The Mockingbird is a modern diner in Nashville serving up global fare and delicious fun. Inspired by the restaurant’s namesake, Brian has created The Mockingbird’s menu to mimic its surroundings, offering comfort food favorites influenced by the many global elements that make up American culture and cuisine.

Both Brian and Mikey have backgrounds in food and art. Brian was born in Illinois, raised in Naples, Florida and has traveled the world entrenching himself in global cuisines and fine arts. Mikey, born and raised in Corpus Christi, Texas, was highly influenced by his Tex-Mexican family cooking, a staple in his home throughout his childhood. His background in graphic design as well as his flavorful upbringing is what adds such flare to The Mockingbird. They met in Chicago, where they began hosting pop-ups in their apartment. Mikey began signing Brian up for cooking competitions, which is how he ended up meeting Maneet Chauhan on Chopped. After establishing a friendship, Maneet convinced the couple to make the move to Nashville to team up on The Mockingbird.

After the break, we hear more from Maggie, who is now the Program Associate at GRACE Communications Foundation, which advocates for more sustainable alternatives to our current industrial food system. Maggie has an MA in Food Studies from New York University where she conducted an analysis on agricultural antibiotic overuse and strategies for reduction. With a particular interest in ethics in the food system, her focus is predominantly on policy/advocacy issues surrounding food justice and sustainability (with a side eye towards the meat industry). Prior to joining GRACE, Maggie worked in several capacities for NYU’s Nutrition, Food Studies, and Public Health Department, including as a research assistant to food policy analysts and as an adjunct professor and teaching assistant. Maggie is lovingly engrossed with her CSA, and is really into composting. In her spare time, she likes bouldering, jumping into lakes, and putting things in color order.

Jenny Goodman and Alex McCrery are the co-founders of Tilit. Alex is a chef turned designer, and Jenny worked in restaurant FOH and is now Tilit’s COO. They founded Tilit with two chef aprons designs, one pair of pants and a chef-shirt. The idea was that each garment would be made in the center of NYC's garment district by restaurant industry folks, and they still make over 90% of our garments there. They also have a retail store in the Lower East Side open every weekday.

We're joined in studio by Mike Edison, host of Arts & Seizures, and Patrick Martins, HRN Founder and Heritage Foods USA Founder for a round up of recent food news including Caity's recap of the Good Food Mercantile that took place in Washington DC last weekend.

Kat brings us some exclusive interviews from Monterey County, CA. First up, we hear from Tom Wright, Reporter from The Monterey Herald, about the insanely rainy winter season in Big Sur. Mudslides in the area caused a total shutdown of Highway 1 (Pacific Coast Highway) after the Pfeiffer Canyon Bridge was condemned. Tom shares stories of the immediate aftermath of the storm (such as airlifting of food and supplies) and the lasting effects on the community. Many restaurants and resorts in Big Sur are still closed and don't plan to reopen until the bridge can be repaired or other travel alternatives are available to guests.

Moving slightly north, we hear from Sheila Bowman, Manager of Culinary and Strategic Initiatives for Seafood Watch at the Monterey Bay Aquarium. Now in its seventeenth year, Seafood Watch is the leading source of science-based seafood recommendations in the U.S.

After a quick break, we share the latest news out of Ron Finley HQ in Los Angeles, what our engineer Vitor has planned for this weekend (hint: it involves chamber music and tickets are available HERE), and a preview of Cherry Bombe Jubilee & Marketplace happening August 8th and 9th. Tom Wright, a Northern California native, covers breaking news in Monterey County. He's been a journalist with the Monterey Herald for nearly five years, covering local government and sports in addition to working as a copy editor. Before joining The Herald, he wrote for the Daily Democrat in Woodland, California, and graduated from San Jose State University.

Sheila Bowman works with chefs, educators, media and industry with a goal of shifting them towards seafood products that are caught or farmed with the environment in mind. Trained as a marine scientist and passionate about conservation, her work takes her around the country and into kitchens where sustainability really begins. In 2014 the National Audubon Society recognized Sheila as one of their “Woman Greening Food."

We hear from Ron Finley, the "Gangsta Gardener" about his mission to ignite a horticulture revolution in South Central LA. Currently, he is fighting to save his HQ – the very same location where Finley took back city land and planted the seeds to cultivate happy and healthy communities. Next, we turn our sights to charcuterie. To learn why it's having such a renaissance in the US right now, we speak to Francois Veccio, one of the fathers of charcuteire with over 60 years of experience. Then, we hear from Lorenza Passeti, the CEO of Volpi Foods. Lorenza's great-uncle, John Volpi immigrated from Milan in 1900 and brought with him the ancient European art of dry curing. Now, as president of Volpi Foods, Lorenza continues to refine her great-uncle’s craft – while adhering to the techniques he brought with him to America more than a century ago. Chef Edgar Pendley has his own charcuterie program at Urban Grub in Nashville. He shares some of the challenges involved with setting up a space to cure and age meats in Tennessee – where the food inspection process hasn't quite caught up with the new techniques being used.

Last, we chat more with Edgar about his upcoming James Beard House dinner titled "Southern Hangout." He's using familiar flavors from his youth to create a menu boasting mouth-watering ingredients like strawberry preserves, black truffle mole, pork jerky, and sorghum syrup.

""It was November 2016 and I was freaking the fuck out. A lifetime of undiagnosed mental illness, and a few traumatic events culminated on election night, and I was broken."" This is the origin story of the Restaurant Workers' Community Foundation. As co-founder, John deBary writes, he was left stunned and with the ""recognition that those with privilege have a moral imperative to support marginalized people.""

He decided to start with what he knew. He reached out to Alex Pemoulié, a former colleague at Momofuku, and they began brainstorming ways for the restaurant community to brace for the next four years. They hatched a plan to start a nonprofit to act as a hedge fund that would raise money, invest it, and use the returns fund progressive social change. deBary ran the idea by his husband Michael (who has spent his entire career in the philanthropic sector), who confirmed that their goals had much in common with the mission of many population-focused community foundations like Stonewall Community Foundation and New York Women’s Foundation.

In late 2018, the Restaurant Workers' Community Foundation held an event to announce its launch as an advocacy and action nonprofit created by and for restaurant workers. By addressing quality-of-life issues that disproportionately affect restaurant workers – 40% of whom live on poverty-level wages – RSCF aims to strengthen the workforce and increase opportunities for advancement in the industry to more people.

We're so honored to have John deBary (Co-Founder) and his husband Michael Remaley (Board Treasurer) on this episode of HRN Happy Hour.

We share our favorite news stories of the week, and of course we have to talk to Mike Edison on this 4/20 holiday!

Finally, we chat more with Mario about what's new in the Batali empire and ask for his food and travel tips when visiting Naples and Rome.

Mario LaPosta’s lifelong obsession with pizza started when he was a child watching the pizzaioli in his father’s hometown just north of Naples.

LaPosta began working in local pizzerias when he was fifteen years old. During his time studying hospitality at Central Connecticut State University, LaPosta worked in the kitchen at Bricco in West Hartford, one of Connecticut’s most celebrated Italian restaurants. After graduation, he moved to Italy to apprentice in Rome. From there, he moved south to the town of Piedimonte where he earned his chops at a Neapolitan-style pizzeria called Pietra di Luna.

After reading that Mario Batali was planning to open a restaurant in Westchester, New York, LaPosta contacted Batali veteran Andy Nusser. Nusser tapped LaPosta to build the pizza program at Tarry Lodge in Port Chester. Soon after it opened in 2008, Tarry Lodge was named among the best pizzerias in the country by GQ’s Alan Richman. In 2011, LaPosta opened the second location of Tarry Lodge in Westport as Chef de Cuisine.

LaPosta has competed in the World Pizza Championships in Italy finishing 10th place overall in Pizza Napoletana. He comes to Boston with fifteen years of pizza making experience, both in Italy and New England. His dedication for authentic, simple, and soulful food comes from his mother— who is an exceptional cook— and her homemade pizza.

This week on HRN Happy Hour, we’re learning about South Carolina’s culinary scene from the people who know it best: its Chef Ambassadors! Meet Raffaele Dall’Erta and Jason Tufts, of Sumter and Aiken, respectively. They discuss the people, culture, ingredients, and relationships that make South Carolina’s food scene so dynamic. Both Raffaele and Jason have used their talents as chefs to build fine dining destinations in small towns.

Born in Milan, Raffaele Dall’Erta struck out on his career path at the tender age of 15, attending culinary school at Vallesana in Northern Lombardy. The rich traditions of family, food, and Italian culture are the foundation of his culinary ethos. He has worked in esteemed kitchens like The Far Duck in the UK and Per Se in New York. After an 11-year turn as sous chef at the Inn at Little Washington, he landed at Hamptons in Sumter in 2010.

Chef Jason Tufts can thank his mama for his culinary career. As a high school student, he took a job washing dishes for a downtown Aiken restaurant, which gave him an inside look at the behind-the-scenes dynamics of a chef’s life. He honed his skills at the Doctors Hospital of Augusta, the Green Boundary Club, and the Woodside Plantation Country Club, both in Aiken. In 2017, he was named executive chef of Malia’s, one of the town’s most popular restaurant

Salvador “Chava” Peribán develops strategies and processes to achieve sustainable, fair, and beautiful products, including agave spirits, tumblers, and adobe bricks. He has worked as director of R&D at Xaquixe, a Oaxaca-based glass-blowing studio, and as head distiller at Sombra, where he also helped reduce the distillery’s ecological footprint. He’s currently immersed in a yet-to-be-revealed agave project in Mexico City.
