💁🏼‍♀️Have you ever had the thought, I just can’t eat anything!? I sure did after being newly diagnosed, specifically after my first trip to the grocery store. Literally, I wandered helplessly for  3 1/2 hours checking package by package, isle by isle to on leave with 2 items in my cart. I thought I was prepared… I looked on Pinterest before heading their and I even had downloaded an app to help scan items… but to my frustration and despair I could not get any kind of reception at the store… so there I was… trying to understand how to read a label, not even understanding the overfilled gibberish list of ingredients I found on the packages… I have shared before that I went home sobbing, feeling so lost… and telling myself and believing the words ‘I can’t eat anything.

 

✨Today I want to share with you how I have come to squash that belief… and for those of you who have been gluten free for a while now… I will be sharing some inside secrets to help you step up your gluten free game as well!

New to celiac

I was diagnosed 2 weeks ago with celiac disease. I’ve looked high and low for help, and I found medical advice but I really needed the kinda of advice that a best friend would tell you and this is how this podcast feels.

I know this podcast is super new, but I can’t wait to hear more.

 

Thank you @kmgolightly… I am so grateful that you are loving the podcast so much and I have to be honest, I get so excited every Tuesday for the podcast to air. Like I get giddy inside… knowing that I am sharing my best and favorite tips with you each week. As my hope and prayer is to help you be your best gluten free self and of course to raise more awareness with the world!

Let’s dive in to the nitty gritty of todays episode… now this topic of I can’t eat anything has been one that I have worked on and would like to squash this belief for you too. 

 

Last year my sister in law and brother were did the Whole 30 diet. (which I have sense done and completely loved it and really would recommend it to anyone) but back to their journey… I wasn’t too familiar with the whole30 diet so I asked my sister in law so many questions… I asked her ‘ so what is the whole30?’ Now she is a very optimistic person and is one that I often lean on for strength and positivity… but in answering this question, she began to tell me ALL of the things she couldn’t eat. And let me tell you the list was long. It is interesting… because when she told me she was doing the diet, she was excited and hopeful that it would help her with several health issues. But when I asked her details, her tone changed and she seemed more helpless than anything. After listening to her for about 5 minutes try to remember all that she couldn’t consume, I stopped her… and I said wait a minute… I don’t really want to hear all that you can’t have… tell me what you can have… her entire demeanor changed and she happily told me all the foods she can eat… and then just then it was like a light bulb a-ha moment for me… with gluten free and celiac living, how often do we dwell on what we can not have versus truly the infinite number of foods we can have. 

 

 

Moral of the story… Focus on what you can eat... holy smokes there are tons of things... almost too many things...

 

I googled what can gluten free people eat?

 

Many healthy foods are naturally gluten-free, including fruits, vegetables, fresh meat, fish and poultry, legumes, certain whole grains, dairy products and oils. Wheat, rye and barley are the major foods that need to be avoided while following a gluten-free diet.

 

But I am here to tell you that if you want cookies- cakes - Mac and cheese or pizza... you can have it ALL... just with a little bit of work... or hitting up a few different stores. You can make your gluten free dreams come true. If you love a certain food, like pizza… then research, test out the highest rated recipes on Pinterest and find your winning recipe!! You get to be in control of this. 

 

Now I used to make wedding cakes… I did that for a years as I paid my way through ultrasound school… and as I would make these cakes, I had the belief system that both the looks and the taste were equally important, so you can say that I mastered the moistest cake ever!!! I was so proud of that… and actually known for making the best cakes… so when we went gluten free… this was something I knew I needed to master. I wanted to bake the most moist gluten free desserts… so, I started experimenting and bam… I got it… and the recipe is so straight forward and easy!!! I tell you this… to show you tangible evidence that I am practicing what I am preaching!!!  So whatever you love or perhaps it is your child or a loved one who needs to eat gluten free… master their recipe… master what they are missing and I can guarantee that there will be more excitement and joy in their gluten free life!!!

 

There are several amazing food bloggers and chefs out there who are experimenting and mastering gluten free  living all to help US!!  So utilize their talents…. Go to Pinterest… search on google… find a few new favorite go to recipes that will WOW your family!!! 

 

But now I want to talk real talk… Just because you eat gluten free does not and I repeat does not mean you eat healthy… That has to be one of the biggest lies out there! I feel like Would be doing you a massively big disservice if I don’t share with you the importance of what gluten free foods we are consuming… I know we need to work in baby steps so we don’t go into a place of overwhelm and depression… but if you are ready to step up your gluten free game… then…

 

 I want to give you a challenge…you are already making changes in your life- trying to make healthy changes even- then I want to challenge you to not find substitutes for every single item you used to eat… of course your favorite things… well yes, live a little… and enjoy your life… but I want to share with you a warning from the Mayoclinic a resource I found…

 

‘It's important not to replace gluten-containing foods with more red meat, full-fat dairy, starchy vegetables, sweets and fats, which can lead to a higher intake of cholesterol, saturated fat, sodium and unwanted calories.

It's also prudent to limit commercially prepared gluten-free snacks and bakery products, which are typically high in refined carbohydrate, fat, sugar and salt — just like their gluten-containing counterparts.

Studies suggest that the nutritional quality of commercially prepared gluten-free products varies from similar gluten-containing products. In several countries, for example, commercially prepared gluten-free foods are lower in protein than their conventional counterparts.’

Friend, do you hear this… so many of our packaged gluten free products are not serving us in a healthier way… yes they may be gluten free but what are they really putting in there???

 

Okay, here’s another resource I want to share from gluten.org

 

 

  • If an individual whose diet contains large amounts of breads, pastas and cookies (especially those made from refined flours) switches to a gluten-free diet which eliminates these foods while increasing fruits, vegetables and other healthful gluten-free foods, the resulting diet would likely be healthier.
  • On the other hand, this same person could easily substitute gluten-free breads, pastas and cookies into the diet, without increasing intake of healthful gluten-free foods like vegetables and fruits.   In this case a person may actually experience a reduction in diet quality, since many gluten-free processed foods are lower in fiber, vitamins and minerals than their gluten-containing counterparts.  This type of gluten-free diet may be higher in calories, since many processed gluten-free foods contain higher levels of fat and/or sugar to compensate for flavor and texture changes which result from the removal of gluten.    Any diet that is higher in calories is likely to promote weight gain, not weight loss.

  • There is the possibility of developing nutrient deficiencies if you rely heavily on prepackaged gluten-free foods, which don’t contain the vitamins and minerals added to wheat flours.
  • Replacing gluten-containing foods with processed, gluten-free alternatives can lead to weight gain — cookies, breads, and snack foods should still be consumed in moderation, whether they contain gluten or not. “Just because a food is labeled gluten-free doesn’t mean that a gluten-free cookie or gluten-free cupcake is healthier than the wheat-based product,” Thompson says. Chances are the gluten-free version is going to list white rice flour or milled corn as the first ingredient, she adds. “That isn’t any healthier.” Other gluten-free products may swap in higher calorie ingredients like nuts or dried fruits, nutrient-dense calories that can add up quickly.

But don’t fret… I am sharing all of these resources with you so you are educated!  So you can make smarter choices, healthier choices and ultimately better choices for you on the daily!  My girl Karalynne with Just.Ingredients shared the other day a post that was spot on… ‘Strive to live a healthy diet, not a perfect diet.’ You get to choose what you substitute gluten for. And if you want your body to heal and you be the best you… make the better choices. 

 

Which leads me to bringing up a resource that Karalynne and I did together… friend, we worked countless hours to bring you a safe gluten free guide with better choices!  Seriously what could be more helpful than that??? We took out the guess work for you. 

 

So what this guide does, is it breaks down by category, safe gluten free products with good choices and better choices. And let me tell you. This was quite the process. I would share a lengthy list of ‘gluten free safe’ foods with Karalynne… she would look them over and deny almost all of them… ugh… why would she do this to us… are we restricted enough??…but I know now it is because so many of the processed gluten free foods are horrible for us and can be causing us the very inflammation that we are trying our best to help heal our body… but we aren’t allowing our body to heal if we are eating foods like that… so this guide is money!!!  Allowing you to learn safer- cleaner brands and products that we can consume and get our bodies feeling our best.

 

So back to our process of creating this guide…  Karalynne then would send me a list of better - healthier choices… but after some research I would shut her down and tell her… nope- a celiac can’t trust that product or brand… so needless to say we hustled for you… we hustled to find over 125 products that were better choices.  Both safe and the healthier packaged goods, that can allow your body to heal and be performing at a higher level!! Who doesn’t want that???

 

It really doesn’t matter if you are gluten free by choice, gluten free out of necessity, have been gluten free for 2 days or 20 years… this guide will help you identify safe go to products that you can always keep an eye out for at the grocery stores or even find them online. I truly believe we can all step up our healthy choices… and when you want a yummy gf chocolate cake, well you can indulge… and when you eat the simple mills brand you won’t have to feel so blah after eating it as it won’t mess with your insides like other brands can.

When someone with celiac disease eats gluten (a protein found in wheat, barley, and rye), their immune system attacks the small intestine, causing inflammation and damage to the villi—tiny structures responsible for nutrient absorption. Over time, this leads to nutrient deficiencies, digestive issues, and serious long-term health problems.

Unlike gluten sensitivity, which causes discomfort without damaging the intestine, celiac disease is permanent and requires strict, lifelong avoidance of gluten.


Common Symptoms of Celiac Disease

Celiac disease doesn’t look the same for everyone. Some people experience classic digestive symptoms, while others have silent celiac disease, meaning they have no obvious stomach issues but still suffer from long-term damage.

Here are some key symptoms to watch for:

How to Get Tested for Celiac Disease

If you suspect you have celiac disease, DO NOT go gluten-free before testing—this can cause false negative results.

Step 1: Blood Test – Ask your doctor for a tTG-IgA test, the most common screening test for celiac disease.
Step 2: Endoscopy – If your blood test is positive, the next step is a biopsy to confirm damage in your small intestine.
Step 3: Diagnosis & Next Steps – If you’re diagnosed, the only treatment is a strict gluten-free diet for life.

I am so glad that you are here- and I am so glad that I am here… Welcome to the Gluten Free You and Me Podcast!!! Where we learn to navigate and simplify our lives together in this gluten filled world.

 

My name is Coral Ward and I am the founder of Gluten Free with Coral. I started our gluten free and Celiac Journey about 4 years ago when my 2 year old daughter Chanelle was first diagnosed with Celiac Disease. Since her diagnosis my youngest daughter Sadie and I have both been diagnosed. That means 3 out of the 5 of our family members have Celiac Disease. 

 

I live a 100% gluten free lifestyle and I have to tell you that I have come to I love it! I have come to realize that I am happier and healthier than I have ever been. After years of suffering, I now have learned to listen to my body, be strong in my will power, and not let celiac disease control my life or more importantly my mind.

 

It hasn’t always been easy, I remember the first time I walked into the grocery store and after 3 1/2 hours I left the store with only 2 items in my cart. Crying the entire way home… I quickly realized that I needed to find my gluten free groove and fast. 

 

In this podcast I will be sharing exactly HOW I came to find this groove. Throughout these years of learning and becoming a gluten free expert I have created the gluten free eCourse, I offer one on one coaching, I travel and speak at events to help educate and inspire others and I have a strong presence on social media to help inspire you! 

 

For the past year I’ve had this crazy feeling that I just can’t seem to shake, the feeling that I needed to share my voice, share my stories and share my hope with all of you in a deeper and more intimate way. And that is what has inspired me to start this podcast. And I am more pumped than ever to share my greatest gems with each of you!

 

I will be featuring and interviewing incredible people, organizations and brands that are making our gluten free world just that much better. We will be talking about things that really matter. The day to day living and situations that we can learn and overcome together.

 

Whether YOU have celiac disease, someone you love does or you eat gluten free for any reason, this is the podcast that will motivate, inspire and teach you the ways without losing your mind!

Do you need a 504 plan with Celiac Disease and being 100% gluten free?
 
What I first thought of a 504 plan
I was told it was my right
That I was entitled to it
And for all those that know me… know that I do not feel entitled to anything. I am not 
the victim. I will not play into that role.
 
What I learned since then learned that a 504 Plan is…
to protect our child
educate staff
hold them accountable for their treatment towards our children
to help plan for the year
prepared for emergencies and every day life
to make sure that staff and students have a positive attitude toward my child
to make sure my child doesn’t take advantage of the situation either.
 
 
TEACH YOUR CHILD TO BE THEIR OWN ADVOCATE. PRACTICE. ROLE PLAY. BUILD CONFIDENCE.
 
What is a 504 Plan 
 
(a lot of what I am resourcing and quoting from today from BeyondCeliac.org)
 
A 504 plan stems from Section 504 of the Rehabilitation Act of 1973. This section prevents discrimination against public school students in grades K through 12 because of disabilities. A 504 plan is meant to “remove barriers” to learning by providing a specific outline on how to make accommodations or modifications on a student-by-student basis.
What’s the Rehabilitation Act of 1973?
The Rehabilitation Act of 1973 applies to all institutions receiving federal financial assistance, such as public schools. Under this law, public schools must provide a free, appropriate public education and not discriminate against disabled students.
This law acknowledges that the disability may not require special education services, but a plan is needed to ensure the student receives an appropriate education accommodating the disability within the classroom. This law must accommodate a special diet, including the gluten-free diet for children with celiac disease.
 
Do you have to have a 504 Plan?
 
This decision is entirely up to you as a parent or guardian. Some parents find that informal discussions and accommodations have been sufficient for having the child’s needs met at school. However, having a formal 504 plan in place is valuable, especially as teachers and staffing may change. The 504 plan guarantees by law that your child’s needs are met throughout their school career and not just in certain classrooms. You can choose to utilize your 504 plan accommodations at any time and having them in place before you need them can save important time and resources if your child develops symptoms from gluten exposure or if you are having trouble with consistent accountability.
 
How do you get a 504 plan started?
To get started, you’ll need to contact your child’s school. The 504 plan team should include:
• Primary classroom teacher • School counselor or psychologist
• School nurse • Director of food services
• 504 plan coordinator
You’ll also need a doctor’s note to show that your child has been formally diagnosed with celiac disease or non-celiac gluten sensitivity (‘gluten sensitivity’). This note should outline the accommodations required to maintain your child’s health, enabling him or her to have equal access to public education.
 
 
What information is included in a 504 plan?
 
Generally, you’ll need to provide information about your child’s diagnosis and needs, including:
• Year of diagnosis
• Amount of time on a gluten-free diet
• Details on why a 504 plan is needed
(including how a restricted diet affects a major life activity)
• Child’s developmental level and needs (Are they self-reliant in managing the diet? Do they need strict supervision? Etc.)
A 504 plan will specifically outline all of the details of how your child’s celiac disease needs to be managed in the classroom. For example, you and the 504 plan team can develop an action plan for:
• Navigating school lunches • Snacks
• Birthday parties • Art class
The plan will lay out specific accountabilities. Having a 504 plan in place will also make it much easier to apply for disability accommodation in college.
 
Goals of the 504 Plan:
 
1. Adhering to all aspects of the 504 plan to avoid gluten.
2. Assisting the child to maintain a stable physiological state void of gluten
reactions through preventative measures.
3. Recognizing the signs of a reaction and treating it promptly in all school
contexts.
4. Striking a balance between safety and social normalcy, providing the same
opportunities and conditions as the child’s peers and offering encouragement to
the child.
5. Encouraging open and ongoing communication among adults about food
intolerance issues and doing so discreetly and in the appropriate forum.
 
Food Allergy Education, Awareness and Reaction Prevention
The basic question to be answered and discussed in this section of the 504 plan: What kind of training needs to take place to promote education, awareness and reaction prevention in the school context?
Types of Education, Awareness and Reaction Prevention:
• Label reading
• Proper hand washing
• What is cross-contact and how can it be avoided?
• Effective table and desk washing with appropriate chemicals and materials
• Positive role modeling (Example: A positive role model would not make statements to parents and students such as, “We cannot have a holiday party because of “Suzy Celiac” and her food allergies. A positive role model would say, “We are going to have a holiday party and we will make it fun and safe for everyone.”)
• Promotion of positive self-esteem for child with celiac disease
  • Promotion of peer support for child with celiac disease
 
play dough, paper mache, fruit loops and other gluten-containing food, pasta, flour, paste, and stamp adhesives.
 
Parent and Foodservices will work together to arrange procedures when student is ordering school lunch or bringing food from home that will require heating in the cafeteria (for example, warming in the oven on a separate foiled cookie sheet).
 
Field Trips
Nurse or Medical Department
Other Topics to Be Considered in This Section
• Safety snack box provided by the family to be kept in classroom
• Birthdays
• After school events such as pizza night: consider utilizing one of the many
companies now providing gluten-free options (don’t forget to double check
cross-contact policies!).
  • Holiday parties\
  • • In case of reaction: access to bathroom.
  • • Emergency kits: If your school has kits for emergencies or evacuation, then what
  • supplies will be provided for those on a gluten-free diet and by whom?
 
Sports, Music and Extracurricular Activities
 
Dances, Proms and Catered Events

If Chanelle forgets her lunch I have advised her teacher to use the emergency food that I have provided for the class emergency backpack
 
 
12 points from our personal 504 plan
 
1. Separate seating away from gluten food during lunch if desired (student is aware of disease and is good at self advocating)
2. Unlimited access to the restroom with no delays
3. School to provide gluten free play dough in the classroom to prevent contamination.
4. All adults that come in contact with student during school day, recess, lunch/snack time, shall be trained about accommodations.
5. Student to wash hands prior to eating snacks or lunch.
6. Parent to provide gluten free food for emergency backpack in the event of an emergency
7. Parent to provide a gluten free snack for unexpected parties/events (this will allow student to participate safely)
8. Approved snacks include anything gluten free such as: Hershey kisses, starburst, plain m&m’s etc.
9. Teacher to provide 24 hour notice for class parties/events that include food so parent can provide alternate snack
10. Teacher/school will ensure accommodation plan will be in sub- folder and teacher leaves notes on lesson plans to ensure proper notification.
11. Teacher will remind her every 2 hours to use the restroom as needed (parent will remain in constant communication with teacher)
12. Eating areas need to be disinfected before lunch

You can download it one time, edit and add your information and then print it multiple times for the teacher, nurse and other staff members. I promise it will be so helpful not only for them, but to help you feel heard and have peace of mind that you have provided them with the information needed to ensure your Childs safety!

I am so pumped to share with you who I chose to interview as my very first guest for
 
One of the key elements to finding your groove as a celiac is finding safe foods to eat. I mean really,
Who can you trust?
What restaurants can you go to?
What foods can you buy in the store?
In a perfect world we would all eat whole foods and shop the ‘outside isles of the stores’. But my reality is I have 4 kids and a husband to feed all while working part time out of the house and working 3 businesses from my home. So, no I can not make everything from scratch. I truly believe we need balance in life. Even balance in our food. And I try my best to do just that.
 
So back to my questions… really what foods can we trust? This is what I wanted to get to the bottom of. So many companies label their food as Gluten Free, but truly they are not safe for a celiac. The FDA states:
 
'How is “gluten-free” defined in the rule? In general, foods may be labeled “gluten-free” if they meet the definition and otherwise comply with the final rule’s requirements. More specifically, the final rule defines "gluten-free" as meaning that the food either is inherently gluten free; or does not contain an ingredient that is: 1) a gluten-containing grain (e.g., spelt wheat); 2) derived from a gluten-containing grain that has not been processed to remove gluten (e.g., wheat flour); or 3) derived from a gluten-containing grain that has been processed to remove gluten (e.g., wheat starch), if the use of that ingredient results in the presence of 20 parts per million (ppm) or more gluten in the food. Also, any unavoidable presence of gluten in the food must be less than 20 ppm.
 
But then I asked myself… okay that’s great, but who is regulating these standards and how can I truly test the honesty and integrity of a brand? For years, I have been searching for answers... and I finally have found answers as I have gone straight to a reputable source. After you listen to this podcast with Chris Rich, who is the VP of Marketing & Development at the Gluten Intolerance Group, I believe you will find the same peace and assurance that I have.
 
 
 
I can now, confidently say that I trust the Certified Gluten Free Label from the Gluten Intolerance Group!
 
This label means it has 10 PPM or less of gluten.

One of my favorite things that I learned in this interview is that the majority of the staff either have celiac disease themselves or have first degree relatives. Food is central to the gluten free way of living because, well, many foods have gluten and we all have to eat! This month's challenge is all about reducing decision fatigue when standing in front of the refrigerator thinking, "What do I eat?" We are going to make a meal plan, create a shopping list, find new ways to make old favorites, and make it easy peasy to eat gluten free. 

To help with this decision fatigue it means we need a plan of action. We need to know how we are going to execute our day to day life.

Today I have one of my favorite friends here on the show!  Meg is an Italian trained chef and momma of 3. She is the owner and creator of the More Momma Blog and Cooking School. She is super talented and helps thousands of moms find their way around their kitchen and feed their children food that they will actually want to eat!  She has a really fun cooking club… it is like the best way to learn to cook- especially covid style. It is all virtual. All of her recipes can be adapted and morphed into gluten free and/or dairy free awesome dishes. She just gets how to do food elimination to help anyone eat amazing foods. 

Her and I actually worked together for a few years. We created a cookbook, an app, we were on NewsChannels and traveled the country speaking and cooking together to  help empower people to eat safely and with amazing flavors no matter what the restrictions were.

Traveling Gluten Free ``````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````````` 

 

When I hear the word vacation, I am just giddy inside… like yes PLEASE… sign me up!  My bags are packed in my head and we are already there… but then…

 

Then the second, and the third, and the fourth thoughts enter my head… can we really do this… can we go there and be gluten free... safe? How would we be safe? How would we not get glutened and still enjoy our vacation?

 

Do you find yourself in this rut as well? I am sure I am not alone… but this episode has been so therapeutic for me to brainstorm and draft up… As I reflect on things we have done really well and then things that WOW I wish we would have done… so stay tuned as I share my Top 11 Traveling Gluten Free Nuggets with you…

 

Intro-

 

Today we are dissecting traveling-gluten free in great detail to help you not lose your mind and actually enjoy the time away with the people you love most.

You guys- I am here to say that IT IS WORTH IT! We have got to get out and LIVE the life we have always dreamed of.  Maybe we can’t just pick up our bags and go wherever the wind blows, like we used to, but guess what? The internet and technology are beautiful things… with some research and some planning, we can go to the most exotic and beautiful places around the world AND have a blast doing it! 

 

Last month our family, all the 6 of us, went to Hawaii!  It was my kids FIRST.TIME.EVER. on a plane…that is what happens when you have 4 kids in 5 years… the only getaway I was taking was to the hospital to give birth… but for reals… anyways, you can only imagine the excitement of my 9, 8, 6 & 4 year old preparing and going on a plane and then having our destination be Hawaii!!!! 

 

Yet I knew I would lose my mind ~ heading to Hawaii with the kids before having the chance to go and scope out how I would do this with the kids.  How would I ensure their gluten free safety? 

 

So unselfishly (and maybe a little selfishly), last year, I went to Hawaii with my husband.  BEST. IDEA. EVER!  We scoped it all out. This way I was familiar - learned the good safe spots. Had an idea of how I can make this as stress-free as possible with kids. Cause lets face... vacationing with kids is stressful in and of itself... then you throw in celiac disease... times 3... oh forget it... haha I know my limits and so I knew I needed to have visuals in my mind before taking the little ones so I can mentally and physically prepare. Seriously... Favorite Idea of the Century!  Of course any excuse to go anywhere alone with my husband is a WIN but then to go in preparation mode was therapeutic for me. I am an organizer and a fixer so yes I want to have things mapped out and in control!  

 

You better believe I am going to keep that tradition alive and have a trip with my husband first as I establish my comfort and safety measures before I take the kids. I highly recommend this to any of you out there!!! 

 

So BEFORE I went to Hawaii, even the first time, I did A LOT of research.  And then this last time I went I did EVEN MORE research prior to going.  I am used to the find me gluten free app which helps me get a good idea of what restaurants and fast food places would be safe for us.  I looked on Pinterest for ideas and blog posts. I messaged Friends that I knew had been to Hawaii who are also gluten-free.  I sent messages to other bloggers that I knew had gone there as well. I packed everything super well. :) Believe it or not, I even packed my seasonings since I didn’t want to buy huge containers of seasonings that would be safe while I was there in Hawaii. Each child had a Gallon Ziploc bag and filled it with snacks and fruit and other food for the plane ride to Hawaii. Once we were there and all checked into our hotel we went to Walmart and Costco.  We loaded up on lots of groceries, snacks and safe foods. I also bought aluminum foil and paper plates. You might be thinking why foil?  Well we use aluminum foil on the bottom of the pans in the hotel so that the food never touches the pan.  

Speaking of the hotel and dishes... when I got to the hotel I put all the dishes that I believe we would be using in the dishwasher and wash them in a cycle before we use a thing.  This is truly for peace of mind and a great tip Courtney from getaway Gluten Free shared with me.  It makes so much sense!  Don’t put the silverware back into the drawer because those drawers are the collection of every crumb that ever lived.  So once the utensils are washed, I put them in a cup facing up and that is where we stored everything. The hotel provided us with a new sponge in its package I knew we were safe in that regard. I did my research and decided that there were enough restaurants and we could eat out one meal a day. That would keep my sanity and my stress levels down by just eating one meal a day out.  I then cooked the rest of them in the hotel. I’m so glad We did that!  

I want to go out and explore foods from other places as well, but more importantly I want to know they are safe and that no one‘s going to be sick. So mentally I knew I could handle one meal a day there. We would go and talk to the chef.  We are very thorough and we make sure that our food is gluten-free safe for us.

 

I have to tell you that this plan wasn’t fool proof.  I made an agenda that we used which planned out our itinerary of restaurants.  So the very first restaurant we went to when we got off the plane (which by the way we were hungry, that was a LONG flight) didn't go as planned.  Sadly when we got there we were told that they ran out of the oil that they needed to cook us fresh gluten-free foods in their designated fryer. Bummer! Literally we were all SO EXCITED to go to eat this fried chicken and french fries and literally we couldn’t eat anything there... nothing was safe. I didn’t account for that in my planning and I had no idea where to eat. By this time we were all REALLY HUNGRY. But I decided I wasn’t going to make that a big deal. I’m so glad I didn’t. Because my kids feed off of my body language (and I know that) so I need to be positive myself. 

So I told the kids we are going to find something... and something fast. We then called California Pizza Kitchen that was a few miles away and ordered our food to go. I explain the severity of our need for safe gluten-free foods and they assured me that they would be safe and take all precautions for us. What a great back up plan I didn’t have that on our agenda but we were able to adapt. I truly believe that it wasn’t even a big deal because I didn’t allow it to be a big deal in my mind and in my heart and even in my stomach which that’s the hardest part. 

 

Sometimes we have to run with the punches.  Sometimes it’s not exciting news. Sometimes it’s an inconvenience.  Sometimes pain is involved. Sometimes frustrations boil. But WE get to decide how we show up. Remember we didn’t go on vacation for the food. :)  We went on the vacation to make fun memories with my family. 

An interesting fact to note: when we went to Hawaii we were able to take fruit on the plane, on the way back we were not. You cannot bring anything agricultural back to the states from Hawaii. I learned that the hard way. So I’m letting you know so you don’t make the same mistake. You’re welcome! 

 

Preparation is key!!! It’s going to take some time… and a lot of planning. But the beauty of it is… there is A TON of gluten free research that has already been done for us. There are sooooo many locations and destinations around the world ~ its insane. 

 

SO I want to give you the step by step guide to planning your dream vacation. And also share my latest trip AND tips with you.

 

You guys, I am so excited to share with you the tips that will help to ensure your safety which will ease your mind while planning your next family vacation.  Hopefully it will be an exciting process for you!  I’ve narrowed it down to 11 amazing tips to help you have the best vacation (the best gluten-free vacation) your family has ever had.  Here they are:

 

  1. Pinterest. I search for the place I am dreaming of and add the word gluten free. I know its basic right… but really- don’t skip this step. You will be linked to so many amazing blog posts and resources that will start getting you excited and motivated. DON'T be discouraged though if where you are headed isn’t posted about a ton or even at all… that does not mean that you can not go. 
  2. Gluten Free guides. My favorite resources come from a few of my good celiac friends. Do you follow @getawayglutenfree or @forglutensakes on Instagram? They both are incredible and have poured their heart and soul into creating legit guides for us to places literally all around the world. Both are like a gold mine!
  3. Once you have found the destination start looking for hotels. Now I love staying at Marriott resorts. And this is not a sponsored shout out for them… (although it should be) I love the fact that they have full kitchens. Now this may seem just like a good perk for the average person… but for us gluten free eaters and especially celiacs this is a gold mine. I mean really… being able to cook your own food to ensure it’s safety is music to my gluten free ears. I will be dissecting how I recently made my trip to Hawaii with my husband and all four kids (3 of us have celiac disease) and it was a serious success staying at a marriott resort in Hawaii.
  4. Airbnb is also another good option. Not my first… but it is a good option.  I say it is not my first just because you never truly know the cleanliness/safety of a home until you get there. If you are at a hotel… they can switch you rooms or get a housekeeper to come to your aid.  But I would way rather have a kitchen than not.. so airbnb is still a really good option. Read reviews and ratings!
  5. Look for surrounding grocery stores and markets. You want to be sure that safe food is easily accessible and within your budget. I actually find that cooking myself saves us soooo much money. But while traveling it is still fun to explore restaurants as well. 
  6. Finding good safe restaurants is everything. Like Christmas morning!!! A lot of times you can find amazing options on blog posts and especially on the guides I was talking about earlier from Courtney @getaway gluten free and Carrie from @forglutensakes but I also love the Findmeglutenfree app. Now you can not take every recommendation for face value. There are all kinds of people rating  these restaurants… there can be reviews from extremely negative people trying to find fault in anyone and everyone(I know we all know someone like that) and then there are also people rating this app that eat gf as a health benefit and not for survival. Now don’t get me wrong, I love anyone trying to make better choices for them and their bodies. But when you are talking about safety precautions for cross contamination they may not be as strict as we have to be… so just remember that. I look for restaurants with multiple reviews like 10+ and that have high ratings. Especially when I am taking my kids with me, I will call ahead to make sure I am feeling confident enough to bring them. If I go to a restaurant with just my husband and I, and I don’t feel safe then I simply won’t eat and I will wait to go somewhere else later, Have a snack from my purse to tide me over and I am good to go. BUt when my kids are present, I don’t expect my 4 year old to understand that she has to wait til everyone else has eaten til we find something safe for her. SO yes, I am more thorough to ensure safety prior to going when my kids are involved. Call ahead, does the person answering the phone seem knowledgable? DO they understand what gluten is? DO they know what celiac disease is? When you mention cross contamination are they giving your the precautions they take to ensure your foods saftey or are they confused and have no idea what you are talking about? If  they just aren’t too educated in gluten free safety precautions ask to speak to a manager and ask the same questions. See if you feel confident. If you don’t- DON’T RISK IT!  
  7. Make a tentative schedule with days- activities- and FOOD you will eat. I try to eat out once a day to help my husband feel excited… food is seriously the way to his heart and I totally understand… so finding safe restaurants is a priority. Now if there aren’t many safe options around I send him and my son on a little date together and I make something extra special for dinner to eat with my girls. Its a pretty great set up… we make it work. We have found ways to enjoy the vacation and not let  food restrictions be a problem at all!  But scheduling out the days and the activities helps me to map out what restaurants are near by and safe or what foods we will need to prepare before hand.
  8. Transportation: Flight: If you are going on plane, you can call the airline ahead of time to see if they have any safe gluten free options, is there a charge? How do they ensure no cross contamination… if you are suspicious… bring your own food. It is liquids they are worried about… so fill a water bottle up after passing inspections or buy a water in the airport… and your flight attendants should be giving out beverages throughput the flight anyways.  Roadtrip: if your taking a road trip… knowing the amount of time it will take will be key… then road map any safe restaurants and or bring enough food. Pack a cooler full of sandwiches, fruit, trail mix, beef jerky, chips, something sweet. Make it so fun and exciting you don’t get depressed every time you pass a fast food or restaurant. I am really just trying to set you up for success here… 
  9. Stay Positive- Be excited - and remember, food is not why you are going on vacation… you are going to make memories, your are going to spend quality time with those you love the most- so as you go throughout your vacation… coach yourself through hunger pains or food frustrations… you will get through it! 
  10. Document it. Take pictures, jot down the food places you loved, jot down what worked and what didn’t so that the next time you go there or somewhere else, you remember!  Isn’t crazy how quickly we forget things… do you have this problem too? I tend to forget the hard times and remember the good… which is sooo awesome but then I forget to prevent situations from happening again… that lack of preparation will 
  11. Really most important note of all: Be one step ahead…you know yourself- you know your family… think of what sets off each person into negative thinking or having a negative attitude. Such as dad gets angry when he’s hungry… what we call hangry or maybe Johnnie gets sad that they can’t eat at a fast food place… well then create solutions before you go. Bring food that is more exciting than any fast food joint to them… what are Johnnies favorite treats?  And then make sure you have enough protein and filler foods for dad. Do you see how being prepared is everything. I mean really this principle is true for every person in this world not just gluten free eaters… it is just when food is limited because of restrictions… we need to be ultra prepared and sensitive to those we are with… cause lets face it… family vacations are a bit draining and taxing on everyone… so lets help brighten up everyones experience by doing some extra preparations.

 

So lets recap: Head to Pinterest. Gluten Free guides. Searching for hotel with kitchen. Air BNB. Grocery stores and markets near by hotel. Safe Restaurants. Outline daily schedule. Plan flight or transportation and what foods you will need to prep. Stay positiive. Document it. Be one step ahead of every activity or outing you go on!

 

You guys, going to Hawaii was one of my very favorite family vacations to date. I have to tell you we been on a few others amazing vacations that have been incredible and safe.
