Wild Salmon is a truly unique and special fish.
Regarded by chefs, environmentalists, gourmands and nutritionists alike as the best salmon to be found, it accounts for only 20% of the salmon consumed, the remainder being farmed.
Each May to Septmber the wild salmon run on the West Coast of North America sees the fish migrate from the open ocean back up the rivers to the lakes of their birth to lay their eggs, completing the natural life cycle unique to wild salmon.
The rivers throb and churn with the vast group of fish swimming upstream to spawn.
Bristol Bay, is the Easternmost Arm of the Bering Sea and hosts the world’s largest commercial sockeye salmon fishery.
The commercial fishing fleet is some 1,400 boats strong comprising some of the most passionate fishers in North America.
Reba Temple comes from a family of fishermen. She is the captain of the F/V Cloud 9 and is going on her 14th year of fishing in Bristol Bay.

While most 13-year-olds might spend their birthday with a party shared among family or friends, Andrew Mirosch was battling a gale in a small fishing boat.
Always keen on fishing, as a young boy Andrew would try his luck on the beach or off the rocks at Stradbroke Island with his grandparents, or by himself at night.
He always wanted to be a fisherman
But Andrew trained and has been a chef for more than 35 years.
In 1995, he hung up the apron for a fishing rod to follow his first dream of becoming a professional fisherman.
The kitchen lured him back however and still fishing during the day developed a successful seafood restaurant on Stradbroke Island selling plates of his catch - all of his catch, whatever the species or cut.
Andrew is a fierce environmentalist, driven as much by sustainability as by cuisine.

The regal looking, fast-swimming Spanish mackerel, is one of the fish at the top of the food chain, its sleek, powerful torso has the look of a fighter jet, built for speed with the persona of an aggressive hunter.
It’s caught using hook and line trolling techniques, and its quality is generally excellent as a result.
Mackerel fishers are among the most colourful on Australian waters. Fishing the tropical waters of Northern Australia, they spend long stionts at sea, often tracking schools of these hardy fish for months on end, spending long hours under the searing sun in humid conditions.
Bruce, Wildcard Davey is himself a legend. A fiercely proud, third generation professional fisher who started his career at 16 years old, in 1975, following his father and mother and Grandfather into the world of fishing.
His love of fishing, his family and his beloved Spanish mackerel makes him a truly unique character in Australia’s fishing history.

Angelo Vaxevani has been a retailer at the Sydney Fishmarkets for over 20 years and knows all the ins and outs of the market. Frank Theodore is a foodservice distributor with a wealth of knowledge about the seafood industry, and Narito Ishii is a Japanese fishmonger who brings a unique perspective to the conversation.

The southern rock lobster (Jasus edwardsii)—also called red rock lobster or spiny rock lobster, is a species of spiny lobster found throughout the coastal waters of southern Australia and New Zealand.
Trade in live exports of rock lobster exploded in the early 1980’s as the lobsters were discovered by discerning diners in China and Hong Kong. and now accounts for the majority of shipments out of Australia.
It is a fishery with a proud tradition of being at the forefront of innovation in both catching, handling and marketing.
Andrew Ferguson is a career lobsterman who typifies the creativity, professionalism and innovation of this exciting fishery.

These days, he owns and operates his family business, Taroona Fishing, based out of the legendary “Duck Pond” in Darwin harbour. Now, with daughter Toni running the land based operations, and two vessels fishing out of Darwin, they proudly catch and sell line- caught Spanish Mackerel .

Born of Founder Ryan Nienaber's love for fishing and the ocean, Greenfish the family run business services restaurant, hospitality and wholesale seafood businesses with high quality, seasonal and locally-sourced seafood, much of it, literally caught on handline by Ryan. As the onset of covid ravaged the foodservice industry, Ryan and his team needed to move their business model to focus on the consumer market.
Today we catch up with him to hear how the past few years have treated him, how his catching and wholesaling business transitioned to serving home cooks and what will be on his dinner table this Christmas.

This week, the fishery celebrates achieving the coveted Marine Stewardship Council sustainability certification, in recognition of the fisheries management and good practice.
