How do you go from conservational biology to alcohol-free mixology?

I had no idea, so I asked the man who did it: Paul Mathew, the founder of Everleaf Non-Alcoholic Aperitifs.

Not only has this range changed my appreciation for the aperitif category, but speaking to Paul opened up a world of botanical awareness that makes you want to dive right in with him.

In this episode, Paul Mathew’s humble approach to the great things he’s achieved with the brand is matched by his passion for an on-trade industry that saw him go from university student to world traveller. And it’s an industry which he is excited and motivated to support as the nation considers it’s drinking habits both in the home and in our bars. 

In our chat, we cover everything from non-alcoholic cocktail competitions to the international low/no-drinking movement. We consider whether bar menus should add ABVs or units to their drinks lists, and Paul shares a fond appreciation for the amazing team around him.

Joining me this week is Russell Lamb, co-founder of 6PERCENT, a new mid-range wine company producing the first in its planned range of lighter wines, a 6% merlot-cabernet sauvignon blend with half the ABV but all of the flavour.

Starting life as a lockdown wine-tasting company, Russ and his wife, Gabbi, soon came to realise that there was a demand from their clients for lower ABV wines that they were not able to meet with anything they could find and so they decided to solve the problem themselves.

In this episode we discuss the challenges in not only making a 6% wine, but in sharing it with a world that is not always ready to hear about it (let alone taste it).

We talk about the ever-present question of why lower alcohol drinks are priced the way they are even though they don’t contain alcohol (I love Russ’ answer to this by the way).

We also spend a lot of time examining the mid-range/light-alcohol category as a whole (there’s a lot to cover), blended drinking habits, and how we communicate to consumers the benefits of these new lower-alcohol drinks.

It's easy to compare ourselves with others in all walks of life but it's very rarely helpful.
 
 I used to compare myself to others in the low/no space and feel like a fraud, like I didn't belong.
 
 Why? Because I didn't stop drinking as a result of addiction, I didn't hit rock bottom and then claw my way out; I'm not an alcoholic, and I never joined a program.
 
 I just decided that alcohol wasn't the right choice for me, and that made me feel like my choice wasn't worth sharing as much as others.
 
 But I was wrong.
 
 In this week's solocast (new word of the week), I'm sharing my story so that you know it's perfectly ok to share yours.

This week I'm joined by Murray Patterson, founder of Muri - a unique range of fermented non-alcoholic drinks designed for wine occasions. Murray shares his fascinating journey from a soul-crushing corporate job at JP Morgan to discovering his passion for fermentation in the cider industry before relocating to Copenhagen - a global hub for fermentation expertise.

At Muri, they're breaking free from simply mirroring alcoholic drinks, instead using chef-led techniques and complex fermentation processes to create genuinely original flavour profiles. Murray explains their painstaking methods, from carbonically macerating strawberries to lacto-fermenting beetroot and creating tomato wine. We discuss the challenges of naming this new category, the thriving low-no scene in Copenhagen, and Murray's mission to bring craft and premiumisation to non-alcoholic drinks.

Sea Change began in 2018 when Simon's team wanted to create a product that would create a legacy their children could be proud of. Inspired by David Attenborough’s Blue Planet series, they proceeded to build a brand, removing unnecessary packaging, using sustainable materials, and donating to marine charities with every sale.

Their alcohol-free Sea Change Free has exceeded expectations, with sales jumping from 2.2% to 5% of their total business in just one year. Simon shares insights on the challenges of creating quality alcohol-free wine and reveals plans for upcoming still and sparkling additions to their Free range.

A few months ago, I tasted a sip of an Old Fashioned (my former favourite cocktail) and nearly fell off my chair because it tasted SO strong. But here's the thing - the drink hadn't changed, my taste buds had!

In this episode, I get into the science behind why this happens (don't worry, no lab coat required) and how it actually numbs our taste buds, and when we drink less, those receptors wake right up. I map out the timeline from the first subtle changes to the full "taste bud makeover".

And I take a look at finding low and no alternatives that might better suit your newly sensitive palate.
