Fast Five - Larry Willis from The Gables Wine Country Inn

Cloud Souffle

2 eggs

2 tbsp cheddar

1 tbsp tomato

1 tbsp shallot

Cream/butter (just a splash)

Let eggs come to room temp, separate whites/yolks

Sautee tomato and shallot in a little olive oil

Put whites in a mixer (beater attachment preferred) with some salt

Grab an oven-safe ramekin and coat the inside with some cooking spray and a small sprinkle of flour

Spoon about half the egg white into ramekin and make indentation that is big enough to hold egg yolk and tomato/shallot - scoop the tomato/shallot mixture into the indentation, then put egg yolks over the mixture, then the cheddar, then splash of cream/butter, then top with the remaining egg whites

Put in 400 degree oven for 12 minutes - serve with toast - you can make this on your own or get it at the Gables!

Fast Five: Coco, co-host of Rockin' Vino

Healthy Oatmeal Chocolate Chip Cookies (Vegan optional!)
Ingredients:
-Bananas
-Applesauce
-Oats
-Milk (almond or otherwise is fine too!)
-Vanilla
-Chocolate Chips
-Cinnamon

Set oven to 325
Mash up the bananas, then you put in the applesauce, some oats, a little bit of
milk and vanilla, and just mix it all together and then add in, like if you wanted to add cinnamon, which I always do, and then add in your chocolate chips once everything is mixed in. And then you put it on a pan, smash it down a little bit, and bake it for about 15 minutes or so, and they come out delicious.

SHOW NOTES

0:52 Wine of the Day –2017 Woodenhead Pinot Noir, Buena Tierra Vineyard, E Block, Clone 115. Will be released soon.

2:27 The meaning behind the name woodenhead – it’s both a vine term but also more about Nikolai’s stubbornness. ;-)

4:10 Born and raised in SF and Nikolai’s parents used to come to the Russian River when he was a child. He had a variety of jobs and then while working at Spears Market in Forestville he met Ed Selyem and he started working with Ed and his partner Bert. Nikolai ended up working at Williams Selyem for 17 years.

5:54 Entered the Greenwood Ridge World Wine Tasting Championships coached by Ed, Nikolai came in second place tasting competition with his tasting partner.

7:12 Book of the Day The Concise Guide to Wine and Blind Tasting by Neel Burton.

8:10 Nikolai started Woodenhead in 1999.

10:55 Woodenhead tasting room is on River Road a rustic and welcoming spot with flights of the day for tasting. Experience the chill and kicked back vibe at Woodenhead. Portfolio is focused on Pinot Noir but Nikolai likes to experiment and play with other grapes. Makes Sparkling too. Wines usually in barrel 17-18 months, which is not typical.

Wines made to age.

16:42 Woodenhead does open top fermenting, which is apart from most others.

18:53 Ask Nikolai his opinion on natural wine if you dare… ;-)

20:46 Nikolai says you don’t need a degree to make wine –it’s intuitive and you can do it if you follow your instincts.

22:22 Fast Five Recipe –Vinegar Chicken with Crushed Olive Dressing– From Marcy Gordon, Wine Road co-host

Ingredients: 3 pounds Chicken Thighs (bone in) ½ cup white vinegar, 2 teaspoons ground turmeric, 8 tablespoons olive oil, 1 ½ cups mixed olives (pitted).

1:00 Wine of the Day – 2020 Malvazia Nera from Sunce Winery. It’s the perfect breakfast wine.

1:45 Sunce just started their 33st consecutive harvest. Cheers to that!

3:21 Janae recently drove through Italy on a family vacation and discovered an amazing bottle of Malvazia Nera.

6:45 Sunce means sun or sunshine in Serbo–Croatian.

9:48 Sunce is a “backyard winery” with family home there and has been a great way to raise a family.

10:49 Sunce is located on Olivet Road, which is a great place to spend the day with a variety of wineries from large to small established there.

12:50 Sunce is relaxing place to visit with outdoor seating and Bocce courts too. Tasting room closed Tuesday and Wednesday (the trend now) which gives the family some balance and time to spend on their boat off the winery “compound”.

17:24 Fast Five Recipe –Linda’s Salad– From Mysty Stewart, Wine Road PR Manger

Ingredients: 1 head butter lettuce, crumbled blue cheese, 1 chopped pear, ½ cup chopped walnuts and cranberries.

Directions: Throw all together in a bowl and use raspberry vinaigrette or poppy seed dressing. Easy peasy and delicious!

19:54 New at the winery, in addition to being closed on Tuesday and Wednesday, now charging for tasting and the experience is designed by the customer with over 40 wines to taste and evaluate. Also offering charcuterie, with advance notice.

23:25 Sunce accepts reservations but also welcomes drop-ins at the winery.

26:10 Janae and family travel to Croatia every year to husband and winemaker Frane Franicevic’s home, a small fishing village in Croatia on Hvar Island. Wine Club members have the option to stay at the apartments on Hvar.

28:06 Visiting Sunce is a relaxing experience and it’s all about you and what you want to create of the experience with your friends. It’s time to start getting out and enjoying yourself again.

16 May 2024Carol Shelton, Winemaker and Owner of Carol Shelton Wines00:38:47

Episode 201

Sponsored by: River Road Family Vineyards and Winery

Carol Shelton, Winemaker and Owner of Carol Shelton Wines

Today we are joined by renowned winemaker Carol Shelton! We delve into her favorites- currently, the 2022 Coquille Blanc and Wild Thing Rendezvous Rosé, discussing their distinctive winemaking processes. She emphasizes the critical role barrel selection plays in shaping the wines' flavor profiles and highlights the richness of her wines through food pairing, providing a recipe for an asparagus tart that beautifully complements the Coquille Blanc.

Wines of the Day:

Carol Shelton 2022 Coquille Blanc

Wild Thing 2023 Rendezvous Rosé

Fast Five: Carol's "Asparagus Tart" - Or Fancy Pizza :)

Instructions from Carol herself:

Here are the FIVE (sort of, I cheated a bit):
1 roll of crescent roll dough (or puff pastry if you have to be fancy)
2 T. Dijon mustard
2 c. freshly grated gruyère cheese (or fontina or asiago)
1 # very skinny asparagus, tough ends snapped or cut off, then cut into 1” lengths
½ c. freshly grated parmesan cheese
A squeeze of fresh lemon juice and its zest (optional)
A sprinkling of Herbes de Provence (optional)

Preheat oven to 400°F.
Flatten out crescent roll dough into a rectangle (approx. 12”x9”) on parchment paper on a sheet pan.
Prick it all over with a fork (called “docking it”).  Spread the mustard evenly over the docked dough.
Sprinkle grated gruyère over crust, avoiding edges so it won’t bubble over when hot.
Lay asparagus over the bed of cheese and sprinkle herbs, parmesan and lemon juice/zest on top.
You can make a nice pattern of the asparagus if you want to get fancy!
Bake at 400°F for 15-20 min or until pastry edges are brown and crispy and cheese is melted.
Cut into squares and serve—top with a squeeze of balsamic glaze if desired.

Once pasta is to al-dente readiness, scoop it out and throw it into the bowl with the dressing. Add a little bit of pasta water if it needs to loosen up. And THAT’S IT. :)
