On today's episode of All in the Industry®, Shari Bayer goes on location at Il Buco Alimentari e Vineria in Noho, NYC, to chat with its Executive Chef Justin Smillie. After attending the Culinary Institute of America, Justin secured a position at Jean-Georges Vongerichten's Mercer Kitchen, followed by posts at Danny Meyer's Gramercy Tavern and Jonathan Waxman's Washington Park, where he fell in love with the bold flavors and rustic techniques. After working with Daniel Silverman on the opening of The Standard in New York, as well as other Andre Balaz properties, he was introduced to Il Buco’s owner Donna Lennard, who tapped him as Executive Chef of Italian trattoria Il Buco Alimentari e Vineria, where he earned three stars from The New York Times. In 2014, Justin collaborated with Stephen Starr on Upland in NYC, and later a Miami outpost, before returning to il Buco in 2020. He and Donna have recently launched Smillie Pizza in an ode to Justin's Cali-talian background and style of cooking. His first book, “Slow Fires: Mastering New Ways to Braise, Roast, and Grill," was released by Clarkson Potter in 2015. Sean began his career on Wall Street, working at big firms, including Cantor Fitzgerald, Goldman Sachs, and Anchorage Capital. In 2008, he and his wife moved to a building on Grove Street in the West Village—the same building where Missy Robbins, then a chef at A Voce, resided. And the rest is history! After Hurricane Sandy connected them, and Sean saw Missy's skills up close, he knew she had the talent to helm a blockbuster restaurant and decided to go all in to support her. While continuing to work in finance, Sean joined Missy and her team to build Lilia, a New York Times three-star, James Beard Award-winning restaurant. Today on our episode #394 of All in the Industry®, Shari Bayer's guest is Wolfgang Puck, famed chef, restaurateur, TV personality 'and author, who has built a brand that encompasses three companies: Wolfgang Puck Fine Dining Group, Wolfgang Puck Catering, and Wolfgang Puck Worldwide, Inc. The name Wolfgang Puck is synonymous with the best of restaurant hospitality and the ultimate in all aspects of the culinary arts. Wolfgang was born in Austria. He began cooking alongside his mother at a very young age, and worked in some of France’s greatest restaurants, including Maxim’s in Paris, and the Hotel de Paris in Monaco. At the age of 24, Wolfgang left Europe for the United States, first working at the restaurant La Tour in Indianapolis, and then in Los Angeles, quickly garnering the attention of the Hollywood elite as chef of Ma Maison in West Hollywood. In 1982, Wolfgang opened his first flagship restaurant, Spago located in West Hollywood on the Sunset Strip. Spago was an instant success and culinary phenomenon. Today, Wolfgang Puck Fine Dining restaurants can be found around the world. In addition, this year, Wolfgang celebrated an Oscar milestone as he marked his 30th year catering for the event. Shari sat down with Wolfgang in Las Vegas at his restaurant Caramá at the Mandalay Bay Resort & Casino to talk about his impressive career, while she was in town for The World's 50 Best Restaurants 2024 in early June.

Ashley is also the Co-Founder of The Matzo Project, a surprisingly delicious new matzo with fabulous packaging, which has been embraced by the cracker-eating community. In addition, Ashley is a highly accomplished voice actor whose work includes MTV’s animated series Daria and the voice of Nickelodeon. She was also the vocalist for a kid’s band called "The Jimmies.”

Today on our episode #393 of All in the Industry®, Shari Bayer has a special show in honor of Naomi Pomeroy, an award-winning chef and restaurateur, who tragically passed away on Saturday, July 13, 2024, in a tubing accident in Oregon at age 49. As a tribute, we are sharing Shari's recorded interview with Naomi from June 3, 2022, focusing on her chef advice for Shari's book, Chefwise: Life Lessons from Leading Chefs Around the World (Phaidon, Spring 2023), which Naomi is a contributor to. The New York Times stated that Naomi was a "chef who made Portland a dining destination," and described her as "a self-taught chef with an irreverent streak whose high standards and generosity of spirit made her the culinary matriarch of Portland, Ore." As a Portland-based chef, Naomi's ventures have included Family Supper, Clark Lewis, Gotham Tavern, and Ripe Cooperative. Her time as chef and owner of Portland's beloved gastronomic shrine Beast from 2007 to 2020 made her one of the region's most successful chefs and earned her the 2014 James Beard Award for Best Chef Pacific Northwest. Naomi was selected as one of America's Best New Chefs by Food & Wine in 2009, and also appeared on multiple cooking competition shows, including as a contestant on Top Chef Masters and Iron Chef, and as a judge on Top Chef Knife Fight and Bobby's Triple Threat. She published her first book in 2016 entitled Taste and Technique, Recipes to Elevate Your Home Cooking, with Jamie Feldmar. In addition, during the pandemic, Naomi became involved in the Independent Restaurant Coalition (IRC). Shari is grateful for Naomi's friendship and contribution to Chefwise, and to be able to share their conversation today, where they discussed many topics in her book, including leadership, business, team, work-life balance, and fundamentals. Our sincerest condolences to Naomi's family, friends and team. Naomi, you will be greatly missed. #RIP

She focuses special attention on Rome, where she lives, threats to local food culture, and critical reviews of restaurants and trends.

On today's episode of All in the Industry®, host Shari Bayer's guests are Executive Chef Michael Anthony and Pastry Chef Miro Uskokovic of Gramercy Tavern, USHG’s contemporary, seasonal, award-winning American restaurant, which opened in in NYC in 1994 by restaurateur Danny Meyer, and is now celebrating its 25th anniversary. Michael joined Gramercy Tavern as the Executive Chef in 2006. Under his leadership, the restaurant has earned a three-star New York Times review (2007) and James Beard Awards for “Outstanding Restaurant" (2008) and “Best Chef: New York City" (2012). In 2015, Mike won the James Beard Award for “Outstanding Chef," a national recognition, and his book, V is for Vegetables, won the 2015 James Beard Award for Best Vegetable-Focused Cookbook. Miro grew up on a family farm in Serbia and moved to America after attending hospitality college. After working with a local pastry chef in Greentown, Indiana, Miro enrolled in the Culinary Institute of America. While completing his externship at Wallse, Miro had the chance to train as an intern at Jean-Georges. Miro became Pastry Sous Chef at Jean-Georges, and then went on to become Pastry Chef at Aldea. Miro joined Gramercy Tavern as Pastry Chef in 2013. On today's episode of All in the Industry®, host Shari Bayer's guest is Ellen Bennett, Founder & Culinary Creator of Hedley & Bennett, a Los Angeles-based handcrafted apron company. While working as a line cook at Bäco Mercat and 2-Michelin starred Providence in LA, Ellen realized the drab, essentially disposable aprons that served as their uniforms needed a major upgrade. She continued working both line cook jobs and threw herself into growing her apron business, spending time at farmers markets on the weekends and busting into kitchens and introducing herself to chefs from all over. Her approach has always been a straight up hug and real talk. R&D happened in real kitchens and she was able to really listen to what was needed to make a better apron. Aprons led to chef coats which led to work shirts. Hedley & Bennett now makes aprons in a ton of different styles, chef coats for men & women, work shirts, kitchen linens and the MISE knife bag, outfitting over 6,000 restaurants, operating a direct-to-consumer retail business and selling via wholesale partners including Williams Sonoma, Sur La Table and Whole Foods. Ellen has collaborated with brands across categories, with events or products in collaboration with Vans, Samsung, Pellegrino and Parachute Home. All Hedley & Bennett products are manufactured in its 16,000 square foot LA location, where Ellen has also created an immersive, playful community space. Today on our episode #397 of All in the Industry®, Shari Bayer's guest is Lee Anne Wong, Executive Chef and Owner of Koko Head Cafe in Honolulu, Hawaii. A native of Troy, NY, Lee Anne graduated from the International Culinary Center (ICC), formerly known as the French Culinary Institute, in NYC, and began her culinary training at Marcus Samuelsson’s Aquavit before playing an integral role in the opening of Jean-Georges Vongerichten’s Restaurant 66. She went on to work as the Executive Chef of Event Operations at ICC, during which time she was featured on Season One of Bravo’s Flagship Series Top Chef, and subsequently was hired as the series’ Supervising Culinary Producer for the next 6 seasons, helping to build the show into the powerhouse that it is today. Lee Anne has also appeared as a competitor on The Next Iron Chef, Chopped, and Tournament of Champions, as well as participated on Season 17 of Top Chef All Stars. In late 2013, Lee Anne moved from NYC to Honolulu where in 2014, she debuted Koko Head Cafe—an island style brunch house in the Kaimuki neighborhood—to popular acclaim, and was recognized on the cover of Honolulu Magazine, as well as in Bon Appétit and Food & Wine, among other publications. In August 2014, she released her first cookbook, Dumplings All Day Wong, and in 2016, she joined Hawaiian Airlines as a guest chef, and in 2018, she was named Executive Chef for the airline. In March of 2019, she moved to Maui with family, and her latest project was Papa’aina, where she was reimagining the restaurant at the Pioneer Inn, Maui's oldest hotel located in historic Old Lahaina at the Harbor. In August of 2023, Lee Anne and residents of Maui were suddenly faced with wildfires, which devastated large sections of their homeland, losing the restaurant and hotel. On today’s show, Shari sits down with Lee Anne in Chicago during the James Beard Awards weekend in June to talk about her impressive career and the impact of this tragedy, and what we can do to help.

He has worked as a hunger policy advocate, public health educator, and international litigator, and he founded and directed L'Art de Vivre, an arts education nonprofit in Cameroon. He holds a BA from Brown University, a JD from the University of Pennsylvania, Master's degrees from both Sciences Po and the Sorbonne in Paris, and an amateur certificate from the French Culinary Institute.

On today's episode of All in the Industry®, host Shari Bayer is joined Andy Chabot, Sommelier and Director of Food and Beverage at Blackberry Farm, a luxury hotel and resort, and Relais & Châteaux property on 4,200 acres in Walland, Tennessee, bordering the Great Smoky Mountains. Andy is a graduate of the Culinary Institute of America (CIA), who after a stint at Little Nell in Aspen, found his true interest in the front of house. In 2002, he began his career with Blackberry Farm, and soon became involved in its young wine program. He worked his way up to Director of Dining and Beverages running all aspects of the service and beverage departments, and in 2014, under his direction, The Barn at Blackberry Farm, received a James Beard Award for Outstanding Wine Program. Andy has passed the advanced level of the Court of Master Sommeliers Exam and was the recipient of the Michael Bonaccorsi Scholarship.
