10 Dec 2022026 – Hassle free Christmas Dinner with Fiona Staunton00:28:46

Today’s episode is with me, Fiona Staunton of Fionas’s food for life

Below are 10 tips that I hope may help you take some of the hassle and stress out of the Christmas dinner.

1. Now : Make your red cabbage now and freeze for Christmas, 

  1. Dessert: Make your Christmas pudding well in advance, (if you don't like traditional pudding, why don't you make a chocolate biscuit cake version). Alternatively, a lemon tart would be delicious if you don't want traditional and can be made 1-2 days in advance. Or a pretty Christmas meringue wreath.

    3. Menu: Plan the menu, keep it simple, but tasty. I usually opt for
                                 Smoked salmon salad
                                   Turkey,baked ham,red cabbage,garlic sproutand roast potatoes and cranberry sauce.
                                   Christmas pudding with brandy butter

    4. Outsourcing: Outsource items to other family members, eg ask a brother to bring the ham, a sister to bring the starter and your mother to bring the plum pudding, made from an old family recipe! It can be a lot of pressure, and financial burden on one person.

    5.Decoration: Get the kids involved in place settings or decoration. I find that girls in particular love craft and decorating things, why not get them to make place names for everyone? I have a recipe for edible gingerbread decorations, e.g. place names and a recipe for edible presents, pecan cookies.
  2. Time: allow extra time when cooking the main course. Remember that when you have lots of things going on in the oven, it can take longer for things to cook. Allow the turkey to stand for 30mins before carving.

    7. Turkey & Ham: Buy enough to have some leftovers the next day but unless you enjoy making up batches of curries or pies don't buy a massive turkey or ham! If you don't want to deal with a large turkey, why don't you get a boned and rolled turkey from your butcher? Buy the best quality you can afford, eg organic bronzed turkey.Bake the ham the day before, have it hot on Christmas eve if you like, chill overnight but serve at room temperature on Christmas Day.

    8. Gravy: Make the gravy the day before, to prevent the last minute pressure.

    9. Brussel sprouts: The supermarkets and veg suppliers are loaded up with Brussel sprouts in the lead up to Christmas, it is traditional but not most people's favourite veg! Why not give a modern twist and shy away from the overcooked soft sprouts of our youth? If you shred them and steam fry in garlic and olive oil and top with bacon lardons it can be delicious. You can shred them the day before, store in the fridge covered in damp kitchen paper and they only take 5 mins or less to cook. Here is my recipe.

    10. Cheese: Ireland has some amazing cheese. I think it is a wise investment to visit somewhere like Sheridan's Cheesemongers or a good local deli and buy a selection of Irish Cheese. While you may not eat it on Christmas day, a nice cheese board can make a fabulous, lunch, supper or final course to any dinner and if kept well will last for the whole holiday.

Kate McDaid is a health and performance nutritionist and founder of NutriKate, a high performance nutrition consultancy. Kate studied Food Science at UCD before completing an MSc in Sport and Exercise Nutrition.
 
Kate comes from a competitive sporting background, she has captained the Irish Basketball team and more recently, has played with the Senior Dublin Football team. She is the performance nutritionist with Kildare Senior Football and Hurling teams and she works alongside the sporting scholars at Trinity College Dublin as well as the Maynooth University Golfing scholars. Kate and her team also work with individuals to support their health and performance, helping them to identify their next steps in achieving the success they desire. 
 
She has completed the Monash University Low FODMAP diet training to support those who may be affected by IBS. Kate was recognised as one to watch in Sport for Business’ 30 under 30 in 2020. She is also a fluent Irish speaker, making appearances on shows like Under Dogs and ‘An Focal Scoir'.

Ballymaloe trained chef, Fiona Staunton’s six-week virtual cooking course aims to alleviate symptoms of menopause and perimenopause in women and improve their day-to-day lives through educated meal plans and nutritional recipes that the whole family will enjoy. The 90 minute sessions will run every Tuesday evening from Feb 7th with recording options available. The virtual menopause cooking programme is one of many online series run by Fiona’s Food for Life.

 

In this course, Fiona will combine her 30 years of experience, client feedback from previous sessions, along with her own personal experience as a mother of two who underwent early medically-induced menopause to educate women on the power of nutrients and a balanced diet in relief from perimenopause.

Make an informed choice for yourself rather than follow someone else's actions without due consideration.
 
3. Movement really is the best medicine of all. You deserve to feel well so make room so that your wellness is as much of a priority as the other priorities in your life.

About Sarah Merrigan:

Apart from some teaching English and writing work my background is food. I lived and worked as a chef in Barcelona after I finished college and that really began the love affair. There was a great food scene over there a real focus on local and seasonal eating that really blew my mind. At the time I was a strict vegetarian and that was what initially got me cooking and I discovered that I loved it. I would often host big dinner parties which were vegetarian something that was very new over there and I was always trying new things. Eventually I left my teaching job and started running popups and studying cookery. I worked in various Catalan and Mediterranean fusion style kitchens which really cemented my interest in and love of the Mediterranean approach to eating – cooking what’s in season and (of course) lots of olive oil.

 

Then, when I returned to Ireland about 20 years ago, I set up an organic box scheme working with Irish farmers as well as importing from abroad. The weekly box included a recipe newsletter which later became a blog and I always loved this part of it. Running a box scheme was incredibly labour intensive especially with three young kids in the mix and after about 10 years I decided to pursue something a little less full on. A Spanish friend and fellow chef from Andalucía had introduced me to some incredible olive oil producers from her hometown of Jaen which also just happens to be ground zero for olive oil and I decided to introduce them to Ireland and that’s when Sarah and Olive was born in 2020. I started small and really focused on educating people about what they were buying – things like olive varieties, how to pair different oils with different foods as well as what makes a great olive oil and even basic concepts like what exactly is extra virgin olive oil. Just before Covid hit I made another visit to Jaen and met with two of the most highly regarded producers in the world – Finca la Torre and Nobleza del Sur and they agreed to allow me to distribute their oils in Ireland. Covid and the Lockdowns was a tricky time to be in business in terms of meeting people and doing in person tasting events but as everyone was cooking and eating more I gained lots of new customers and saw the business grow.

Now, we are stocked in outlets all over Dublin and beyond and my website sells the full range so olive oil fans anywhere in Ireland and Europe can get anything delivered. I started an Olive Oil Tasting Club in 2021 which guides members through a selection of oils over the course of a year and this has been very popular. At the moment I am getting ready to launch tasting events and master classes in many of our outlets and later on this year we will begin online tasting events which I hope will give people a fun and informative introduction to the world of Extra Virgin Olive Oil so they can learn how to choose and also what they like.

Sarah’s top 3 tips to improve your health are:

1.    Eat a rainbow every day - it's the easiest way to make sure you eat a wide variety of foods every day

2.    Cook from Scratch - even if it's a cake it won't contain all the bad stuff they put in processed food. It doesn't have to be complicated

3.    Eat the seasons - you get food at its best at a good price and it also means that you'll get plenty of variety. I am a huge fan of our local markets.
