps the two best sources for the local beer scene.


Jeff Alworth is a long-time beer writer, author of several books, including The Beer Bible, and the co-host of the Beervana Podcast. He has taught courses about beer and the business of beer and has freelanced for a bunch of publications. He is also one of the last beer bloggers standing. Jeff frequently posts his thoughts on beer, culture, and business at his award-winning blog, Beervana. He is a passionate advocate for all things Portland beer and we’re lucky to have him this week to help guide us. 


Our second guest is Ezra Johnson-Greenough, who is the founder of The New School, which is a great webmagazine covering beer and cider in Oregon and Washington. New School is the kind of resource that every beer loving region would be lucky to have and as Jeff says, Ezra is the most plugged in source to the beer happenings in Portland you’ll find.
