Sales for Cannabis-infused beverages is said to have jumped 40% since 2019. A new beverage category fueled by the legalization of Cannabis is spilling into wine, beer and even coffee!  

 But what are large corporations getting wrong about CBD and THC wine beverages? While many have focused on the novelty of Cannabis in beverages, Jamie Evans and her team at Herbacée are focused on taste.  

Jamie, author and industry expert, recently launched the first cannabis-infused nonalcoholic wine in the US (Herbacée)  and published her second book: “Cannabis Drinks: Secrets to Crafting CBD and THC Beverages at Home." She joins us on Bottled in China to discuss the latest updates in the Cannabis-infused beverage market.

In this podcast we dive into what makes a masterful sommelier with James Lloyd, Head Sommelier at Restaurant Gordon Ramsay.

Starting his career in wine in 1999, James has over 20 years experience from working with importers, wine producers and as a Sommelier for some of the world's greatest chefs. It all started in a hotel in South London moving to Gordon's flagship, Restaurant Gordon Ramsay (3* Michelin) in 2002 as a Commis Sommelier where he moved to Assistant Head Sommelier and remained until a move to New York as part of the opening team for Gordon and stayed for a year.
 

      After 5 years with the group, a move to Italy beckoned, in Piedmont, where he worked as an intern for Cantina Ceretto assisting in the production of their Barolo's, Barbaresco's and international blends, learning the ropes of wine making first hand. Once the harvest was complete he relocated to Lake Garda to take on a Sommelier position. Moving back to London in 2008, James initially became Head Sommelier for Marcus Wareing before moving to an importer, selling to Michelin Star Restaurants and top Hotels in London to gain more knowledge and to improve his skills as a wine buyer, to learn marketing and understand importing.

      Returning to Restaurants, James worked with Pierre Koffmann, Alain Ducasse, Playboy and consulted in the City of London before returning home to Restaurant Gordon Ramsay in 2016 as Head Sommelier where he is based, but his responsibilities are spread across the group and also being responsible for wine investment.  Having just celebrated two milestones of maintaining 3 Michelin Stars for 20 years and 10 years of working along side Gordon he is looking forward to many more.

Today we’ll be speaking with Marcell Kustos PHD, about how the consumer experience, and the overall enjoyment of a wine product and pairing, might influence consumer spending

Marcell is a beverage director, wine educator, and consultant. With a cross-functional background, he re-defines the role of modern-day sommelier. 

After obtaining a qualification in food engineering and winemaking operations, Marcell started his career as a food product developer before turning his hand to wine. He began working as a sommelier while undertaking a Master's degree in gastronomy. His curiosity for memorable wine experiences led to a PhD in food, wine and emotional pairing at the University of Adelaide in collaboration with Wine Australia and UC Davis.

While working at Penfolds Magill Estate, Marcell curated one of the country's most extensive champagne lists and created memorable experiences with a twist of science. Just recently, Marcell has joined a new project showcasing Australian botanicals and native ingredients. As a beverage director, he will be responsible for product development, industry collaborations and creating a whole new dining experience. 

He is the recipient of the ASVO AWAC Scholarship, Wine Communicators Australia Wine Industry Mentor Program, Vinitaly International Academy Italian Wine Ambassador Scholarship, Sommeliers Australia Education Scholarship, Wine Australia Research Scholarship and a finalist for the Sommelier of the Year by Gault & Millau.

Marcell is also in charge of coordinating and designing the food, wine and hospitality courses of Le Cordon Bleu Australia. He has been a contributing author in several academic and industry journals and continues to evolve as a wine judge. And if that wasn’t enough, he recently co-founded a wine label to make brave wines with transparency, curiosity and precision.

Felix continues his rise with sold-out pop-up dinners where he experiments with bold flavor combinations and locally sourced ingredients. There is no doubt that his next endeavor, a solo restaurant project in Melbourne, will be a hit. The restaurant is slated to open later this year and feature all the best of Felix’s former menus.
 

I sat down with Felix to ask him about his inspiration for cooking, his thoughts on local ingredients, and his advice for upcoming chefs. Our conversation ended up covering a lot more, including his decision-making process for taking risks and his outlook on life.

Our guest today is Santa Barbara based winemaker Michael Brughelli.

A California native, Brughelli  has worked with some of the biggest names and vineyards in Santa Barbara.

He was the general manager and winemaker for Ken Volk a decade prior. He then worked at Bien Nacido Vineyard and learned from some of the county's most talented winemakers sourcing fruit from the legendary vineyards of Santa Barbara.

He co-founded and was the winemaker for Scar of the Sea. In 2019, he sold his portion of Scar of the Sea back to Guigni to launch his own consultancy.

Brughelli is also the winemaker at Folded Hills Winery, Ranch and Homestead

Michael Brughelli founded his eponymous wine brand in 2018. He crafts high-end, allocated Pinot Noir and Chardonnay from Santa Maria Valley currently selling at $200 a bottle.

Fish maw is essentially the swimming bladder large fish use to navigate, a vital organ made of a single type of cell. It’s considered a delicacy but has many applications in the Asian kitchen. It's a real opportunity to make cheap cell-grown meat fast, and economically viable.

The Bordeaux wine region of France has always attracted international investment.    

As the Asian economy developed, individuals and beverage companies looked abroad to diversify their portfolios.  In the mid 1980’s, Japanese investors like Suntory started to buy Estates in Bordeaux. Over the past decade, it’s estimated that close to 160 Chateaux’s  have shifted hands to Hong Kong and Mainland Chinese investors.  

In today’s podcast, we sit down with Howard Kwok to discuss his family’s vision for investing in wineries on the right bank of Bordeaux, and what drew them to Bordeaux in the first place.

Howard Kwok is the co-owner of Vignobles K, a group of vineyards located in Bordeaux, France. Howard's family bought their first vineyard, Chateau Haut Brisson, in 1997, and is the first Chinese investor to acquire a vineyard in France. 

Today, their holding company Vignobles K manages 7 properties in the right bank of Bordeaux, including Chateau Bellefont Belcier, a Saint Emilion Grand Cru Classé, and Chateau Tour Saint Christophe, often described as one of the best values of the region. Wines by Vignobles K have received significant praises by professional critics and wine enthusiasts alike, and are widely distributed around the world.  

Howard is originally from Hong Kong. After graduating from Harvard Business School, he worked briefly at the management consulting firm McKinsey & Company and joined his family's business in 2015. He splits his time between managing Vignobles K and investments in China.

Nick's wine career began at the University of Cambridge, where he was a member of the successful Cambridge University blind wine tasting team. In 2018, Nick left Sotheby's to start his own fine wine advisory business, Vintage Variation LLC, where he advises private clients, retailers, and other wine businesses.

He argues that assessing a wine's acid structure for whites and tannin structure for reds is a more reliable indicator of a wine's identity, especially as producers and regions continue to push the boundaries of traditional winemaking. Nick shares insights on how to navigate the nuances of tannin profiles in Cabernet Sauvignon, Merlot, and Pinot Noir, as well as the challenges of distinguishing Chardonnay and Riesling from specific regions. Today, I'm joined with Jonathan Cruysberghs, Co-Founder of Feibao to discuss waste recycling in China and what we can do to help out. Feibao is a passion project that he co-founded in Shanghai in 2016 with Clement Saint Ellier. It links the waste we want to recycle with someone in the city who picks it up and will dispose or reuse it. It offers bins and containers for waste storage to offices, schools and compounds. Feibao has gained traction in Shanghai as it serves a dual purpose, while it is environmentally friendly, it also connects local collectors to a new income stream. In this episode, we discuss how Feibao is actively helping the F&B community in Shanghai and changing the waste management landscape one step at a time.

When we sat down with Ikimi, we asked her what prompted her to start the fund, what “inclusivity” really means, and what the Roots Fund membership program entails. She dives deep into why mentorship means so much to her, as well as why it’s vital to have passionate, respectful, inclusive mentors in the wine industry. Plus, Ms. Dubose lets us in on her steps to leverage a mentor for wine career progression. Finally, she gives us the top three tips she’d tell younger Ikimi about getting into the food and business industry.

Professor Charles Spence is a world-renowned experimental psychologist specializing in neuroscience-inspired multisensory design. Spence has published over 1,000 academic articles and authored various best-sellers, including “The Perfect Meal” and “Gastrophysics: The New Science of Eating.” Sensehacking, his newest book, was published in 2021.

In addition to being an award-winning author, Spence established and runs the Crossmodal Research Laboratory (CRL) at the Oxford University Department of Experimental Psychology.

Professor Spence collaborates with baristas, mixologists, chocolatiers, chefs, and perfumiers to design enhanced multisensory food and drink experiences.

Professor Spence has worked extensively in multisensory experiential wine and coffee. Today, he wants to know how new technology will change our dining/drinking experiences.

About Adrian Bridge:

In May 1994, Adrian moved to Portugal to become the next generation in a family wine company that stretches back to 1692.  He initially worked on USA and UK markets before taking responsibility for the company 1998 and formally becoming CEO on 1st Jan 2000.  

Although the group is primarily focused on quality Port production it has expanded into retailing, distribution and tourism.  

Adrian has started in 2018, an initiative on Climate Change Leadership where the first event was a summit to launch the Porto Protocol at which President Obama was present. The second event, in 2019, had Vice-President Al Gore as the keynote speaker.

Jean-Charles Boisset was born into the world of wine in the village of Vougeot (Burgundy), France—the heart and birthplace of Pinot Noir and Chardonnay. His lifelong passion for wine began early, having grown up on the family’s estate winery, Domaine de la Vougeraie, located within view of the centuries-old vineyards of Château du Clos de Vougeot.

Jean-Charles’ passion for California and California wineries endowed with history, heritage and a pioneering spirit led him to Sonoma County in 2003, where he purchased DeLoach Vineyards, an early producer of Pinot Noir, Chardonnay and Zinfandel in the esteemed Russian River Valley. This set to motion further purchases of distinct wineries and destinations in the Napa Valley and Sonoma County, including Raymond Vineyards, Buena Vista Winery, Oakville Grocery, and in 2021 The Ink House Luxury Inn and Elizabeth Spencer Winery in Rutherford.

COVID has forced many restaurants and bars to shut down, but for Chef, Cookbook Author and Entrepreneur Matt Dean Pettit, he’s found a way to pivot and grow his businesses.

From his first job as a busboy at the young age of 13 to line cook at 14, Matt’s passion for the food industry started early.

 In 2011,  Chef Matt Dean Pettit founded Canada’s famed Rock Lobster Food Co Restaurants. 


The Rock Lobster brand has since grown into a hugely successful grocery retail line focusing on proudly Canadian, sustainable award winning seafood dishes under the name brand Matty's Seafood Co which is sold across all Canada & The USA and Asia. 

In 2014, Chef MDP launched his first award winning Best-Selling cookbook, The Great Lobster Cook Book published by Appetite by Random House. In spring of 2018, MDP he published his second book titled The Great Shellfish Cookbook.

He co-stars in the Food Network Canada TV Show: Super Snack Bros, where he showcases iconic snack foods made with crazy culinary twists.

Andrew Adams is the editor of the Wine Analytics Report and was a writer and editor at Wines & Vines magazine from 2011 to 2018. He is a keynote speaker and frequent panelist and moderator at prominent wine industry events and webinars. Adams grew up in the city of Sonoma, Calif., and graduated from the University of Oregon with a degree in journalism. While a reporter and editor for daily newspapers in Oregon and California for nearly a decade, Adams won awards for investigative and business reporting. In 2009, Adams left the newspaper industry for a harvest internship at Starmont winery in Napa Valley. That internship led to a fulltime position in the cellar and laboratory where Adams worked for three harvests before joining the staff at Wines & Vines.

Previously Julio was a lawyer working with the Ministry of Economy in Chile helping to pass law trades before being selected as the Trade Commissioner of Chile in Shanghai. Vietnam is the second largest producer of coffee after Brazil. It has a unique coffee culture that was first introduced by the French in the mid 1800's.

 

Today we discuss Vietnam's key coffee growing regions and the evolution of coffee culture with Mr. Tran Nhat Quang, Founder of Là Việt Coffee. Quang is one of Vietnam's craft coffee pioneers and is establishing a fair trade approach to local growers.
 

Là Việt is a producer of specialty coffee in Vietnam. Their whole bean coffee is made from hand-picked, carefully sorted and processed Arabica beans and comes in three roasting levels. The company opened its first retail café in Dalat in 2015, and has since expanded to Ho Chi Minh City and Hanoi. In 2020, Là Việt also launched a Ready-to-Drink Coffee line.

Today we speak to cult status producer Sasa Radikon. Based in Friuli Italy, Sasa’s family was the region’s pioneer of “orange” wines. Today, Sasa joins us to demystify natural wines, how it’s made and how to serve them.

Orange wine is simply white wine made using a red wine method. This means that the white grape skins are used during the winemaking process to extract aromas, flavours and texture. The result is an orange coloured wine with full of flavours!

Radikon is a pioneer of the natural wine movement in Italy. It’s also recognized as the pinnacle of orange wines, a radical winemaking style that his family has perfected after 25 years of winemaking history.

Vinified APP is disrupting the Californian wine industry by bringing wineries closer than ever to their consumers. It has a simple and intuitive mobile interface that allows you to buy wines you’ll love at affordable prices. The platform also features appealing visuals to guide users in finding and discovering new wines.

Today we are joined by Corentin Chon, co-founder of Vinified, to discuss his inspiration for founding the platform.

Vinified is the first platform to bridge the gap between distributors and final consumers. It allows them to instantly list and sell their wines to consumers across California (and a couple of other states), making great wines more affordable!

In the Vinified Wine App, consumers can rate and review wines they've tried, and are offered suggestions based on their tasting preferences. They can also discover new wines, learn about their unique flavor profile, and receive information about wines directly from the winemakers.

This is going to be a delicious episode! In today’s podcast we discuss wine and food pairings with James Lloyd, Head Sommelier at Restaurant Gordon Ramsay. 
 

Starting his career in wine in 1999, James has over 20 years experience from working with importers, wine producers and as a Sommelier for some of the world's greatest chefs. It all started in a hotel in South London moving to Gordon's flagship, Restaurant Gordon Ramsay (3* Michelin) in 2002 as a Commis Sommelier where he moved to Assistant Head Sommelier and remained until a move to New York as part of the opening team for Gordon and stayed for a year.
 

      After 5 years with the group, a move to Italy beckoned, in Piedmont, where he worked as an intern for Cantina Ceretto assisting in the production of their Barolo's, Barbaresco's and international blends, learning the ropes of wine making first hand. Once the harvest was complete he relocated to Lake Garda to take on a Sommelier position. Moving back to London in 2008, James initially became Head Sommelier for Marcus Wareing before moving to an importer, selling to Michelin Star Restaurants and top Hotels in London to gain more knowledge and to improve his skills as a wine buyer, to learn marketing and understand importing.

      Returning to Restaurants, James worked with Pierre Koffmann, Alain Ducasse, Playboy and consulted in the City of London before returning home to Restaurant Gordon Ramsay in 2016 as Head Sommelier where he is based, but his responsibilities are spread across the group and also being responsible for wine investment.  Having just celebrated two milestones of maintaining 3 Michelin Stars for 20 years and 10 years of working along side Gordon he is looking forward to many more.
