When Katie Couric lost her husband, Jay Monahan in 1998, she didn’t know how she would go on. But she had to keep it together for her two young daughters - and for the millions of Americans tuning in each week to see her on the Today Show. Today, Katie discusses the pressure of working and raising her kids while grieving, how our culture needs to normalize discussions of death, keeping her husband’s memory alive, and her love of meatloaf.

You can follow Kelly Rizzo on all platforms @eattravelrock for clips or BTS footage from the podcast, and you can get Katie’s book, Going There, wherever books are sold.

Meatloaf Recipe

  1. Finely dice onion, mushroom, zucchini, carrots and celery - or whatever’s in season.
  2. Sauté veggies with some olive oil until they are cooked down.
  3. Add the vegetables to a pound of either raw ground chicken or raw ground turkey and massage them together, until the veggies are evenly spread throughout the meat mixture.
  4. Add an egg, Italian breadcrumbs, ketchup, and barbecue sauce (optional) to the meat mixture. Shape into a loaf and put that in your baking dish.
  5. Make another mixture of ketchup, barbecue sauce, mustard, and Worcestershire sauce and pour that on top of the loaf.
  6. Bake in the oven for 1 hour at 400 degrees.

19 Nov 2023Leave It All on the Table with John Stamos00:50:56

When Kelly found out Bob had passed, she knew there would be a few people that would be very difficult to tell. Those people were “Bob people,” the people who knew him as well as she did. At the top of the list? His full house family, and one of his best friends, John Stamos. Today, John shares the reason he never plays Bob’s guitar, his love of Disney and how Bob’s gallows humor is channeled through them. This episode also features a never-before-seen recording of one of Bob’s last shows.

You can follow Kelly Rizzo on all platforms @eattravelrock for clips or BTS footage from the podcast, and you can get John’s book, If You Would Have Told Me, wherever books are sold.

Chicken Pot Pie Recipe

  1. Find your favorite pre-made pie crust and make sure there’s enough for both the top and bottom of your pie.
  2. Simmer your chicken breasts in some stock with your favorite aromatics - I like salt, pepper, chicken bouillon, rosemary, and some garlic, but choose your own adventure.
  3. Once the chicken is cooked through, remove and set to the side to cool.
  4. While your chicken is cooling, saute some onion, celery, and carrots or whatever veggies you like in a pan with some butter, salt, pepper, garlic powder, and celery seed.
  5. When the veggies are cooked, add some water and milk and bring to a simmer until nice and thick.
  6. Shred your cooled chicken and add that to the veggie mixture.
  7. Put your pie crust in your dish and add your chicken and vegetables.
  8. Place your second crust on top and cook at 425 degrees for 30-45 minutes or until the crust is golden brown.

Penne a la Vodka Recipe

  1. Add some oil into a hot pan with some finely diced onion.
  2. Once the onion cooks down a bit and becomes translucent, add some garlic and chili flakes and let that cook for a couple minutes - we don’t want the garlic to burn so keep an eye on it.
  3. Add some tomato paste and stir that in. Let it cook down for a couple more minutes so we get that nice earthy flavor.
  4. In the meantime, boil some water with a lot of salt and cook your penne - when that’s done be sure to save some of your pasta water.
  5. Once everything in the pan is nice and combined, we’re gonna add some vodka.
  6. Let that vodka cook down, we want to cook out all the alcohol so it doesn’t taste like a cocktail!
  7. Then, stir in some heavy cream, add your pasta, pasta water, and a whole bunch of parmesan cheese and you’re ready to eat!

Their stories are different, but the triumphs and commitment they hold to having vulnerable conversations as a result, are the same. 2. Saute your onion for about 5 minutes then add some ground beef
  3. Break up your beef in the pot and cook for 6-7 minutes, or until it’s cooked fully through
  4. Add some spices and stir until combined, I like chili powder, cumin, a bit of sugar, tomato paste, garlic powder, salt, pepper, and some cayenne
  5. Then you can add some diced tomatoes, kidney beans, beef broth, and tomato sauce and stir it up
  6. Let that simmer for at least 20-25 minutes but the longer you let it sit, the better it’s gonna be.
