As I've already had some guests on the show, who had a strong opinion about different approaches to farming and certifications, I've decided to highlight the topic of sustainability in this episode. Although sustainable certifications don't enjoy the glorious reputation of the biodynamic or even organic ones, I think it deserves our attention and understanding. For this reason, I invited Mr. Franz Rosner, research coordinator at the Federal Institute of Viticulture and Fruit Production in the Austrian Klosterneuburg. He spoke on behalf of the 'Sustainable Austria' label, which is a national certification, specializing in viticulture. He told me how sustainability is a more holistic approach, not only focusing on agriculture, and how this approach is considering for example CO2 emissions or energy usage as well. He elaborated on why winemakers should go for both sustainable and organic certification at the same time, and how growers could use their set of numerous criteria for self-development year by year. Fascinating topic and an eye-opening conversation. And I can certainly recommend this episode to fellow WSET Diploma students who might write their D6 assignment about the topic of sustainability. This episode is one that I’ve been waiting for in the last couple years already. If you want to become a better blind taster, Nick Jackson’s book: Beyond Flavour is a must have in your library. Nick is a young British Master of Wine who studied Theology in Cambridge and now lives in the sunny Florida, where he imports artisanal European wines, helps private wine collectors and much more. In many ways, his approach to tasting is a rather unique, but most certainly a helpful one. But I let him explain the origin story and methodology of the ‘Tasting by Structure’ approach. We talked about the major updates in the second edition of his book, about minerality, sapidity and the two-texture situation. You hear his criteria for selecting recommended producers, his take on the Florida wine market and of course: how to understand varieties. The 'von der Vogelwaide' winery counts almost as a rebellion in almost every sense in the region of Wachau. They only use native yeast, planted Syrah, make cuvées instead of single varietal wines, don’t show the vineyard or the ripeness level on the label, vinify in small oak, not afraid of malolactic fermentation, you get the point. They are also one of the few gay vintner couples in the country and they built up their successful winery like a true start-up in the last couple of years by recultivating steep vineyards in often abandoned territories. I love to see more diversity in the Wachau as much as I admire the courage and perseverance of these two guys to bring a new taste to this wonderful region. Enjoy! Anton Longo is a motivated young man who took over historic vineyards to produce world class wines in Alto Adige. During our hours long visit I´ve had the impression that this gentleman has well-defined goals with his wines, with his line-up and he wants his Baron Longo label to be among the bests in the world. In my humble opinion, he deserves our attention as he is on a good path to leave a mark on his region. We've talked about his favourite variety, we drank his flagship and painfully limited wines. Ivano Cobelli creates memorable wines with his two older brothers about 15 minutes away from Trento, Northern Italy. The organic Cobelli vineyards are less than 5 hectares in size and located on a chalk plain, which is actually very untypical to the region, so it imparts an unmatchable character to their wines. This interview was recorded on the 30th of May after we spent a magical afternoon with Sebastian Schiller in the outskirts of Stuttgart. Sebastian is the leader of Germany’s first crowdfounded winery | KSK Vintage Winery | which builds on his inherited vineyards in the Stuttgart-Rohracker area. Sebastian also left us plant some PIWI varieties in his little experimental vine museum before we drank some “Portonic” together between his vines. He also showed us their little “Hütte”/cottage, where we ended up tasting more of his wines during the actual recording. So in this episode, you can learn about working with PIWI varieties, and why they might be easier to integrate into the organic/biodynamic viticulture. Sebastian also explains why his way of working the vineyards creates more transparency and requires a lot more handwork. Since he is also a passionate “Port wine” maker, he explains why his style of fortified wines is fresher and more “wineish” than those from Portugal. This recording begins without any official starting, but I hope that this little introduction will fill in that gap for you. Tamás, the man behind the 'Somlói Vándor' wines, welcomed us in his tasting room built from rocks of the volcanic hill and portrayed the philosophy behind winemaking on this unique “Witness Mountain”. We tasted three impressive whites from his cellar together, which have proved the special character of the hill as well as its flagship variety, the Juhfark! Furthermore, you can hear the legend of the “wedding night wine” and why Tamas doesn’t believe in it anymore, the typicity of vineyards on all four sides of the mountain, best food matches with these smoky wines and as always: much more! In my eyes, Tamas is a young, authentic and honest winemaker, who takes care of the heritage of this exceptional terroir, and calls it “the most volcanic of all”!

We were lucky enough to visit another great wine castle in the Württemberg wine region: the Jürgen Ellwanger winery, from Winterbach. I sat down with Felix Ellwanger in a charmed garden-setting while tasting one great wine after the other. You can learn about the HADES project, Schwaben barrels, great ‘GG’ vineyards, local vinegrowing history, why German whites are easier to sell at the moment than reds, why Lemberger (Blaufränkisch) could be a big chance for Württemberg, about the rare variety: Kerner, and why Felix thinks you can not make great wines like machines. This is Felix’s idea of a great wine: “It doesn’t happen very often, but do you know that moment when you drink a wine, and you have to smile. Not because it’s funny, but because it’s wonderful.” I also smiled after tasting 8 wines from his cellar, so I hope you also have a great wine ghost at hand and can relax while listening to this week’s episode.

he 25th episode features another outstanding wine wizard from Swabia, Baden-Württemberg, Southern Germany. Jochen Beurer’s Rieslings and Lembergers are true benchmarks. Site-specific, terroir-driven, mashed by feet, brought to life by native yeast. The Beurer vines have been cultivated organically since 2004, and then became a leading force in the biodynamic movement in Württemberg. You can learn about various sandstone types like “Schilfsanstein” or “Stubensandstein” and how they affect the vines. Jochen justifies why biodynamic vines have a stronger immune system, explains the philosophy behind his “vine-museum”, and the probable reasons why his long-macerated Rieslings gave us goosebumps. Jochen is an amusing and truly knowledgeable winemaker, so it was a real pleasure to spend an afternoon with him in his exceptional vineyards, cellar and tasting room.

There is a winery in the tiny village of Pünderich in Germany, at the fringe of the Middle Mosel and the steeper Terassen Mosel, bearing the name of an experienced, benevolent winemaker: Clemens Busch. Mr. Busch started to work organically more than 40 years ago and was one of the founding fathers of the ’first group of organic producers in Germany’, which was the requisite step towards the biodynamic revolution seen amongst some of the best producers in the country these days. The majority of his wines are still ungrafted, terraced and a number of them have even heard the cannons fired during the First World War. The Busch wines don’t follow the anticipated Mosel taste, but rather expresses the unmatchable “Busch-style” from all three major slate profiles found in the Mosel region. I’ve had one of the best Rieslings in my life during this conversation, so I urge you to find yours in the Clemens Busch portfolio and stock up on them for your grandchildren. Enjoy.

Tasting starts at 9:30 | e-mail: infowineghosts@gmail.com | @wineghosts on Instagram | The first blind tasting or as I like to call it ghost tasting episode is up in the air! This more casual series will not only cover my tasting impressions and slurping, but I’ll try to give some simple guidelines to trace the stories in the glass and link them to the rather hard facts about the specific grape varieties, wine regions, production methods and other key factors. I wanted to show the many faces of German Rieslings. So the first episode is about two Rieslings, more specifically one from the cooler Mosel, from Markus Molitor, and one from the more Southern Württemberg, from the Albrecht Kiessling winery. Similar price level, at about 10 Euros, and from the same vintage: 2018. Riesling is a truly expressive grape variety and likes to reflect on its birthplace. Although German Rieslings are somewhat the cornerstone for any winemaker, the style of German Rieslings is nowhere close to uniform. As a conclusion: Mosel reflected its terroir with striking electricity, some residual sugar, flintiness and linear acid structure. The Riesling from Württemberg was more rounded, with a greater body, less acidity, and left a mouthfeel of orange oil, and ripe stone fruits.

Today’s guest is Simon Gattinger, a 22-year old winemaker from the Wachau Valley, Austria. He inherited precious vineyard sites on the Eastern side of the valley and took the courage to establish his own wine label a couple of years ago. He shared his plans and main considerations behind his new plantings, revealed some secrets about the precious soil compositions of the Wachau, and emphasized the importance of recently becoming a member of the Vinea Wachau. We also tasted his three nuanced wines via Skype together while Simon explained his winemaking philosophy and gave some tips for interesting wine pairings. This is the second episode from the Balaton Uplands series. After the Somló Hill, we go south and I sat down with the young Endre Szászi on the Saint George Hill. Endre is a second-generation winemaker at the Szászi Winery, which has been making wine organically since its beginnings. Endre tells us about organic farming methods and its peculiarities on their parcels, and introduces us to their specific terroir and native varieties like the Rózsakő or the Kéknyelű. He shares the legend of the nearby rose-stone, goes deep on Olaszrizling and explains why this grape became the region’s flagship variety. Riesling from Württemberg? Oh yes! Although the Rems valley, “Remstal”, has a long tradition of producing excellent Rieslings, it still remains a hidden gem for most Riesling lovers worldwide. This time, I was lucky enough to talk to one of the best producers in the area: Moritz Haidle from the Karl Haidle Winery. After a meaningful ‘father and son conversation’, Moritz chose to follow his ancestors' path instead of a design career, and took over the winery from his father in 2014. Since then, they have become certified organic farmers and they are in transition to a biodynamic one. He has also been aiming to minimize new oak influences in his wines and reduce the overall alcohol content in his portfolio. 40 years ago, his father also pioneered in creating world-class Lembergers, which is the same grape as Blaufränkisch or Kékfrankos, and Moritz has been continuing on this path ever since. We also tasted three of his wonderful wines together via skype, and talked about their terroir, barrel-usage, how his grapes have found some sort of inner peace recently, how the climate changes, about his Trollinger Pet Nat and as always: much more! I spoke to Frank Dinter and Christian Braunewell from the Braunewell Dinter winery, Rheinhessen, Germany about the origin story of the tasty wine ghost and the vision of making an age-worthy, international top-level Rosé in Germany. The Braunewell Dinter ‘der Rosé’ is an outstanding wine from the packaging till the assemblage and vinification. The gentlemen reveal why the Pinot Noir, St. Laurent, Merlot cuvée works best for them, as well as explained the importance of barrel usage and spontaneous fermentation. Mr. Braunewell also exposes one of the great secrets of the world: how a rosé wine can be made?! So stay tuned if that question still needs to be clearly answered in your book. After a long break, I proudly present you a podcast that is certainly something else. This time you hear Aron and Karina from the Pap Wines winery that makes biodynamic, low intervention "garage wines" on the Northern side of the Lake Balaton in Hungary. We've recorded this episode on an ancient volcano, the Szent György hill. I've already visited three outstanding vintners on this magical hill in 2019: the Bencze, Gilvesy and Szászi winery. At Pap wines, we've recorded these sequences almost during a whole day at the end of May this year, when we were finally allowed to travel back home again. You will hear that the recordings take place in the vineyards, in the tiny garage-like cellar as well in the artistic kitchen after a fabulous vegetarian dinner cooked by Aron. My friend, an utterly talented photographer and video creator, Kornél Simon, also accompanied us on this journey and filmed the dreamy landscape around the vineyards and the unique surroundings in and around the house, so expect some memorable image video coming out on our channels soon. The Nikolaihof is one of the benchmark estates worldwide if you are looking for great, age-worthy white wines with character. This is the oldest estate in Austria, lying on the right bank of the River Danube in Mautern, in the beautiful Wachau. The estate is led by the Saahs family for more than 120 years now and working biodynamically since the 70s already. 2021’s first Remstal visit led me to Strümpfelbach, to Andi Knauß. He is also one of those young vintners in this sub-region of Württemberg who represents this wonderful terroir to the World with memorable and distinctive wines. After taking a picturesque vineyard tour, Andi welcomed us in his idyllic home below nearby vineyards, surrounded by newborn sheeps and orchard trees. He told us how working with Austrian Blaufränkisch influenced his Lemberger making, or which grape variety will play a bigger role in his vineyards in the future. Among others, we’ve also tasted his stunning village level Riesling, his elegant Pinot Noir (Spätburgunder), exciting-spicy Chardonnay and two characterful, single-vineyard Lembergers. Organic farming, low-intervention winemaking, lees ageing, restrained oak usage. I love that. Additionally, we talk about my fetish for native yeast and how Andi’s spontaneous fermentation takes a mark on all his wines, and which wine styles tend to give me the most inspiration. This episode will take you to the sunny Serralada de Marina Natural Park just 20 minutes North of Barcelona, and your tour guide will be Mireia Pujol-Busquets Guillén from the Alta Alella winery. This family-owned winery has been cultivating this picturesque land organically for about 30 years now, and concentrates on Cavas, natural wines, local grape varieties, in addition to conserving the natural habitat around the avant-garde facilities. We’ve started our virtual tasting with the newest vintage of ‘Bruant’ which was the first-ever Cava made without any added sulphur 15 years ago. Mireia also explained the brand new regulations and classification for Cava before tasting two other wonderful naturals: a lively Monastrell/Mataró/Mourvèdre (a whole new face of the variety here) and a single varietal Pansa Blanca/Xarel.lo natural which was partially fermented in ‘Sauló’ amphoras, as an homage to the distinct granitic soil composition found beneath the vines themselves. The 50th is always something remarkable, especially with refreshing vibrations. And that’s also the case with the celebratory 50th Wine Ghosts podcast at Domaine Lassak. We’ve visited Steffi and Fabian Lassak in their Hessigheim wine castle to indulge in marvelous Riesling, Lemberger and Pinot Noir barrel samples. First, they’ve shown us their gorgeous vineyard sites hallmarked by shell limestone underbelly. Their organic sites are low-yielding with great air flows, varying exposures and party planted with Massale Selections from Burgundy. What can I say?! The Lassak wines amazed me even if their “unmatured” phase, already bursting from spice, individuality, and density. It was always harder to spit.. Wise and attentive winemaking with extended lees ageing, spontaneous fermentation, seasoned oak casks, parcel-selected batches in its toolbox. That was the first podcast scenery, where I almost had to beg to get my hands on some wines for my cherished collection as they’ve sold out well in advance (and for a good reason). You can find selected clips on the Wine Ghosts Youtube channel where Steffi and Fabian are describing three of their vineyard sites on-the-spot under the Hessigheim Sun as well as some tasting moments in their 500-years-old cellar. The podcast starts without any official introduction after returning from the vineyards, already slurping on the first Riesling.

Wine Ghosts contact: Instagram:@wineghosts | e-mail: infowineghosts@gmail.com This is the second 'Ghost/Blind Tasting' episode, and this time I chose the variety: Sauvignon Blanc. This one of the most planted and most favoured grape varieties on the planet. You can find this variety in multiple different styles from Chile to the Loire Valley. I've picked these two wines, from the Western part of Hungary and the Eastern part of Austria, because their origins are not so different geographically and climatically, but very much different in terms of winemaking. This great variation shows the great versatility of the 'Old World' Sauvignon Blanc. As a conclusion: The Rauch wine from Styria is a typical reductive style, ester-driven aroma-bomb. The newer vintage and the shorter lees contact resulted in a more aperitif-style wine. The Styrian wine had more linear and narrower acidity paired with more green aromas like basil, gooseberry, green beans, Granny Smith apple character. It ran through my mouth like ’cavalry’, but lacks the 'build-up' and the grand texture. The Gilvesy wine had way more complexity, weight and broader texture. The flavours were more on the white-side: peach, white grapefruit, Meyer lemon, elderflower, daffodil, a spring-like smell. And then in the finish: the typical ’irony-steely-stony’ characters from the volcanic terroir. This wine simply has more potential on a dinner table. It blossoms over time and shows way more versatility in terms of food pairings. First wine: Gilvesy ‘Mogyorós’ Sauvignon Blanc barrel fermented (500l Hungarian oak) with indigenous yeast, barrel-aged, extended lees contact Vintage: 2017 | Alc.: 11,5 % vol. | RS: 1,3 g/l | Total acidity: 7,5 g/l Second Wine: Rauch Vulkanland Steiermark DAC Sauvignon Blanc reductive, probably commercial yeast Vintage: 2018 | Alc.: 12,5 % vol. / RS: 2,5 g/l / Total acidity: 5,5 g/l

Third episode from the Balaton Upland series and the second one from the Saint George Mountain. I went back to the Saint George Mountain to visit Róbert Gilvesy, the founder and leader of the Gilvesy Winery, in Hegymagas. Róbert is Canadian-Hungarian, and these roots have a profound effect on the philosophy behind the Gilvesy wines. As the winery itself is turning more and more towards indigenous Hungarian varieties, Róbert is eager to turn the Gilvesy label into an international ambassador of the Saint George Mountain’s unique volcanic terroir. Besides the vineyard-selected labelings, special projects, like the terroir-comparing Rhine Riesling No.1 & No.2 gift box, elevates the winery into an international highlight. We tasted Furmint and Riesling together, talked about the importance of organic viticulture, discussed how Tokaj wines taste different despite both terroirs having volcanic soils, and the hopeful future of the international volcanic wine movement.

I was lucky enough to record the 30th Wine Ghosts podcast in a classical villa built in 1888, in the picturesque Traisen village, Nahe region, Germany. This proud wine castle is home to the Crusius vintner family that has been making wine for 14 generations now. Rebecca Crusius, one of the youngest members of the family, was kind of enough to host us in their dazzling tasting room for a genuine conversation and an impressive tasting. I had the great chance to connect with the Perinet winery, one of the shining stars in the area, to give insights in their terroir and magical cellar work. Perinet is located in the North-Eastern part of the Priorat region, in the village zone of Poboleda. Perinet’s knowledgeable winemaker Antoni Sánchez-Ortiz, together with Carlota, literally gave a profound masterclass on the region, its characteristic Llicorella soil, microclimatic differences, the two key varieties, namely Garnatxa and Carinyena, and why these grapes are handled differently in the winemaking process. Every Perinet bottle amazed us, my girlfriend was actually weeping for joy when trying one of these wines, you can find out in the podcast which one. He also has at least 50-year-old Veltliner vines, helps Welschriesling shine in his vineyards, creates world-class Blaufränkisch on his Bodigraben single vineyard site, while working very minimalistically in the cellar. As I can’t travel back to my homeland, Hungary, I chose to bring all of you along virtually to the most famous Hungarian terroir: Tokaj. Dorka Homoky is a young vigneron working organically on less than 3 ha that she inherited from her parents near Tállya, in the Western part of the Tokaj region. You can learn about why „every great Furmint has a little Hárslevelű” in it, how Sauternes diverges from Tokaj, why sweet wines become untrendy and how to possibly reverse that, different bedrocks in the region and how Tállya stands out in relief. I can’t wait to try her wines, because spontaneously fermented rich whites from volcanic terroir have always been my “blood type”, and I hope that I could convince you to desire the same.

Another great wine wizard from the Wachau region of Austria: Josef Fischer. The winery, that bears the same name as my dear guest, is located in Rossatz, on the right bank of the River Danube. As a true Wachau winery, they bring out the best expression of Riesling and Grüner Veltliner on their world-class single vineyard sites on ‘Federspiel’ and ‘Smaragd’ levels. ‘Joe’ explained the Wachau terroir in great detail, while specifying rock and soil types, and justified why he is planting more Riesling nowadays. You can learn about the “mystery” of ‘Gföhler Gneiss’, the legend of the Dürrstein castle, and how the DAC designation changes labels in Wachau. Joe has great knowledge about his homeland, and, after tasting four of his wines, for sure a great affinity to winemaking. The Pflüger winery is located in the Pfalz region of Germany, where the Pflüger family has been taking care of their precious vineyards around Bad Dürkheim for centuries now. They were proponents of nourishing their treasured land in the most sustainable matter as possible and became organic growers in the mid-’80s, then certified biodynamic from the vintage of 2008. The friendly wine wizard, Alex, has talked about the climate in the Pfalz region and how it’s been changing in recent years, about the significance of biodynamic farming and low intervention winemaking. He also shared his belief about minerality in wine and proved with an imposing tasting line, why you should look for exceptional Rieslings in his portfolio, too.
