This is a new segment named ‘Gluten Free Thoughts’. In these episodes I’ll be letting you know some things that have been happening in my own gluten free life or something in the gluten free news world that I think is worth talking about. In this episode I'll talk about the gluten challenge I undertook before an endoscopic biopsy to confirm coeliac disease. I kept a diary of the foods and symptoms I had while on the challenge. You'll hear how my symptoms changed throughout the challenge. Spoiler alert - it does get easier! 

If you yourself or someone you know is currently on the gluten challenge or about to commence it, please send this to them. I always found it helped hearing other people's stories when I was on the challenge. It made me realise if they could do it then I could too. Enjoy the episode!

On today’s episode Ben's wife Bec hijacks the podcast host position to interview your regular host, Ben! Bec will talk to Ben about his sporadic ongoing gastrointestinal symptoms despite adhering to a strict gluten free diet, the various health professionals he has visited and beginning a low FODMAP diet. Ben is carrying out this low FODMAP diet under the guidance of a trained dietician. A gastroenterologist has also recommended Ben to have a repeat endoscopy and colonoscopy to rule anything else out.

Low FODMAP diet definition from Monash University:

Put simply, FODMAPs are a collection of short-chain carbohydrates (sugars) that aren’t absorbed properly in the gut, which can trigger symptoms in people with IBS. FODMAPs are found naturally in many foods and food additives.

Fermentable 
Process through which gut bacteria ferment undigested carbohydrate to produce gases.

Oligosaccharides 
Fructans & GOS - found in foods such as wheat, rye, onions, garlic and legumes/pulses.

Disaccharides
Lactose - found in dairy products like milk, soft cheeses and yogurts.

Monosaccharides
Fructose - found in honey, apples, high fructose corn syrups, etc.

And

Polyols
Sorbitol and Mannitol - Found in some fruit and vegetables and used as artificial sweeteners.

A low FODMAP diet is a 3 step diet used to help manage the symptoms of medically diagnosed irritable bowel syndrome (IBS). IBS is a very common gut problem with symptoms including abdominal (tummy) pain, bloating, wind (farting) and changes in bowel habit (diarrhea, constipation or both).

Elikqitie is the creator of the Travel Gluten Free podcast. We'll talk about how her gluten-free story began, why she started her podcast, and how she found out that she and her daughter would need to be gluten-free. She also speaks about how she overcame the challenges of being diagnosed with Celiac disease, making all her favorite foods gluten-free, what she does to accommodate her daughter, Aliyah, who also has Celiac disease, and how she creates her personalized translation cards for gluten-free travel.


Why Elikqitie Started Travel Gluten Free

While on a three-week gluten-free road trip after finding out that she couldn't eat gluten-free, Elikqitie realized that she could easily ruin a week of her vacation if she were to get sick while traveling alone. She looked around on the internet to find information on how to travel gluten-free and realized that no one was primarily speaking or teaching about how to travel if you have Celiac disease. So, after talking to a friend who had his own podcast, she decided to start Travel Gluten Free. Later, she added a gluten-free travel blog and wrote her book, The Guide to Traveling Gluten Free, based on her podcast.

Using America's Medical System when You Have Celiac Disease

America has a privatized healthcare system, which means that residents and citizens do not have subsidized medical care. So if you can't afford the expensive health insurance, ranging from $500 to $1500 a month for a family of four, you have to pay out-of-pocket for your care. Even with good medical insurance, Elikqitie typically spends USD 5000 a year for her medical costs.


How to Be Successful with Your Diet while Having Celiac Disease

Elikqitie says that one of the keys to being successful on a gluten-free diet is searching for or finding out how to make your favorite foods gluten-free. When you have what you like to eat, you are much less likely to cheat on your gluten-free diet, and you'll have a better outlook on living with Celiac disease.


Tips on Traveling Gluten Free

She gives some great tips on traveling gluten-free, such as why you shouldn't assume all chain restaurants are the same in different countries, why she tells servers at restaurants that she has a "gluten allergy" when she's eating out, and how she orders out safely eating gluten-free at restaurants.

My guest on today’s podcast is owner of Wholegreen Bakery, Cherie Lyden. We’ll talk about her nutritionist background, her daughter and herself being diagnosed with coeliac disease and how this inspired her to open a 100 % gluten free bakery and expand the business into what it is today. 

When Cherie Lyden and her youngest daughter were diagnosed as coeliac in 2014, she looked around and couldn’t find really great gluten-free food. It was all overly sweet, often packed with additives or just plain ‘yuk’, as her five-year-old would tell her. So Cherie decided to make her own. With a background as a nutritionist and foodie, Cherie was able to develop recipes that were not only gluten-free and delicious, but also healthy, with less sugar and zero additives, and made using fresh, seasonal produce. Since then Cherie’s passion project has evolved into an award-winning bakery and café renowned for producing food that’s first and foremost delicious, as well as being 100% gluten-free.
