On today's episode I am doing a rundown of a few favorites from the month of January, but also giving a sourdough update, my experience with true stretching and folding, so here's my

New Sourdough recipe:

  • 100 g starter
  • 400 g AP flour
  • 275 g water
  • 25 g avocado oil
  • 8 g salt


  1. mix dough with a spoon and let autolyze for 1 hour
  2. perform 4 sets of stretch and folds, spaced 30 min apart
  3. let rise overnight
  4. baking.... I am still experimenting!

In today's episode I am talking all about the struggles I've had with the spring garden, like slug and snail damage, poor soil ph, poor nitrogen availability, and how I plan to amend my soil for fall, like adding elemental sulphur and a high nitrogen fertilizer. I also discuss the plans I have for mulching in the winter, that way I do not use leaf mulch again. My plan for that as of right now is to use a soil building cover crop through winter, then work it into the soil in early spring, and finally mulching with compost. Hello and welcome to the very first episode of The Girly Homesteader Podcast!  My name is Laura and I live on 7 acres in Xenia Ohio with my husband, 10 chickens and 2 beehives.  This episode is an introduction of myself and our homestead to you, along with our goals for this year.  I definitely did not grow up as a country girl, but I love the life I live now.  I do not consider myself an expert in any way, so the first season and first year of this podcast will be documenting our transition into "true" homesteading life.  I'll be sharing with you my homesteading experiments, research, successes and failures.  This episode is especially helpful for the beginner homesteader, confirming the fact that you do NOT need tons of acres, tons of animals or a picture perfect garden to consider yourself a homesteader.  You didn't even need to grow up with the intention to live this life.

GARDEN

  • germination in the first half of our raised beds is going well, but could be better
  • my new method for seed sowing in the beds to hopefully get a better germination rate
  • adding a fence panel to block wind
  • perfecting the low tunnel plastic 
  • thinning out seedlings from our first round of planting
  • starting potatoes in grow bags
  • deciding on our final varieties of tomatoes, cucumbers and peppers that we will buy as seedlings from local farms

Today's episode is all about the goals I have on our homestead for the month of June! I also talk about some updates that we have had here, like:

  • expanding our garden to a sunny side of our house
  • we are finally getting full harvests of greens to the point that I do not need to buy lettuce anymore
  • our new chicks are doing well and our new way of socializing chickens is working
  • we harvested garlic scapes
  • we transferred a swarm into a beehive
  • and how we are battling the current drought that is hitting Ohio and a lot of the midwest


The goals that I have for the month of June are:

  1. start planning the fall garden
  2. keep starting seeds for more head lettuce
  3. plant more green onions
  4. review my soil sample results and start planning for soil amendments to make in the fall and winter
  5. continue harvesting and preserving food, especially herbs and hopefully cucumbers
  6. transition chicks into the older flock
  7. check on both our bee hive split and the swarm we caught

We've had great success keeping our chicken water from freezing solid even in single digit temperatures!  In this episode you'll learn about our current set up and how it will be a better choice than a typical chicken water fountain during summer months too.  We switched to poultry nipples to make our lives easier but also to improve the health of our chickens.  Good chicken keeping starts with making things as easy on yourself as you can, that way even if conditions are nasty, you'll know that your girls are still being taken care of.

This episode of the podcast is all about processing deer on your own.  Although it is an intimidating process, my husband and I have been doing it for 5 years now and have learned quite a bit along the way.  In this episode I talk about why you'd want to process a deer on your own anyway, meat quality, meat processing tools, how to figure out what cuts of meat you'd like, a general step by step process, tips to reduce the "gamey" taste of meat, how to get the best tasting ground venison (that tastes like ground beef) and give you some ideas for some of the cuts that might be sitting at the bottom of your deep freezer.

In the morning, preheat oven to 450 and split the dough in two. Spread each dough onto parchment on a cookie sheet and bake for 6 minutes, do not let the crust get golden Let cool, then freeze uncovered for 3 hours. Pizza Directions:

  1. the night before you want pizza, feed starter so it's ready in the morning
  2. add about 100 g of starter, 180 g of water and 180 g of flour to a bowl and mix. Add salt and Italian seasoning as desired.
  3. preheat oven to 500 and start warming up your cast iron skillet on the stove
  4. add lots of olive oil to the skillet, then pour in dough
  5. smooth dough out and wait for it to cook through, till it is no longer shiny
  6. add sauce, cheese and other toppings
  7. then bake for 10-12 min

Although not much grew for me, I did learn some major lessons in terms of how to keep things (or not keep things) alive during hard freezes, I learned that you cannot be lazy if you want to overwinter food and a HUGE tactic that makes transplanting cold hardy veggies in the very late winter a lot more doable.

Here's the recipe I used most recently that got me a decent loaf, but I am still working on the gumminess inside my loaf (I'll talk about my next experiment in the episode).


100 g starter

500 g bread flour

300 g water

10 g salt


  1. Mix all ingredients together in your mixer bowl with a spoon and let autolyze for 30-60 min
  2. Knead for 2 min on speed 2, then wait 30 min.
  3. Knead another 2 min on speed 2.
  4. Shape into a nicer ball in the bowl with a bowl scraper
  5. Let rise overnight in a coolish place (our basement)
  6. Preheat oven to 500 with dutch oven inside
  7. Remove dough from bowl and shape on your floured counter
  8. The place onto baking sling and score
  9. Bake for 30 min covered and 5 min uncovered

We decided to tap some of the maple trees on our property to make maple syrup!  It actually worked out really well, so this episode of the podcast talks all about it.  We turned about 50 gallons of maple sap into about 1 gallon of syrup, but it was definitely worth it and I am pretty sure we will do it again next year.  After listening to this episode, you'll know whether or not it's a self-sufficient activity you'd like to add to your homestead calendar!
